Early morning tour of Ortigia market

The historic food market of Ortigia, in the old part of Syracuse. Held every morning except Sunday, it is everything one expects an Italian market to be: there is always a lot of shouting and gesticulating and wonderful smells. It is sells authentic produce, much of it from the region: herbs, tomatoes, ripe blood-red oranges, deep purple aubergines, bright red chilli peppers and lemons. All are fresh, and cut up while you’re waiting, and there are stalls of local meats and seafood – a swordfish might eye you as you walk past.

But though it is so authentic, the place continues to reinvent itself. New types and shapes of cheeses emerge from time to time, such as a cute pig-shaped cheese, only made on special occasions, and giant colourful sandwiches. Caseificio Borderi is a small sandwich shop in the market offering rolls filled with cured meats, cheeses and fresh salads, and queues trail round the corner at lunch times. It is now the place to go for Syracuse’s student population.

Ortygia is located at the eastern end of Syracuse and is separated from it by a narrow channel. Two bridges connect the island to mainland Sicily. The island is a popular location for tourists, shopping, entertainment and is also a residential area.

The Borderi Dairy was created in 1930 by Don Pasquale Borderi who was involved in the production and trade of Sicilian extra-virgin olive oil.. Due to its good performance, Don Pasquale decided to expand and diversify its offerings, including in its list also typical Sicilian cheeses..

When’ in 1970 that the son of Don Pasquale Borderi, Andrea Borderi, started? to develop his interest in the art of processing milk into cheese. In the following years, Andrea? studied intensively the Italian dairy sector specializing? in typical Sicilian products. .? His passion has always been the making of cheese., He started presenting his creations in Syracuse markets, in Floridia and the entire province. The success was immediate.
In 1998, when he has become a master cheese maker, Andrea Borderi formed with his children a Family Company: the Borderi Dairy, a sophisticated artisan cheese factory in Floridia, in the province of Syracuse. Since then the Borderi family operates in the markets of Ortigia, in Syracuse, and Floridia, They have gained the appreciation and respect of a large private and corporate public..

Behind the production of typical Sicilian cheeses of artisan dairy Bordieri there? an accurate analytical study. The dairy farm is not intended for mass production, but for quality. When’ is what allows us to win the loyalty of a large number of customers. All cheeses sold at all Borderi outlets are made by hand, in traditional ways. When’ you taste them, you realize the importance of such slow and time consuming processes, that enhance the experience of taste and of all other senses.
In 2006 the Borderi Dairy has taken another step forward, adding to the traditional products range (ricotta, mozzarella, smoked mozzarella, sweet and seasoned provole, provoloni pit, provoloni with the Nero d'Avola wine, cheeses with squid ink, Pecorino primo sale (fresh), semi-cured Pecorino , aged Pecorino cheese etc) a new line of fresh and typical Sicilian products.

This diversification was? born from a study leading to our realization that “our customers” want fresh, light food? our task is to fulfill such desires. From this realization was born our mozzarella filled with seasonal vegetables, which are a must for salads and light meals, according to the current market trends. .

Caseificio Borderi in Ortigia Sicily

No visit to Syracuse's market is complete without a stop at this colourful deli near Ortygia's far northern tip. Veteran sandwich-master Andrea Borderi stands out front with a table full of cheeses, olives, greens, herbs, tomatoes and other fixings and engages in nonstop banter with customers while creating free-form sandwiches big enough to keep you fed all day.
There’s no real ordering process; at best, you’ll simply be asked if there are any ingredients you don’t enjoy. From there several sandwiches are made at once, with everything chopped or sliced to serve. Each one is carefully layered by either Andrea or Gaetano with sundried tomatoes, lettuce, herbs, lemon juice, an entire ball of freshly-made buffalo mozzarella, ricotta, garlic paste, onion jam, eggplant, mushrooms and ham wrapped in provolone.

Finalmente è tornato il sole! Dopo 3 giorni di pioggia e noia possiamo finalmente uscire ad esplorare Ortigia, l'isola che è la parte più antica di Siracusa, un luogo in cui è passata la storia degli ultimi 3.000 anni. Un gioiello purtroppo aggredito in malo modo dall'urbanizzazione degli ultimi decenni, ma il cui fascino resta irresistibile.
Ovviamente da buone forchette quali siamo non ci siamo fatti sfuggire il consiglio che ci ha dato uno di voi qui su YouTube e siamo andati al Caseificio Borderi a mangiare quello che viene da molti considerato il panino più buono d'Italia... e forse un motivo c'è. ????????????
