A 27-hour flight from Australia to Bengaluru sans any vegetarian food for her husband and child spurred Jayanti Kathale to give up her career as an IT professional and set up an enterprise fuelled by the mission of propagating vegetarian Maharashtrian cuisine across the globe. With a humble beginning, selling modaks online, Purnabramha has evolved into a full-fledged restaurant offering with multiple centres in India and overseas. I catch up with this firebrand entrepreneur at one of her restaurants in Bengaluru, watch the making of a unique maaswadi rassa, a dish from Narayangaon, before sitting down to a satisfying Maharashtrian meal that begins with an expected vada pav and sabudana vada but travels far beyond. I grew up in Mumbai, so every once in a while, I yearn for some Maharashtrian fare. Both, the street food variety - vada pav, misal pav, bhajji, aani (and) also the sort that makes for a satisfying and nutritious vegetarian meal - jowar bhakri, thalipeeth, shrikand puri, aloo rasa and suchlike. A couple of months ago, I was introduced to Mast Marathi, where a Maharashtrian lady entrepreneur, Swati, aided by her Kannadiga husband, Shekar, is serving up an extensive vegetarian menu comprising the flavours of her land. Hailing originally from Surajpura Lotiyana village in Ajmer district of Rajasthan, Jithender and his wife, Renuka Tak, moved to Bengaluru with their young children having lost their automotive shop in the Ahmedabad earthquake of 2001. Facing financial difficulty, a chance encounter with a visiting relative at an exhibition who was looking for food to be catered led to the couple setting up a home-cooked meal enterprise. A family-run operation, they would shop, cook and deliver the food themselves, with their children lending a hand with the chores too. However, work from home and the current situation bought their livelihood to a standstill yet again! Not one to give up though, this family has set-up a small one-table eatery in the east Bengaluru neighbourhood of Kaggadasapura, primarily to serve as a takeaway point for their delicious home-cooked Rajasthani fare, both vegetarian and non-vegetarian. I drive here to chat with the couple, watch them cook a laal maas, sev tamatar and other dishes, before tucking into a delicious meal coupled with the warm hospitality of this Rajput family that has an inspiring, never-give-up attitude. The fare is simple yet wholesome, made and served with the sort of love, conversation and attention that one would expect as a guest in someone’s home. An engineer by profession, Apeksha was always interested in the food business. Backed by her husband and a friend, she took the plunge a few months ago in setting up a tiny eatery in Padmanabhanagar, South Bengaluru, where the vegetarian menu is a mix of local favourites and snack items from Dakshina Kannada. Having received a few recommendations from their patrons in the neighbourhood, I ventured out one evening to meet this young, confident entrepreneur and support her fledgling enterprise, in doing so, I taste a satisfying tiffin of idli vade served with a rather impressionable sambar, a subtly-flavoured Mangalore bun, nourishing bonda soup and some more, before rounding off my meal with an organic jaggery coffee. In the year 1950, Subbayya Gaaru opened a small 10-seater mess in Kakinada in the East Godavari region of Andhra Pradesh to serve honestly-priced food of the land. Legend has it that he would treat each customer as a guest visiting his home and leave no stone unturned in feeding them. Tales of his legendary hospitality and traditional fare soon spread far and wide and this tiny eatery evolved into the legendary Subbaiah Gari chain of restaurants. I visit their newly opened Bengaluru outpost where I explore the kitchen and the making of some special dishes before savouring a lavish 30-item banana leaf meal that is served with dollops of neyi (ghee) and old-fashioned hospitality that can leave you bursting at the seams! If you’re looking to savour the traditional flavours of the North Godavari region in Andhra Pradesh, look no further than this special 30-dish Andhra Bhojanam. You begin with tantalising sweets like annavaram prasadam, poornam boorelu, junnu, savoury fries like the tamalapaku (betel leaf) bajji, garelu, before moving on to the procession of curries, lentils, tantalising rice preparations like the pullihora (tamarind rice), panasa (raw jackfruit) mukkala biryani and chutneys. The list of dishes served is far too long to be contained within this description, but suffice to say the food prepared by the master cooks who have trained in the original Kakinada Subbayya Gaari Hotel will hold your attention. But then, this is also the sort of meal that you need to savour at leisure, in order to do full justice to the dishes that are served with generous dollops of neyi (ghee) and old-fashioned hospitality.

