Fed up with labour problems in his vegetarian eatery of 35 years, Krishnappa Gowda closed doors 10 years ago to open a shop selling fried chicken, cooked by him to a secret recipe influenced by his Mandya roots. Such is the tantalising taste of this chicken kebab, that its fans drive across the city to stand and eat at this eatery located in a nook of Mysore road! An astute entrepreneur, and mindful of the popularity of his spice mix, Gowda has also developed packaged versions of the masala for those who would like to satisfy their fried chicken cravings at home. I make the trek to GFC and return convinced that this is perhaps the best local fried chicken I have tasted to date. Hope you enjoy this episode, take care and stay safe.

Gowda’s Fried Chicken
Tender chicken, marinated for six hours in an aromatic, secret spice mix, Gowda’s Fried Chicken is the sort that is tantalisingly tasty. The masala serves to coat the kebab with a delicately spiced crust and seal its juicy bite; the chicken is cooked perfectly down to the bone. This is the sort of kebab that needs no accompaniment in the form of a chutney or onions.

A tasty kebab in itself, slightly spicier when compared to the GFC. The masala has formed a bit of a thick crust in parts as the chicken is fried, which lends a spicy kick. And then there are those parts where it is the juiciness of the bird that gushes through the palate.

The biryani here, made of basmati and kollam rice is served in a sumptuous portion, and is rich in the flavour of the masala when hot. Some pieces of the meat are soft and slide off the bone, and ribboned in rich fat, yet others with a bit of bite. As the biryani cools down, the savoury fat-laden flavour of the meat takes over.

Mutton Peas Pulav
Made three days a week, this is a pulao that is moist, gentle and aromatic. The aroma of the whole spices is what one tastes on the palate alongside the faint warmth of green chillies whose heat has been toned down by some coconut milk that goes into the pulao just before it is placed on dum. The meat in the pulao is soft and has a bit of fat ribboned through it, the peas are endearing in their soft bite.

A farmer by profession, Mr. Rangaswamy opened a small thatched eatery on his property abutting the highway in Gowdagere, near Channarayapatna, 15 years ago to serve tea and snacks to travellers on the Bengaluru Hassan route. As the eatery became popular, his family also introduced their unique village style biryani along with other meaty preparations like the mutton sambar, thale kaalu and chops. He has since passed on, but his family continues his culinary traditions at SLR Biryani. Notwithstanding the recent construction of a flyover that bypasses this humble home eatery and has impacted business here, it still manages to hold on to its loyal patrons. The popularity of their wood-fire-cooked biryani is such that it runs out in a few hours each morning, after which it is the mutton dishes served with ragi mudde, plain rice or khushka that occupy centrestage. I dropped in impromptu for lunch one afternoon and was elated to find, through a tremendous stroke of luck, the biryani that was prepared for a special order.

When Mr Mohammed suffered business losses in Bengaluru 18 years ago, he was on the verge of retreating to his hometown, but his wife, Mrs Asiya Khan prevailed upon him to stay back and begin a home-cooked biryani enterprise, based on a recipe she had learnt from her mother-in-law in Hyderabad. She would cook the biryani at home and her husband was entrusted with the task of selling these in supermarkets. Little by little, they grew their biryani business, moving to a tiny shop with space only for a counter and three tables eight years ago. Over time, the reputation of Noon’s Biryani grew and built for itself a loyal clientele, many of whom would order takeaways. However, the current situation has seen their business dwindle down to less than half, and it was in this context that they reached out to us, seeking assistance to help spread the word. I paid a surprise visit and liked what I tasted, compelling us to return later to film this episode. We visit the elderly couple at their home, watch the making of a chicken and mutton biryani, before making a delicious meal of these at their shop. Mrs. Mohammed’s mutton biryani benefits from a generous measure, as compared to the chicken biryani, of the fried onions and spices to complement the richness of the mutton on the bone, its meaty flavours fortified by some fat clinging on to the pieces. The rice glistens in its moistness and greets you with a gentle embrace, the edge of the spices tamed by the character of the meat, that also lends the rice depth of flavour. The meat is tender in parts and with a bit of a bite in others, its flavour delicate and warming, shining through the spices. If you are the sort who doesn’t like your biryani to assault your tastebuds with a spicy jhatka, this is certainly a biryani that will please your palate.

