Peel apart/shred. | Salsa de chiltomate: Tomato in water with epazote, onions, chile habanero, salt and pepper. Mix the sauce with the fish. Fry the tortilla and put a layer of fish and beans. It has to have 3 tortillas and 3 layers of fish and beans. Top with avocado and full chili habanero.

????????BOX FISH: Place box fish on the grill for 20 minutes. Serve with salsa made with chopped onions, cilantro, and habanero.

????????BOTTLE HEAD SHARK WITH PINEAPPLE SAUCE: Chop shark into pieces and place in boiling water for 20 minutes. | Pineapple sauce: In a blender, add pineapples, cilantro, grilled red onions, salt and habanero, and blend. Add honey. After blending, add to a pan on the stove. Lightly mix. Add in the shark. Serve in a pineapple.

????????BARRACUDA: Filet and chop barracuda into pieces. Marinate with lime, salt and pepper, and lemon pepper. Cover in egg batter, flour, and bread crumbs, then pan-fry. Serve with garlic, habanero, and oil.

» THE TRADITIONAL FOOD IN MADAGASCAR

1. TSENA’NY TANTSAHA TALATAMATY: Rice Porridge + Chinese Noodle Soup
ADDRESS: Talatamaty City
OPEN: 3AM - 7AM (or whenever the police shut it down)

Four miles outside of Madagascar’s capital city, Antananarivo, lies Talatamaty City. Talatamaty City is home to one of the country’s largest local morning markets, Tsena’ny Tantsaha. Sellers open up shop at 3am, selling everything from produce to fabrics. And lucky for us, the market has no shortage of food to try as well.

????RICE PORRIDGE: Zebu (Malagasy cattle) and sausage are mixed with leaves, ginger, special Malagasy rice, porridge and spices.

????CHINESE NOODLE DISH: Pasta, macaroni, potato, mayonnaise and zebu skin.

2. TALATA VOLON’ONDRY: Sausage + Koba
ADDRESS: Talata Volon’ondry
OPEN: Varies

Talata Volon’ondry is a village located just outside of Antananarivo. The village is known for producing sausage and Madagascar’s national snack, koba.

????SAUSAGE: There are typically two types of sausage being sold - zebu sausage and a halal style potato sausage. This snack is frequently accompanied by local rum.

????????KOBA: Lay out banana leaf spines with banana leaves on top. Add a layer of rice flour to prevent the koba mixture from sticking to the banana leaves. Then add the koba mixture, a combination of crushed raw peanuts and sugar. Wrap it all up in the banana leaves and allow it to cook in a bit of water for 3 days.

Koba is beloved across Madagascar, primarily sold on the street or to people in their cars as they drive through a city. The fuel from the ingredients gives people energy and helps them stay full even when walking long distances without and source of food along the way.

DRAGON BOAT FESTIVAL FOOD IN TAIWAN!! HUGE ABORIGINAL BBQ + ZONGZI (粽子) | Street Food in Tainan!

Taiwanese Street Food at Dragon Boat Festival 2020 - ZONGZI (粽子)

This weekend, we are celebrating Dragon Boat Festival 端午節 2020 in TAIWAN! We are going to learn about the traditions, the boat racing and of course, the quintessential food which is the ZONGZI (Glutinous Rice Dumplings).
Dragon Boat Festival occurs on the 5th day of the 5th month on the Lunar Calendar. It is considered an unlucky time of year, and many of the traditions stem from the superstitions surrounding illnesses, dangerous animals and evil spirits. That includes hanging Calamus and Wormwood on doors. It is also said that the Dragon Boat Festival honours the poet Qu Yuan that died by drowning. Villagers raced out onto river in Dragon Boats to try and save him, and threw the zongzi into the water in hopes that the fish would eat the zongzi rather than Qu Yuan.
We are taking you to Tainan for the celebrations, and you’ll see that even restaurants and stalls are serving zongzi for the holiday! We will be walking you through what is used to make zongzi, how they are cooked, and then we will be visiting two restaurants - one that is the oldest zongzi restaurant, and the most popular zongzi restaurant, to try their specialities. We also witnessed some traditional dances and song on the side of the road!
The 8 Treasure Dumpling was made with mushrooms, chestnuts, fish, pork, scallops, sakura shrimp and rice (100 NTD / USD 3.39). The regular dumpling contained tender pork and was covered in gravy (40 NTD / USD 1.35), and the peanut zongzi is a great vegetarian option with soft peanuts, gravy and peanut powder (35 NTD / USD 1.18).
After eating, we went to Anping Canal in Tainan to watch the Dragon Boat races. The boats are very long and decorated with beautiful paintings and ornaments. The races are exhilarating and the crowds cheer for their favourite teams. At the festival, we also saw tons of street food stalls selling traditional Taiwanese street foods. A food that we could not resist was the Indigenous BBQ. The grill is HUGE and is swinging/rotating like a pendulum over wood fire. The stall was serving Wild Boar pork belly and sausage. We ordered pork belly which was seasoned in Taiwanese spices (100 NTD / USD 3.39). What a great way to end a day of celebrating!!!
