Mr Balakrishna Prabhu and his wife, Sarojini began a tiny eatery in Kota, 60 years ago, then a little village enroute to Kundapur. Slowly but surely, the reputation of their tasty South Canara vegetarian fare cooked to family recipes grew not just with the support of locals, but travellers too for whom a visit to Hotel Latha was de rigueur after darshan at the famous Shri Amrutheshwari temple, located nearby. And served at prices that most would say are downright cheap in current context. Today the second and third generation father and son duo of Venkatesh and Rajesh Prabu tend to this eatery’s affairs, overlooked by the matriarch of the house, Mrs. Prabhu. Gangadhar, real name Krishnamurthy, is a man who wears many hats - former president of the gram panchayat, farmer and eatery owner. It is the last hat though that is relevant here. 16 years ago, he set up a makeshift shed to serve the famous Kyathasandra thatte Idli but away from the bustle of the main Tumkur highway, on a narrow village road leading to a tiny hamlet, Kesaramadu. Slowly but surely the popularity of his solitary village eatery grew for its thatte Idli, dosae and simple rustic lunch that came as a boon to the farming folks around. However, four years ago some customers recommended that he try roasting the Idli in ghee, and thus was born his, now-referred-to-as, Kesaramadu Roast Idli. Thatte idlis are steamed, cooled and then slow roasted on a dosae tawa with liberal lashings of ghee. Ten minutes later, the idlis take on a delicious, buttery crust that sends the palate into raptures brought on by molten streams of ghee. Mrs Prema continues in the legacy of her father, Mr Venkateshwara, who began a tiny idli hut in a bylane of Hassan adjoining the main market area. Over time the eatery moved to a tiny shop down the road, but its main offering, the idli continues to be a crowd pleaser, even 36 years on! Over 1500 of these are steamed each morning, to a unique batter that incorporates kusubalakki, urad dal and sabakki, sago pearls, in equal proportion; the Idlis are soft and sponge-like in texture to drink up the ghee that is drizzled over. It is served with a unique onion palya that is only tempered with salt and turmeric, and a fiery red chilli chutney made of peanuts, red chillies, cumin and garlic. The decor here is nothing to speak of, just some benches strewn around a tiny shed, but it doesn't seem to deter its patrons from lining up in queues to savour piping hot idlis for only the four or five hours they are open for business every morning.

In 1969, P. Ramachandra Upadhyay, then barely in his teens, migrated from Saligrama, Udupi district, to Kanakapura to work in Vasu Hotel, an eatery famous even then for its masala dosae. This form of the dosae though was a foreign concept to Ramachandra, who coincidentally came from a small village called Parampalli, where the khali dosa was prepared as an offering to Lord Maha Vishnu. Notwithstanding his lack of knowledge, the young lad worked hard in the kitchen and in a span of 14 years was handed ownership of the Vasu Hotel by the then owners who wished to retire. Nearly 50 years on, this no-frills eatery located 50 kilometers from Bengaluru still reigns supreme, not just for its sumptuous masala dosae and other old-fashioned tiffin and sweet treats, but also for its honest approach to pricing. I caught up with Mr Upadhyay and his son, Janardhan on a trip back from Mysuru.

Sometime ago, I had put out a tweet asking for underrated dosae recommendations in Bengaluru. From the many suggestions I received, I picked this tiny shop in Jayanagar, South Bengaluru. What first drew me to Dose Of Davangere initially was the fact that they still roast the dosae over a wood-fired stove, a cooking tradition that is fast disappearing in cities. And their commitment to procuring unsalted village butter from Davanagere. All in all, I was rewarded with the best expression of a Davanagere dosae that I have tasted in Bengaluru thus far. If you love your butter drenched dosae, especially the original Davanagere kind, this is a must-visit! In fact, I would go as far as endorsing it as a must-try dosae when here in namma ooru!