When Gautham Reddy, a DJ, and his wife, Christine, a pastry chef, suddenly found themselves out of work due to the pandemic, they put together their savings into a culinary enterprise, a café, that met with limited success. Lesson learnt, they turned next to a home delivery business focused on non vegetarian fare derived from family recipes. Orders followed, giving them the confidence to set up a tiny eatery in the suburb of Vidyaranyapura. Things have been slow though, and when they reached out to us to help spread the word, we stepped in for a surprise visit one Wednesday afternoon. Manned by an all-women team, the fare here is the sort that is homely, tasty and most importantly, honestly priced. We tasted around 10 dishes, the sort that would happily feed a hungry party of four, and worked up a bill of just over Rs. 1200. I hope you have the heart to support enterprises like these that are committed to honest work, and trying to do their best to stay afloat in these trying times.

We were relishing a traditional jolada rotti oota, but somewhere our conversation veered to tasting a biryani during our next meal. Alas, that wasn’t meant to be, but deep down I feel that if it would have been at Hotel Navayuga, a 40-year-old eatery that Appu Sir spoke about quite fondly. I did make a visit to the eatery later, to record a tribute episode to commemorate his last film over a meal with his nephew, Vinay Rajkumar and Anchor Anushree. It was also during the course of this meal that I decided I must return to film a full-fledged Gourmet On Episode.

My first meal in Bengaluru when I moved here 25 years ago was at Ebony, a restaurant perched on the 13th floor of one of the city’s earliest highrises. Dining under the stars, I distinctly remember the food, a smattering of Parsi, Pan Indian and Continental, dished up, simply minus any pretence yet solid in its flavours, much like the character of the city I now call home. I learnt later that the restaurant came into being quite by accident, born out of a crisis after its owner, Rajesh Rajaram, having bought the property as an investment was unable to flip it owing to the adverse fall out of the first Gulf war. Over the years, Ebony has successfully weathered many crises, evolving multiple avatars, the city’s most ‘democratic’ bar and more recently, an Asian restaurant. But sadly, the economic brunt of the current situation seems to have gotten the better of this Bengaluru bellwether. I visit Ebony for their last lunch service as they close shop to emerge stronger in a couple of months. Take care and stay safe. Happy eating!

When Bengaluru emerged from lockdown months ago, Lokesh and Rajiv, the brothers behind Shivaji Military Hotel took a conscious decision to not reopen dine-in until the situation got better. This meant foregoing a substantial chunk of revenues and relying on takeaway business only, but this was something they were prepared to live with, for the safety of their customers and staff. So when they reopened the eatery to customers a couple of weeks ago, we lost no time in getting there to savour their hugely popular donne biryani and also report on the current experience at this 90-year old culinary institution that has a reputation for being jam packed with customers. We arrived to find certain measures in place, even though in precarious danger of being overrun by its patrons. Thankfully though, the taste of the donne biryani hasn't wavered a bit from the time we tasted it last nearly a year ago. Hope you enjoy this episode, stay safe and happy eating!

The pandemic was a difficult time for Mahi and her husband Majeed. Their little son fell seriously ill and to nurse him back to health, this young couple had to borrow a fair bit of money. However soon thereafter Mahi lost her job. Left with no recourse, she turned to her love for cooking and opened a small shop near her home in Akshayanagar, a distant suburb in South Bengaluru, where she serves Lucknowi biryani and kebabs made to her grandmother’s recipe at home. There’s only a table to seat four and a few regulars in the area who order takeaways. But business has been tough, and the young couple have been having a tough time trying to make ends meet and repay their loans. I received an appeal from Mahi, and after making discreet enquiries, visited them for a meal. While the tiny size of the shop, it’s no more than a kiosk, with a table outside to seat four, did surprise me, what floored me completely was the taste of the fare that is served out of Biryani Delicacy. I will definitely return for the biryani and the kebabs. And needless to say, you should visit too. To savour a unique Lucknow style biryani that has been tweaked a bit to suit Bengaluru’s palate, and to also support a deserving small enterprise.

