With a culinary legacy that spans 130 years and four generations, Rahamaniya Briyani Hotel is considered to be the home of the Ambur Briyani. Spelt Briyani by the denizens of this bustling town, this dish has spawned many a biryani shop across the region.

In this episode of Gourmet On The Road, Food Lovers’ Editor, Kripal Amanna meets three generations of the Ahmed family and gets exclusive insider access to the kitchens of Rahamania Briyani Hotel to watch the making of an Ambur mutton briyani from scratch.

He also tastes the briyani and a moist Naatu Kozhi briyani in addtion to a couple of meaty sides.

this biryani is seductively subtle in its aroma. you taste the luscious flavours of the aqhni in every grain of the flavourful jeera samba rice. The juicy meat pieces are small, allowing you to savour its meaty goodness in almost every mouthful of the briyani. If you like your briyani a little spirited and slightly spicy, taste it with the eggplant salan. I personally love this 'briyani' just by itself.

NAATU KOZHI BRIYANI
prepared in the same fashion as the mutton version, the flavour of the rice is very similar to the mutton briyani sans the flavour of the fat in the latter. The flavourful country chicken has a bit of a bite, typical of its character. If you love your naatu kozhi, you will love this briyani too.

47 years ago, Janab Ahmed Basha Sahib set up a modest eatery in Vaniyambadi, a town in Tirupattur district of Tamil Nadu, famous for its leather industry. The fare at Ahmedia Hotel was mostly Mughlai, inspired by the culinary traditions of erstwhile North Arcot principality. Over decades the kitchens here have perfected time-honored recipes, amongst them a wood-fire-cooked biryani that, unusual for Tamil Nadu, favours the basmati over seeraga samba rice. I discovered Ahmedia three years ago on a #gourmetontheroad tour through the region when I met the founder and his enterprising sons. Janab Ahmed Basha has passed on since, but his sons seem determined to build on their father’s legacy. And have now opened a massive 25,000 sq. ft., 250-seat Ahmedia branch on the Bengaluru Chennai highway with the conveniences required to cater to travellers. I visited them on a recent trip to Chennai, where I tasted most of my favourite dishes here, including the biryani that has put Vaniyambadi on the culinary map.

It had been a while since I had filmed a biryani making episode. And so when the opportunity arose to film the complete process of a biryani whose recipe has remained constant for over a century, I lost no time to head to Taj Hotel Shivaji Nagar, an eatery that dates back to the early 20th century, and today churns out over 500 kilos of biryani each day. I met with the third and fourth generation of the family of the late Janab Abdur Rahman, who are committed to preserving the ancient traditions that go into the making of their biryani, including cooking it over a wood fire only.

Anand was only 14 when he opened a tiny shop to sell idli and chitranna to support his family in his village, Hoskote, located about 40kms from Bengaluru. Customers requested him to sell biryani too on Sundays. What began as a tiny 2-kilo experiment 21 years ago has grown today to a massive kitchen that sells nearly a thousand kilos of mutton biryani on Sundays. And in doing so has placed Hoskote on the map for biryani lovers who don't seem to mind waking up at an unearthly hour just to get here to stand in a queue for an hour or two for a plate of the fabled Hoskote biryani that runs out by 9am and is sold only on Tuesdays, Fridays and Sundays. I drive out to Hoskote at 4am to find out what makes this biryani such a craze. Stay safe and happy eating!

Mutton Biryani
The dominant flavours in this biryani are that of the fresh ingredients, the naati ginger, garlic, coriander,mint etc., followed by a veil of the aromatic spices. Every grain of rice is imbued with its flavours, and the meat is a combination of some soft, juicy pieces and some on the bone, that calls for a bit of effort to get to every bit of it, some fat included. The spicing is gentle and warm.

Ambur| Ambur Chicken biryani with Brinjal Gravy/Thokku.

This is the first video about AMBUR and Preparation of 'Ambur Briyani and Brinjal Thokku'. The Briyani and the Brinjal tasted awesome.

Below is measurement for 5 kg Jeera Rice, You can divide it by 5 to get for 1 kg measurement.
Rice - 5 KG
Chicken/Mutton - 8 KG (drain the water as much as possible after washing)
Oil - 1ltr to 1.5 ltr
Garlic - 750 Grams
Ginger - 500 Grams
Pattai - 20 inch
Lavangam - 50 nos
Ellakkaai - 30 nos
Tomato - 2.5 Kg
Onion - 3 Kg
curd - 1ltr
Lemon - 5 nos
coriander+mint - 1 bunch
Red Chilly powder/Fresh red Chilly paste - 250 grams (First put half and taste, if you want more chilly add as required)
Hot Water - i.e., 5 cup rice = 4 cup water, Ideally gravy should not be seen on top after adding half boiled jeera rice. if required you can remove some gravy if you see gravy above rice.
Salt - as required (Note: taste of Salt level in the gravy after pouring water should be bit more so that it will be compensated after adding half boiled rice. after adding rice you cannot add salt and mix as it will break the rice).
how to make Half boil rice - Put the Jeera rice in the boiling water and wait for just one boil and then immediately drain it and add it in biryani gravy.
If you are preparing Mutton biryani on fire wood - marinate mutton in 100gm Raw papaya for 30min.
