Having burnt his fingers in a string of failed ventures, Chandrashekar, a pharmacist by education, set up a small eatery 20 years ago as a last resort on some land gifted by his father and with the recipes of his late wife, Chandrakala. Little by little, the restaurant grew, not just in size, but also in its reputation for stellar Gowda food. Seeing her husband struggle, Nalini gave up her teaching job to support him in this enterprise that aspires to serve homestyle Gowda food. Mutton Peas Pulav
Made three days a week, this is a pulao that is moist, gentle and aromatic. The aroma of the whole spices is what one tastes on the palate alongside the faint warmth of green chillies whose heat has been toned down by some coconut milk that goes into the pulao just before it is placed on dum. The meat in the pulao is soft and has a bit of fat ribboned through it, the peas are endearing in their soft bite.

I often find that the most memorable meals are usually those that happen rather unexpectedly. Like this delicious lunch that we savoured at this popular eatery in Hassan, 210 kms from Bengaluru, a couple of months ago. Guided by suggestions from our viewers, I didn't quite know what to expect when I walked into a bustling lunch session here late one afternoon on our way back from Mangalore. But the memory of the rustic, homestyle Gowda dishes that I tasted here, lingers to this day. Suffice to say I would happily make the 210 km drive to Mamatha Hotel in a heartbeat just to savour the food all over again. Hope you enjoy the episode. Katla Fry
Coated in a delicious spiced batter that complements the earth flavours of the freshwater fish, the katla fry is a popular dish here for all the right reasons. The crispened skin and the masala work well to cradle the fleshy fish.

Notwithstanding bits of fat ribboned through it, the juicy chunks of meat have a bit of a bite. And as you chew on it, you are rewarded with the robust flavours of the curry. This is the sort of delicious mutton curry you would taste in a Gowda home in the area. Makes for a great accompaniment to the ragi mudde and steamed rice.

Bengaluru’s Newest Biryani Craze, Mallika Biriyani, sells over 500 kilos of meat biryanis every weekend! Mutton biryani, chicken biryani, homestyle mutton curry, chicken fry, liver fry, boti fry, raagi mudde, kothanur, east bangalore

Mallika Biriyani is the fascinating story of a computer engineer who began a biryani shop six years ago with an investment of Rs. 10,000 after a string of failed ventures. In the early days, he would procure a kilo of mutton each day, today the shop has evolved to a bustling biryani destination which procures over 500 kilos of meat on weekends to cater to the thronging crowds here. I make a 20-km trek through town to the far flung suburb of Kothanur in East Bengaluru to catch up with Venkatesh for a close look at his enterprise, and also taste the five or six dishes on offer here including his unique wood-fired biryani creation which comes across as a delicious confluence of various styles. A pleasing homestyle mutton preparation that’s cooked slowly on a wood fire, the fat in the meat renders into the gravy giving the curry a lip-smacking unctuous richness. The meat slides off the bone, the curry is a great combination with the rice and raagi mudde. If you need one reason to make the trip to Mallika, this would be it!

Chicken Biryani
The biryanis are served in large portions, there’s plenty of rice, and 5 or 6 pieces of chicken, which makes it a great biryani to share. On the nose, there’s the smokey character from the wood-fire, you can taste the depth of flavour in the rice from the spices. The meat is moist, though mellow in its flavours and benefits from being eaten with the flavourful rice, that is a mixture of two varietals, the ‘starchy’ short-grained seeraga samba and the ‘low on starch’ medium-sized-grain, bullet variety.

Mutton Biryani
Seven or eight pieces of meat in a mutton biryani at Rs. 230 makes it great in terms of value, and perhaps also lends to its mass appeal. The spicing and masala is identical to the chicken version, but the character of the mutton, with a bit of fat, imbues the biryani with a mellow, warming flavour note that’s more rounded on the palate. The meat is juicy, and has a bit of a bite. If you like your flavours a bit punchy, taste it with the sherva, the gravy of the mutton curry.

90-Year SHIVAJI MILITARY HOTEL, Bangalore’s Most Popular DONNE BIRYANI Opens Dine-In After 8 Months!