The dominant flavours in this biryani are that of the fresh ingredients, the naati ginger, garlic, coriander,mint etc., followed by a veil of the aromatic spices. Every grain of rice is imbued with its flavours, and the meat is a combination of some soft, juicy pieces and some on the bone, that calls for a bit of effort to get to every bit of it, some fat included. The spicing is gentle and warm.

Mutton Biryani
The only dish made at Mani Dum Biryani, is unique in its aroma that is redolent of an amalgam of spices combined with meat. Each grain of the rice has absorbed the procession of spices that go into the pot and the fat that is rendered from the meat, this is the sort of biryani that leaves behind a spicy impression on the palate. You can taste the heat of green chillies, and the flavour of the secret spice mix that’s made in Mani’s home. Some of the meat is laced with fat that melts in the warmth of one’s mouth, some pieces though can have a bit of a bite. This is a spicy biryani, and the mosaru bhajji, onion and cucumber raitha helps cool things down.

Hi folks, hope you are doing well. In this throwback takeaway biryani review, we visited Meghana Foods, a establishment that seems to have a formidable following for its biryanis that are mostly made in the Hyderabadi style with loads of masala. Purists may balk at the eatery’s top seller, a boneless chicken biryani that to me seemed like a culinary intersection of Sino-Indian and Hyderabadi fare! Love it or hate it, you certainly can’t ignore Meghana Foods!

And to allay consumer fears in a covid world, they seem to be following many of the practices - temperature checks, hand sanitation, sealed takeaway packs, etc. - that will have to be the norm when it comes to eating out. Hope you enjoy this one, take care and stay safe.

Tender morsels of boneless meat, tossed in a spicy batter are served as an accompaniment to fluffy grains of biryani rice. Though a dish that is far removed from a traditional Hyderabadi biryani, it still commands legions of fans, I suspect partly because the spicy morsels of meat and generous portion of rice served makes it ideal for sharing.

On my last trip to Mysuru, I visited this food truck that cooks an unusual biryani, layered and steamed in bamboo. Helmed by a relatively new food entrepreneur, Ramamurthy, who was left with no option but to move to Mysuru and begin this mobile eatery to support his family after losing his life’s savings, the bamboo biryani is a result of his culinary passion and kitchen experiments. This version of the biryani that is steamed in bamboo for a couple of hours, isn’t what one may traditionally expect, but certainly makes for an interesting dish to taste! Mutton Biryani
The sort of biryani that tumbles onto the plate when semi-cooked meat masala is placed in the bottom of a bamboo cylinder, topped with aromatic rice and egg, and steamed for a couple of hours. The thick masala clinging to the meat serves to moisten the rice and the meat, some pieces soft and yet others that warrant a bit of a chew. The bamboo lends its aroma to the preparation.

Childhood friends, Koushik, Sachin and Sanketh, grew up in Kundapur, fascinated by the teeming variety of marine produce brought in by boats to the fishing ports of South Canara. The boys found themselves pursuing engineering degrees in Bengaluru, yet dreaming of seafood. Upon completing their studies, the engineers returned to Kundapur, built a food truck, roped in a village cook, before driving back to Bengaluru to launch their ‘Mangalore in Bangalore’ sea food enterprise. I visit them on a rainy evening for an interesting chat, and return mighty impressed with the marine spread on offer, the un-compromised rustic flavour of most of the dishes that I taste, and their commitment to offering fresh seafood at honest prices. Almost everyone has heard about and many have tasted the early morning biryani at Hoskote, a pre-sunrise ritual 40 kilometers from Bengaluru. However, few visitors seem to know about a fried kabab evening tradition that is hugely popular with locals. On a drive back from Kolar a few weeks ago, we took a detour into this highway town to savour a quick meal of chicken kabab, egg rice, and a chicken biryani too. The last wasn’t on our plan, but then, we were in biryani country after all. Definitely check out Ravi Kabab Center when in the area, and be prepared to jostle with the crowd to get your share of bisi bisi (hot) kababs.