The result, not surprisingly, are dishes brimming with authenticity and flavour. I catch up with them at their cosy restaurant and also savour many of the dishes that offer a stellar showcase of Kodagu’s rich culinary traditions. Located in the heart of Panjim, Kokni Kanteen seeks to introduce guests to the Kokni, or traditional Saraswat cuisine of Goa, in a format that is friendly and comfortable. Fitting when one learns that the bungalow it is housed in dates back to Portuguese rule and served as an inn where locals would be fed when they traveled from the villages. I step in here to savour a reasonably priced viswon (kingfish) thali and an interesting array of flavourful GSB preparations, both vegetarian and non vegetarian, that are rarely found outside homes. What began as a local haunt has now evolved to a destination where visitors can help themselves to a delicious serving of Goa’s rich and varied cuisines. Such was his yearning for food from his land, that this entrepreneur decided to take upon himself the onerous task of introducing Bengaluru to authentic Marathi fare. After months of travel through the hinterlands of Maharashtra, gleaning recipes and cooks, Suryawanshi was born, a restaurant where conversations in Marathi waft through the dining room, as if in endorsement of the food served here.

Authentic Maharashtrian cuisine | Mazedar Marathi Khana | Flavours of India

In this video, we are going to explore the flavors of India with an authentic Maharashtrian Thali experience!

Maharashtrian Thali (veg) included-
Puranpoli - Poli- a sweet flatbread stuffed with a sweet filling made from chana dal and jaggery(gur).

Masala Bhat- Masala bhat is made with vegetables, like potatoes, cauliflower, peas, and Indian spices. This traditional Maharashtrian rice preparation is an amazing mix of spicy flavors and texture.

Koshimbir -Koshimbir in the Marathi language means raita , it has cucumber in it.

Kothimbir Vadi -It is made using the fresh coriander leaves, besan (gram flour) and basic Indian spices usually served with a cup of tea and tomato ketchup. “Kothimbir” means coriander leaves in Marathi and it plays the key role in this recipe.

2 दिवसांपूर्वी अचानक ठरलेल्या एका मिटिंग मुळे सांदण रेस्टॉरंटला जावे लागले होते. आत गेल्या गेल्याच जाणवले कि हे काहीतरी वेगळेच प्रकरण दिसते आहे. आणि मेनूकार्ड बघितल्यावर त्यावर शिक्कामोर्तब झाले. कारण सगळा मेनू अस्सल महाराष्ट्रीयन वा मराठमोळा होता. सोलकढी , मठ्ठा तर लाजवाब. त्यांची मसाला भाकरी खायची इच्छा होती पण नेमकी ती संपली होती. तरी आम्ही खान्देशी शेवभाजी आणि मासवडी रस्सा मागवला होता. स्टार्टर मध्ये नागपुरी स्प्रिंग रोल्स पण होते चांगले. नंतर डेझर्ट मध्ये मस्त पाकातले चिरोटे होते. सगळंच कसं एकदम स्वर्गीय होते. सोबत तुपाची छोटी वाटी द्यायला पाहिजे असं आवर्जून सांगावेसे वाटते.
बाकी काय काय पदार्थ उपलब्ध आहेत ते थोडा ३ मिनिटांचा विडिओ बघून तुम्हाला कळेलच.
विडिओ आवडला तर लाईक करून आनंदाच्या भरात ते शेजारचे सबस्क्राईब बटन ठोकून टाका आणि नाही आवडला तरी रागाच्या भरात ठोका.
