HR Ramaswamy Iyengar came to Bengaluru from Holenarsipur in 1956 and set up a bakery in Basavanagudi, an old market area surrounded by villages where groundnuts were cultivated. Selling a limited variety of pure vegetarian breads, buns and biscuits, the bakery fell upon hard times due to the rationing of flour and other essentials in the seventies. Faced with dire prospects, Ramaswamy Iyengar looked at the plentiful groundnut for survival and in doing so hit upon a unique recipe combining peanuts with a blend of spices that he named the Congress kadlekai, owing to the legend that during British times, secret notes were sent by Indian National Congress party workers hidden in sacks of groundnuts. I spent an afternoon with the second and third generation of the Sreenivasa Brahmins Bakery family to watch the making of the iconic Congress kadlekai and also taste some of the traditional items that make this 66-year-old institution a hit not just with locals, but also with Bengaluru diaspora across the globe who throng here for the kadlekai, nippat, khara buns, palya buns, puffs and other traditional Iyengar bakery treats.

OG Variar & Sons Bakery, popularly known as Variar Bakery, traces its roots to 1954 when O Govinda Variar, a native of Kannur, Kerala, set up a small bakery in Guttahalli, Northwest Bengaluru, selling breads and buns. Eventually he moved to Rajajinagar in 1970 before opening a second bakery on Chord Road, West Bengaluru. What makes Variar bakery immensely popular with locals is its philosophy that “excludes artificial additives, preservatives and chemically bleached flour in its vast range of baked products.” As a result, “there is no shining in our items,” says second generation owner, Vijaya Shankar, who is currently on a quest to substitute, to the extent possible, detrimental fats with healthier options of unrefined oil, ghee, butter across most of their range, and in certain products, maida with wholewheat flour and grains. I spent the better part of a day exploring the bakery and tasting many of the must-haves at this institution that has spawned many imitators. The Iyengar Bakery is an integral part of Bengaluru’s culinary landscape. Located in almost every neighbourhood of the city, these traditional bakeries date back to the turn of the last century when two Iyengar brothers from the Ashtagrama (a cluster of eight villages) area in Hassan made their way to Bengaluru in search of livelihoods, and built on the legacy of British bakeries with their own customs and flavours. Over the years, more from the community followed in their footsteps, a trend exacerbated by the famine of the 50s which rendered agriculture in the villages unviable, leading to the rapid growth of Iyengar bakeries in Bengaluru, Mysuru and elsewhere in the South. In this episode, I visit Sri Jayalakshmi Bakery, a 60-year old bakery that though rooted in its traditions has made space to evolve with the times. Needless to say, I also taste many of the calorie-laden but deliciously addictive goodies that have built for these time-honoured establishments a loyal fan following over the years. On a recent road drive through Kolar, we made a detour to Kolar Gold Fields, once famous across the world for its gold mines. The mines have long closed, and the town is now a pale shadow of its former glory. What has endured however is a bakery that first opened in 1880 and still continues to dispense its baked wares in an old school tradition that harks back 143 years! I met its fourth generation owner and also tasted many of the scrumptious treats on offer that are still popular with the inhabitants of this verdant town 70 kilometres from Bengaluru.

Note: I enjoyed most of the baked treats on offer. Standouts for me though were the veg puff, muffin (dilpasand), coconut biscuit, spicy cookies and plum cake.
Biscuits are priced at Rs. 30 for 100gm, the puffs and muffins at Rs. 13, and a loaf of bread, Rs. 30.