When Bengaluru emerged from lockdown months ago, Lokesh and Rajiv, the brothers behind Shivaji Military Hotel took a conscious decision to not reopen dine-in until the situation got better. This meant foregoing a substantial chunk of revenues and relying on takeaway business only, but this was something they were prepared to live with, for the safety of their customers and staff. So when they reopened the eatery to customers a couple of weeks ago, we lost no time in getting there to savour their hugely popular donne biryani and also report on the current experience at this 90-year old culinary institution that has a reputation for being jam packed with customers. We arrived to find certain measures in place, even though in precarious danger of being overrun by its patrons. Thankfully though, the taste of the donne biryani hasn't wavered a bit from the time we tasted it last nearly a year ago. Hope you enjoy this episode, stay safe and happy eating!

Bengaluru loves its egg rice, a heavily indigenised variation of the fried rice fortified with an amalgam of punchy spices and fresh ingredients to cater to local palates. Whilst one will find a popular egg rice cart in almost every neighbourhood, there is perhaps none as popular as Snehajeevi Gowdara Adda Egg Rice, that thumps out enormous quantities to queues of patrons who wait patiently for the hot, spicy rice and other egg-y creations at this shop, ironically, located in the predominantly vegetarian neighbourhood of Malleshwaram. I dropped in one afternoon to take a closer look at this tasty creation and chat with the owner, Kumar Gowda, who began making egg rice in his pushcart 18 years ago when he was forced to give up the tender coconut trade. Eshwar Rao entered the kitchen of a generations-old military hotel when he was barely into his teens. It was here that he learnt age-old Karnataka-Maratha recipes from his mentor, Rukmini Bai over decades of diligent labor, that he now serves up in his rustic eatery, S G Rao’s Military Hotel in Cottonpet, Bengaluru. I met this entrepreneur, now in his forties, and caught the making of a unique military style pulav, in addition to a tasting of some of the other must-haves here. The pulav here is cooked only with the gravy of the meat, the meat that is then layered under the rice just before serving. Anand was only 14 when he opened a tiny shop to sell idli and chitranna to support his family in his village, Hoskote, located about 40kms from Bengaluru. Customers requested him to sell biryani too on Sundays. What began as a tiny 2-kilo experiment 21 years ago has grown today to a massive kitchen that sells nearly a thousand kilos of mutton biryani on Sundays. And in doing so has placed Hoskote on the map for biryani lovers who don't seem to mind waking up at an unearthly hour just to get here to stand in a queue for an hour or two for a plate of the fabled Hoskote biryani that runs out by 9am and is sold only on Tuesdays, Fridays and Sundays. I drive out to Hoskote at 4am to find out what makes this biryani such a craze. Stay safe and happy eating!

Mutton Biryani
The dominant flavours in this biryani are that of the fresh ingredients, the naati ginger, garlic, coriander,mint etc., followed by a veil of the aromatic spices. Every grain of rice is imbued with its flavours, and the meat is a combination of some soft, juicy pieces and some on the bone, that calls for a bit of effort to get to every bit of it, some fat included. The spicing is gentle and warm.

After many a vegetarian reviews over the last few weeks, I was craving the comfort of some hearty non vegetarian fare. And so we landed at Bheema’s to savour a spicy Andhra bhojanam of fish fry, chilli chicken, mutton pepper fry, Guntur chicken, and a couple of biryanis, their staple Nellore version in addition to their ode to Bengaluru’s dhonne style biryani! And needless to say, we also took a quick look behind the scenes to see how this popular restaurant is gearing up to serve customers in these challenging times. Enjoy and stay safe.

A tasty fry, though not the sort that will blow your socks off! It’s a thin slice of fish, napped in a sprightly masala and fried crisp around the edges.

The meat is soft and juicy, however it is the delicate spicing of the biryani that makes an impression on the palate and lingers long after one has finished eating.

This rustic eatery, located in Kolar, the milk and silk center of Karnataka, and within a two-hour driving distance from Bengaluru, is a labour of love spanning three generations of a family who come together every morning to serve up a meaty repast of traditional dishes that over the years has found much favour with the locals. I catch up with the family in their kitchen where the food is cooked as it was 25 years ago, on an ingeniously designed wood-fired stove. Hope you enjoy this episode, take care and stay safe.

A fish fry that’s best savoured hot, the flesh is moist with the skin crispened. The masala is flavourful and thankfully does not overpower the earthy flavours of the fish, I suspect this is a kaatla or a variant thereof, although locally it is referred to as silver pomfret.