An engineer by profession, Apeksha was always interested in the food business. Backed by her husband and a friend, she took the plunge a few months ago in setting up a tiny eatery in Padmanabhanagar, South Bengaluru, where the vegetarian menu is a mix of local favourites and snack items from Dakshina Kannada. Having received a few recommendations from their patrons in the neighbourhood, I ventured out one evening to meet this young, confident entrepreneur and support her fledgling enterprise, in doing so, I taste a satisfying tiffin of idli vade served with a rather impressionable sambar, a subtly-flavoured Mangalore bun, nourishing bonda soup and some more, before rounding off my meal with an organic jaggery coffee. South Canara has its share of seafood eateries, but then, there are some that have endeared themselves to diners over decades by virtue of being true to the traditions they follow. One such popular seafood stop is Hotel Mahalaxmi, in the fishing village of Malpe, about six kilometres from Udupi, where Mrs. Pushpavati Bangera, the matriarch of this family run restaurant that began as a tiny hut, has been cleaning the fish and preparing the masala for the fish curry and fry each day for the last 60 years. I catch up with her and her son, Vishwanath Bangera before I sit down to a satisfying fish thali meal.

I heard from a few locals that this unassuming roadside eatery on Parra Main Road, North Goa, serves a xacuti that was worth the 20 odd kilometer drive from where we were staying in Dona Paula. But when we arrived, the chicken xacuti was over as were some other popular breakfast eats like egg chops, etc.. Nonetheless, we stepped into the kitchen to check what was available and found the remnants of a xacuti gravy that owner, Mahesh Parsekar’s mother prepares at home. The roasted spice aroma of the gravy was enticing, and so when Mahesh offered to cook a ros omelet with the gravy, I knew we had to try it. The weighty omelet was elevated a few notches by the aromatic flavours of the xacuti, and I definitely look forward to returning to Sai Anant Parra someday in the hope of tasting more of the traditional home cooked fare. Ask any denizen of Mysuru for the ‘tuppada dosae’ hotel and chances are you will be directed to this quaint shop that has stood the test of time for over eight decades in the bylanes of Ramachandra Agrahara. Begun by Mr Hollappa in the 1940s, this breakfast-only eatery is now run by his son, 86-year old Mahadevappa, and grandson, Mahesh. The must-try (actually one of only three items on the menu) here is the scrumptious Tuppa Dosae, roasted with liberal lashings of ‘vanaspati’ ghee, to accommodate “taste and budget” as pointed out by Mahesh. I dropped in for a quick chat and breakfast during a recent drive through the city.

An eatery that began the Kamat Yatriniwas group’s foray into highway restaurants twenty seven years ago, Kamat Lokaruchi in Ramanagara serves the nourishing fare of rural Karnataka in an earthy atmosphere that seeks to connect diners to the land. Traditional staples are cooked over old fashioned stoves fuelled by wood to recreate authentic flavours of yore, the culinary philosophy employed here also shuns the use of artificial color and additives. Since they first opened doors, numerous eateries have mushroomed on the Mysuru highway, but even today, over quarter of a century later, Kamat Lokaruchi reigns supreme as one of the most popular eateries on the route. I caught up with Narayan Kamat, son of the late A. S. Kamat who established the Kamat Yatriniwas group, and also explored the kitchens and some wholesome dishes here. Sumathi was content being a homemaker, when her husband Charles, a software engineer, encouraged her to open a small eatery given her passion for cooking. She began one and ran it for a few months, when tragedy struck, and her husband was no more. Left with no recourse to fend for her three children and herself, Sumathi Charles ploughed her entire savings into setting up a modest eatery serving Tamil Nadu style vegetarian tiffin and meals. I visit The Madhras Kitchen early one evening and leave thoroughly impressed with most of the dishes I taste. I have no doubt that if this eatery remains true to its cuisine philosophy, it will certainly emerge as a must-eat-at place on Bengaluru’s culinary trail. Located in the heart of Bengaluru on Castle Street, this clean, hygienic eatery is certainly worthy of more than one visit. Do taste their delicious fare, and in doing so, support yet another deserving small business.

When their 70-year-old eatery, Hotel Lakshmi Nivas, popularly known as KT Hotel, in Kalladka was demolished to make way for a flyover construction, Shivaram Holla and his wife, Mamatha resolved to bounce back as quickly as they could. Determined to hold on to the legacy left behind by their forefathers, during this difficult time, they gathered every bit of the rubble of the old structure and poured it into the foundation of their new building that has emerged just a few steps behind the original location. And they managed to do this in just under two months! I was amazed at their incredible determination to fiercely protect the Kalladka Tea and Rimjhim Coffee tradition that has quite literally put this town, 30 kilometers outside Mangalore on the food lovers map.
