????????GREEN PAPAYA SALAD: shredded green papaya, crispy leeks, chickpea powder, chilli oil, red eye bean, MSG and salt fermented tamarind sauce. Mix it all together.

???? FRIED ANTS WITH PEANUTS: Smash the peanuts, place them in a bowl with smashed garlic and chilli. Saute mixture in a pot and add turmeric powder, peanut, garlic, chilli, ants and salt.

???????? BEEF JERKY: Marinate the jerky with garlic, chilli and salt and place on grill. Slightly mash the well cooked meat to soften it. Place everything in a mortar and crush it with more garlic and chilli.

????GRILLED BIRD: Clean the bird and place on skewers. Marinate it with salt and grill it.

????????MUSTARD & BEAN SOUP: Boil the chicken bones with beans until the beans are tender. Then just before serving, add salt and freshly picked mustard leaves.

????????STIR-FRIED CHICKEN BUTTS: Chop up all the veggies and mash the garlic. Prepare a hot pan with cooking oil and add ginger, garlic, chilli, onion, chicken butts, carrot, bell pepper, oyster sauce, soy sauce, chicken powder and salt. Add sweet thick soy sauce and scallion and stir.

????????BOILED BEEF TRIPE AND TONGUE: Marinate beef tongue and tripe with salt, garlic, ginger and rice wine. Boil for 15 mins. Stir-fry the beef tongue for a bit. Serve with the biel sauce (ground coriander, basil, herbs mix with biel juice)

????????GRILLED DOVE AND SPARROW: Marinate the birds with garlic, ginger, paprika and rice wine. Grill for 20 minutes.

BLACK HMONG HUNTING

1. MRS MY’S FAMILY HOME
ADDRESS: Hang Co Village, Tu Le Ward, Van Chan District, Yen Bai Province

????POUNDED STICKY RICE: Steam the black rice and place in a mortar. Pound the rice for 20 minutes. Add in boiled egg yolk and mold mixture into a ball shape. Place the pounded rice cakes on banana leaves. Place it on the grill for 10 minutes and then serve with dipping sauces: Hot chilli (MSG, chillies sauce, and salt) and pounded grilled chillies with salt.

????BAMBOO RAT GASTRIC ACID SOUP: Add fresh Bamboo rat blood in the rice wine, and take shots. For the Gastric acid soup: Mince the intestines and stir-fry them with salt, MSG add minced ginger. Add water and cook until the soup boils. Add lime leaves and passion fruit leaves. Cook for 2 minutes then serve.

????STIR-FRIED BAMBOO RAT WITH LEMONGRASS & CHILLI: Grill the bamboo rat then cut in bite-sized pieces. Stir-fry with oil, MSG, salt, garlic, lemongrass, scallion and chillies.

????GRILLED LOACH: Cut the cleaned loaches in half and remove their guts. Season with salt, MSG, garlic, chillies, lemongrass and pepper. Put them on skewers and grill on wood fire.

????SNAKE OMELETTE: Cut the cleaned snake in 10cm chunks. Mince the snake meat. Add eggs, MSG and salt. Fry it with a bit of oil, and it’s ready to serve.

Chickpea Tofu and Pickled Tea Leaves: Myanmar's Unreal Cuisine, and Why It's So Hard to Find

Burmese food is something totally unique- a flavor profile shaped by an ancient history with roots connecting the empire to powerful culinary neighbors like China, India, and Siam, but with indigenous techniques and ingredients that make this cuisine all its own.

Somehow, in twelve years cooking and eating in Asia, it never occurred to me how strange it was that I didn't know anything about Burmese food. I never questioned why Thai, Vietnamese, and Malaysian food could be found anywhere, but the largest geographic country in mainland Southeast Asia- a place with a 4000-year history and an outsized influence on the continent- was invisible. But then I tried my first Burmese meal, and all of a sudden, a million questions needed answering.

This video is an attempt to answer- maybe not all of those questions, but at least...say...two or three? What are some of the iconic dishes in Myanmar? How did Burmese food take shape? And why have I never encountered it before?

We're diving into the Bangkok Burmese refugee diaspora to get as deep as we can into Thailand's hidden Myanmar subculture in a culinary adventure on OTR.

1. Giriama Homestead: Cassava + Kinolo + Turkey + Ugali
ADDRESS: Koleni, Kilifi, Kenyan Coast

Our food journey through Kenya brought us to the Giriama Homestead in Kilifi. The Giriama is a bantu Kenyan community known to be one of the nine ethnic groups that inhabit the Kenyan coast, just about 2 hours away from Mombasa. The Giriama tribe largely depend on agriculture and hunting for food. They showed us how they grow their food and also shared some traditional tribal dishes with us.

???????? CASSAVA: Boil cassava then mix with freshly grated coconut milk. Mash cassava leaves in a mortar and then cook.