A biryani that is mellow in flavours, subtle nuances of the aromatic spices are all that one detects in the rice, a combination of seeraga samba and the bullet variety. The meat is tender and moist, effusive in its flavour with a slightly salty edge of sheep meat. The meat combined with the rice makes for a flavourful mouthful, combine with the sherva to add a bit of a punch, the biryani is definitely a must order here if you come on one of the days they make it.

Handground by the ladies of the house, one can discern the grainy texture of the coarse kheema on the bite and the warming notes of inger. The kheema unde is soft and flavourful, there is some egg that’s used to bring the roundels together with a bit of gram flour, but is barely discernible. Loaded with fresh pepper spice,

A loaded chop, plenty of meat and some fat, that stands testament to the fact that SVS knows how to cook its meat. Absolutely delicious, the meat peels away from the bone, yet has a bit of a bite. In the beginning, “things were difficult, sometimes humiliating and marked by periods of self-doubt”, recalls Raju, as he is popularly known. Giving up though wasn’t an option, driven also by the necessity to provide for his family. Slowly, the popularity of his mild-flavoured biryani served in cups of dried banana leaves, jonne, grew, and so did the scale of his enterprise. Today, this resilient entrepreneur’s Halli Jonne Biryani occupies prime real estate in Jayanagar, South Bengaluru, and is frequented by over 500 customers on any given day. Chicken Biryani
The seeraga samba rice is stained pastel yellow with a tinge of green, reminding one that this biryani hasn’t borne the brunt of a masala overload. Not the sort of biryani that one will smell from a mile away, the flavours though are the sort that reveal to the palate the ingredients that have gone into its making. You can taste the tingling heat of the green chilli, the freshness of the coriander and mint, the veil of fragrance from the spices register. A biryani that also brings to the fore the flavour of the seeraga samba rice. If you like it spicy, you may need to taste it with the curries that are served alongside the biryani.

The mutton has rounded off the flavours of biryani, as opposed to the chicken version. The meat is tender and moist, its fat laden flavours the sort that compels one to draw a bit of the meat in every scoop of the rice. These biryanis are perhaps the lightest donne biryanis one has tasted.

Sixteen years ago, Balwant and his wife, Girija decided to open a tea shop on the fringe of their small farm abutting the highway at the foothills of the Western ghats just outside Sakleshpur, to augment their income. The tea shop soon began offering Malenadu style akki rotti to hungry travellers. And then meals followed, fuelled by Girija’s recipes and a wood fire, a simple affair, rice, rotti or raagi mudde, served with homely preparations of sambar, rasam, vegetable, pickle, papad, buttermilk and curd. Their following may have grown over the years, but the eatery remains as basic as it was when they first opened; I asked Balwant why he didn’t have a name board, and he modestly replied, “I thought I would put up a board when I improved the hotel,” meaning the interiors.

His son, Prashant interrupts to say “we are on google maps and customers find us so we don’t need a signpost anymore.” And that’s true, it’s the simple yet tasty village style food served in a rustic setting here that’s a big draw for locals and travellers alike and earned for the establishment the moniker, Akki Roti Hotel Anemahal.

The Malenadu style akki rotties are served hot and puffy with homemade butter that makes for a simple yet delicious accompaniment to the toasty crackle of the rotti. A tasty vegetable saagu, curry made of raw banana and bengal gram, helps one make a sumptuous meal of these rotties. There’s a spicy green chilli chutney completes the plate.

Choose from rice or raagi mudde served with a delicious homestyle sambar and a fingerlicking rasam that’s a flavourful play of spicy, sour and sweet on the palate. A dry vegetable for the day adds to the tasty nutrition of this meal, and there’s some homemade curd, buttermilk, happala and pickle to round off the meal.

When members of the Subbanna family from Lakkondahalli, a village near Hoskote, settled in Bengaluru, they kept their connection to their land alive in the food that was served at home. Wanting to share their rustic cuisine with Bengaluru, they set up Naati Sogadu in Sahakar Nagar, North Bengaluru, a restaurant that quickly became popular for its homestyle non vegetarian fare, cooked almost entirely by the family. In this episode, I return to Naati Sogadu, post lockdown, to meet and support the Subbanna family and also savour dishes that I had not tasted during my first visit.
