Originally from Nashville, Tennessee, we got married June 2013 and quickly caught the travel bug! We started “travel hacking” & finally decided we wanted to go travel for one year. After 2 years of saving $ and over 2 million miles and points, we sold our cars and apartment and left home January 10, 2016. The weather forecast said 27 m/s, 60 mph or 97 kph and the wind and snow was howling. It was a whiteout. At the end of the day I had an interesting stormy view while having my breakfast, coffee and making pan pizzas.

???????????? KARA'S FAMOUS ONE POT PEANUT BUTTER RAMEN RECIPE!
I'm usually a biiiig measuring cup kind of girl, but for some reason with this recipe, I don't measure anything and taste it along the way. The ingredients change every time. Have fun with it!!! ????
This is for 2 servings (keep in mind i have no idea what i'm doing):
Ingredients:
Olive oil (or whatever you like)
4ish Garlic cloves
1ish inch fresh Ginger
2 of your favorite instant ramens
Salt
Pepper
Coconut aminos
Cayenne pepper
Peanut butter
Fresh Cilantro
Green onions
Toasted sesame seeds
Sriracha
1. Sauté the garlic and ginger with some olive oil
2. Add water (or veg broth!) and make the “sauce”
3. Add the seasoning package that comes with the ramen if you want, or make your own:
4. Add coconut aminos (Idk, maybe 1/3 cup?), salt, pepper, cayenne (if using soy sauce, you don't need as much or any salt!). You could also add the chopped green onions here to cook In the sauce
5. Stir in 1ish scoop of peanut butter
6. Add in noods and let it all cook together
7. Put in bowls and add fresh cilantro, green onion, sesame seeds, and sriracha!

Originally from Nashville, Tennessee, we got married 2013 and were super “normal.” I was a teacher and Nate started a small business from the spare bedroom of our apartment. We discovered the world of “travel hacking” & became obsessed. So after 2 years of saving $35k and over 2 million miles and points, we sold our cars and apartment and left home January 10, 2016 for a “one year” trip around the world. Our goal was to see as many places as possible before we rean out of money and went home to normal life. We started this travel vlog to share our experiences with friends and family, but quickly fell in love with this lifestyle and did everything we could to keep going. 4 years later, we achieved our new goal of visiting 100 countries and all 7 continents. We had no plans to slow down, until 2020 forced us to ;) Which is when we bought a converted van to start exploring our own country for the first time. Van life was a major adjustment and so different than flying every week like we were used to, but we are incredibly thankful to be able to continue doing something we love every day. ????????????

Our scariest day of RV life. (Rookies On The Road ep. 10)
Last week, we got slammed by an insanely powerful storm in New Orleans. We had just pulled out of our campsite at 7 AM when the wind, lightning, and torrential rain appeared out of nowhere.
We're safe now, but this was definitely a learning experience to ALWAYS check the radar when you're in a storm-prone area like Lousiana! Even though we had checked the weather the night before, it can change on a dime. And when you're living on the road in an RV or a van, the weather is critical.