???? KINOLO: Mash ripe bananas in a traditional giant mortar. Mix in maize flour then bake in a jiko. Serve on banana leaves.

???? TURKEY: Clean turkey and stew in a large pot with water and salt. Season to taste.

???????? UGALI: Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

1. MANAKARA FISHING VILLAGE: Seafood Feast
ADDRESS: Manakara, Madagascar

????CASSAVA: Boil cassava in water for 30 minutes. Once soft, mash the cassava, mixing in crushed peanuts until the texture is similar to mashed potatoes.

????BREADFRUIT: Boil the breadfruit until soft, then add a bit of salt and mash.

????SHRIMP: Sauté shrimp with onion and tomato. Add cassava leaves on top and allow it to boil in water to create a shrimp soup.

????TUNA: Cut the tuna into sections and put it in a hot steel pot. Add in fried onion, tomato and salt and allow it to steam until cooked through.

» NAIROBI STREET FOOD

1. MAMA MWENDWA’S: Chapati + Tea (Chai) + Mayai-Chapati
ADDRESS: Nation Kibandas, Mombasa Road, Nairobi
OPEN: 6:00AM to 3:00PM

???????? CHAPATI : Add flour to a bowl, salt and water and knead until firm. Sprinkle a little flour on a flat surface, then flatten and roll out the big mound of dough onto the surface. Pour a little cooking oil on the flat dough. Using a knife, portion the flat dough lengthwise into equal strips. Roll in each strip into a ball. Flatten dough balls using a rolling pin then cook on both sides on a hot pan.

☕ TEA (CHAI): To a big sufuria, add water followed by milk. As it gets hotter, add tea leaves.

???? MAYAI-CHAPATI: Add cooking oil to a hot pan, pour in a beaten egg and cook until well done on both sides. To make the Mayai-Chapati, place the omelette inside a chapati and serve.

2. ENKARE: Nyama Choma + Ugali + Kachumbari + Sukuma Wiki + Mutura
ADDRESS: Kitengela, on the outskirts of Nairobi
OPEN: 12:00PM to 11:00PM

???? NYAMA CHOMA (Roast Meat): Divide the meat into popular cuts like leg and ribs, with offcuts like kidney. Season with salt and place in an oven for a few minutes. Then, place on a charcoal grill and cook evenly on both sides.

???????? UGALI : Bring water to a boil, add corn flour bit by bit and stir regularly. Stir until mixture is even.

???????? KACHUMBARI: Mix tomato, onion, lemon juice together to make salad.

????????SUKUMA WIKI (Collard Greens): Fry onions in cooking oil, add the sukuma wiki for about a minute or two and then serve.

???? MUTURA (African Sausage): Cut offal into small pieces then boil. Fry with onions, herbs and spices. Stuff inside uncooked tripe and tie both ends firmly, then grill.

1. WARUNG LESEHAN MERTHA SARI: Grilled Pepes + Sate Lilit Tuna + Sate Tusuk Tuna
ADDRESS: Jl. Kresna No.1, Pesinggahan, Dawan, Kabupaten Klungkung, Bali 80761
OPENING HOURS: MON - SUN 8:00AM - 6:00PM

GRILLED PEPES: In a bowl, mix chopped tuna, minced tuna, tamarind, ginger, bumbu genep (spice mix). Take a spoonful and place in the middle of banana leaves. Wrap and secure with a thin piece of bamboo stick. Place on the grill and cook.

SATE LILIT TUNA (TUNA SATAY) + SATE TUSUK TUNA: Wash the fish and grind thoroughly. Blend the smooth spices and stir-fry. Add additional spices. Mix seasoning with ground fish. Put mixture on skewer and grill. Serve with rice, tuna soup and sambal matah.

2. SAMSARA BALI – LIVING MUSEUM: Dragonfly Pepes + Landak
ADDRESS: Banjar Dinas, Jungutan, Bebandem, Kabupaten Karangasem, Bali 80861, Indonesia

DRAGONFLY PEPES: Filling: Mix together chillies, shallots, garlic, turmeric, salt and telengis (residue of coconut oil). Add dragonflies and mix. For a sweeter filling, add honeycomb to the mixture. Pepes Wrapping: Cut the banana leaves. Take a handful of mixture and put in the leaf. Seal it shut with a bamboo stick. Put the pepes on open wood fire and let cook for about 30 minutes.

LANDAK (Porcupine): Pour hot water over porcupine. Remove all quills, then place back in water and clean. Skin, debone and remove the organs. Sate: Mix porcupine meat with bumbu and make sate. Lawar: Grill heart and lungs and chop up the skin. Raw Lawar: In a big bowl, Mix shaved coconut and raw porcupine blood. Then add in boiled porcupine skin, grilled heart and liver. Add fried bumbu on top and mix everything together. Add in lime. Pour in porcupine stock (broth) and fried onions. Boiled Porcupine: Mix raw porcupine meat with bumbu then pour into pot cooking vessel to cook to boil.