A café set in a home, Eat Repeat is IT professionals turned entrepreneurs, Kannan and Sangeetha’s ode to their Iyengar heritage. Made to authentic traditions, the vegetarian dishes here are devoid of onion and garlic, but pack loads of flavour, as I discovered in the Puliyogare, Chakkara Pongal and some of the other tiffin items that I tasted. The fare is simple yet wholesome, made and served with the sort of love, conversation and attention that one would expect as a guest in someone’s home. When offered a free stall at the Mysuru Dussehra exhibition 27 years ago, Zainul Ahbideen felt he should in turn offer the city a taste of something different. And for his main ingredient, he chose the humble gobi, cauliflower, given the popularity of gobi manchurian, but in an avatar that had not been seen before. Experimenting with a spice mix he first made at home, Usman Dry Gobi emerged. It wasn't long before he moved to a street cart, and eventually a streetside stall a few years ago. Great care is taken by him and his son, Usman, to procure the right quality and size of cauliflowers, that are cleaned thoroughly and spiced with a secret masala, before being fried meticulously in a bath of hot oil. The result is the crunchiest, most flavourful dry gobi one can eat in Mysuru, and the sheer number of customers who queue up at this stall every evening stand testament to the fact that Usman’s Dry Gobi has emerged as one of this palace city’s most popular street food creations over the years. An engineer by profession, Apeksha was always interested in the food business. Backed by her husband and a friend, she took the plunge a few months ago in setting up a tiny eatery in Padmanabhanagar, South Bengaluru, where the vegetarian menu is a mix of local favourites and snack items from Dakshina Kannada. Having received a few recommendations from their patrons in the neighbourhood, I ventured out one evening to meet this young, confident entrepreneur and support her fledgling enterprise, in doing so, I taste a satisfying tiffin of idli vade served with a rather impressionable sambar, a subtly-flavoured Mangalore bun, nourishing bonda soup and some more, before rounding off my meal with an organic jaggery coffee. Originally from Satna in Madhya Pradesh and raised in Bengaluru, Jawahar Lal always dreamt of being an entrepreneur when he worked as a North Indian cook in eateries in Bengaluru. A friend pointed him to a tiny shop on Berlie Street in Langford Town, and thus began Sudha Chaats, named after his wife, 39 years ago, to introduce Bengaluru to the joys of khasta (crisp) samosas and kachoris. The couple would cook and serve their fare piping hot; alongside the North Indian treats, their masala vada, bhajji and bonda, made interestingly with samosa stuffing, too found much favour, making their shop a popular cornerstone of the neighbourhood over time. Jawahar Lal passed on two years ago, but the tradition continues with his wife, now joined by their son, Satya Narayan. Hope you enjoy this chatpata episode. After making a beginning in Chikkaballapur, the patriarch VA Venkatachalapathy Setty migrated to Bengaluru in 1952 to introduce the denizens of this city to his style of Mysore Pak, lush with ghee, and another equally popular invention, the Dumrote, a slow-baked crusty halwa made of ash gourd that takes the better part of a day to prepare. I catch up with the second, third and fourth generation of this iconic sweetmeat shop, and delve into the making of the Mysore Pak and Dumrote. Krishna Poojary migrated from his hometown in Kundapura to Bengaluru nearly half a century ago in search of a livelihood. After a string of odd jobs in eateries, he decided to try his hand at a bajji (fried fritter) gaadi (cart) in Jayanagar 4th block, Bengaluru. It’s been 42 years since; the location of his cart has changed from one street to another over the years, but the place that his fried wares occupy in the hearts and palates of his neighbourhood patrons remains constant to this day. Also perhaps making Kundapura Bonda Bajji Shop one of the area's oldest street food carts! I visited him one cloudy Bengaluru evening to taste all the bondas and bajjis he and his son have on offer.

Whilst we receive many messages, pictures, videos and comments on how an eatery is faring post a Gourmet On the Road episode, we rarely ever return immediately after the video is aired. However, we learnt that Chitradurga Mirchi Mandakki, an inspiring street food story, was overwhelmed with customers after our video, so I decided to venture out to see this response for myself and to also encourage the family behind this enterprise. I got to interact with many of our viewers, and along the way also met another inspiring street food vendor, Mrs. Muthulakshmi, who cajoled me into tasting her crunchy gobi manchuri. Iconic 70-Year KALLADKA TEA Hotel Was Demolished But Rebuilt In 2 Months! KT Hotel Lakshmi Nivas

When their 70-year-old eatery, Hotel Lakshmi Nivas, popularly known as KT Hotel, in Kalladka was demolished to make way for a flyover construction, Shivaram Holla and his wife, Mamatha resolved to bounce back as quickly as they could. Determined to hold on to the legacy left behind by their forefathers, during this difficult time, they gathered every bit of the rubble of the old structure and poured it into the foundation of their new building that has emerged just a few steps behind the original location. And they managed to do this in just under two months! I was amazed at their incredible determination to fiercely protect the Kalladka Tea and Rimjhim Coffee tradition that has quite literally put this town, 30 kilometers outside Mangalore on the food lovers map. A couple of weeks ago, I watched a beautiful Kannada play that not only chronicled the iconic Vidyarthi Bhavan but also brought alive the emotional connect that patrons have with this institution over the decades. Amongst the brilliant characters portrayed, a pivotal performance was that of famed actor and food legend, Sihi Kahi Chandru, who gave voice to the Vidyarthi Bhavan masala dosae, the heart of a tiffin experience at the 77-year-old eatery. In the course of our conversation backstage, Chandru Sir and I quickly decided we should savour a full tiffin at Vidyarthi Bhavan soon. I chanced upon this small shop tucked in a by-lane of Indiranagar, serving the hitherto unseen (in Bengaluru) flavours of Benares, Uttar Pradesh. In this quick evening stop, I made quick work of some of the must-try dishes on their menu, scrumptious samosas, a weighty, comforting dal and methi (fenugreek) poori, aloo mangodi, fresh ghee jalebis, an utterly 'khasta' kachori and more. Many say that quintessential Iyengar delicacies such as the sakkarai pongal, bela pongal and puliyogare trace their roots to this sacred town where one modest eatery, Subbanna Mess, has been serving traditional Melukote cuisine for nearly a century to pilgrims who journey here. In this episode, I explore the making of the puliyogare gojju, savour a delicious lunch and meet the family behind this eatery who state rather humbly, that they are merely preserving the culinary customs handed down by the generations that came before them.
