Behind the Counter at a local Japanese Udon Noodle Restaurant

I’m taking you behind the counter at another local family-owned Japanese restaurant to bring you the real life story of how handcrafted udon is made. This time, we’re at Sanuki Udon Iwai a local favorite at Juju Station in Tokyo. It’s just a 5 minute walk from the station through the Jujo Ginza Shotengai. Udon Noodles are one of Japan’s most traditional foods as well as one of its most simple, just soup and udon noodles. Well, you can add toppings, but many Japanese still enjoy it just with those 2 ingredients. So it’s critical to craft a perfect dashi in order to craft a perfect bowl of udon. Iwai san learned his udon crafting skills under the master at Miyatake Udon in Kagawa Prefecture. He studied for about half year and then returned to Tokyo to open up his own shop. In fact, Kagawa Prefecture is known as the Udon prefecture in Japan as it ranks first nationwide for udon noodle production and consumption, with over 600 udon noodle shops which easily outnumbers their total number of convenience stores. And Iwai san, crafts their famous style Sanuki Udon Noodle at his local Tokyo shop. His shop uses a traditional Japanese method of kneading with your feet, which creates their udon’s signature elastic and chewy texture. Many Udon shops these days have moved to using machines for the kneading, but Iwai san prefers to carry on the Koshi method he learned from his master in Kagawa Japan.

► ABOUT THIS VIDEO: Today we go on a Japanese Food Tour in Seattle, specifically around the University District (it’s the area around the University of Washington which locals call “U-Dub”). For lunch we check out a udon noodle shop that includes a tempura bar.

Then we stroll down “The Ave” (University Way), which has tons of places to eat and vintage/secondhand shops. We also stop by a user bookstore open since the 1970s and go on a nature walk around the Union Bay Natural Area.

Today we check out a Japanese market in Greater Seattle! We may not be traveling abroad, but walking through these aisles is a tasty exploration of foods from all over the world. There are not only Japanese products, but also escargot (edible snails from France) and traditional style Armenian cake ????

Once we get back home, Mommy Oh cooks up udon noodles using the ingredients we got. We also try the umami Chicken & Mushroom Dumplings. For dessert, we do a flight of fresh cream-filled mochi.

Today we go on a deeper dive into the Japanese food scene of Seattle, Washington! We discover a place that sells beautifully prepared bento boxes filled with sashimi, uni, ikura (salmon caviar), yuzu tobiko, and more. The Unagi Ju-Box reminds us of the grilled eel we tried three years ago in Narita, Japan. And oh my, the Yuzu Panna Cotta is eye-poppingly delicious! A must for dessert lovers who enjoy tangy flavors.

For dinner we head northwest from Downtown Seattle for the Midnite Ramen food truck. Tonight they are collaborating with Yoroshiku. Options include various ramen, Wagyu curry donuts, and yakitori.

Over the weekend, we grab some treats from the Japanese bakery: Chicken Katsu Sandwich, Mont Blanc, Creamy Cereal Donut, Azuki Donut, and S'mores Croissant. While these are not traditionally Japanese, they have made their own versions of it in a very tasty way. These desserts become part of the modern Japanese food culture. For example, Mont Blanc is originally from Europe and is commonly seen in Tokyo (that's where I first came across it in fact!).

When visiting the Pacific Northwest, you must soak in some greenery. There is so much nature in Washington State. In this video we show you a spot called Discovery Park. The paths lead to the beach and West Point Lighthouse where you can catch the golden sunset.

Visiting the Best Ramen in Seattle - Ramen Danbo. Is it worth the Wait? Let's Find Out!

Let's get ready to explore one of The Best Ramen in Seattle. Located in the heart of Capital Hill in Seattle, Ramen Danbo is among one of the best ramen restaurants that is located in the great state Washington.

The average wait time if you plan on dining in ranges anywhere from 1 - 1.5 hours! So you KNOW IT MUST BE GOOD if the wait time is this long. Now unfortunately, they DO NOT ACCEPT RESERVATIONS BY PHONE. So you must stop by the restaurant and PUT YOUR NAME DOWN ON THE LIST.

So with all the various ramen shops in Seattle, what makes Ramen Danbo the best ramen in Seattle?
The menu is very simplistic. They only have 4 items on the menu, which consists of the staple: Classic Ramen, Shio Ramen (Salty Ramen), Miso Ramen, and their Negi-Goma Ramen (white sesame) -- Very GOOD!

They also allow you to customize everything! Customization includes:
- Thick vs thin nooodles
- Noodle firmness (ranges from very firm to very soft)
- Thickness of Broth (Light, Standard, Strong)
- Richness of Broth (Ranges from Extra rich to none)
- Karadare (Umami spicy sauce).

What makes a fantastic tasting ramen is obviously the broth they use. Ramen Danbo soup broth is boiled at an extremely high heat and uses only the highest quality pork bones and finished with specially treated water. The resulting process creates a rich, full-bodied and pure creamy Tonkotsu (pork bone) base for the Ramen broth.

Their ramen- dare soup base is imported straight from Japan and uses only NATURAL ingredients, while minimizing the amount of sodium in the process.

Their Chashu pork is slowly cooked and simmered in a specially prepared tare sauce, which creates a deep and rich flavor and has a melt in your mouth texture.

Despite the 1 - 1.5 hour wait time to be seated, I would HIGHLY recommend the wait to enjoy the best tasting Ramen in Seattle. Put your name down on the list, walk around the corner and go and grab yourself a drink at either Rachel's Ginger Bear, which serves both alcoholic and non-alcoholic beverages, or the other bars located in the surrounding vicinity. Ramen Danbo will call you 5 minutes before they seat you, so stay close by and once your seated, get ready to enjoy one of the best tasting Ramens of your life.

Today we go on a Japanese food tour and try the Mega Japanese Burger filled with three types of katsu: grass-fed beef katsu, chicken katsu, and pork katsu! It’s so tall that your mouth can’t take a bite haha. The mega burger also contains bacon, egg, cheddar cheese, American cheese, pepper jack cheese, wasabi mayo, spicy mayo, and tonkatsu sauce. Wowee, it’s a tower of ingredients!

For dessert, we head on over to Downtown Seattle for Matcha Ice Cream with Mochi and Red Bean Paste. Dinner includes handmade buckwheat noodles and fried shishito peppers with yuzu.

In between meals we take a digestive walk at Volunteer Park, home to the Conservatory and Asian Art Museum. Although it is currently closed due to Covid-19, you can take a peep inside the Conservatory’s glass walls and admire the plants inside :) Or perhaps sit by Isamu Noguchi’s sculpture that frames a view of the Space Needle.

Our food is still prepared the same way as it is in Japan; utilizing a unique method of roasting bones before boiling, which is similar to the French style of making consommé. We were the first in the Japanese ramen industry to employ this method, which results in a rich, flavorful broth that is fragrant, and full of depth. We are devoted to replicating the incredible flavor of traditional Japanese ramen, and if equal substitutes for ingredients are not found within the US, we import the ingredients directly from Japan.

To provide a full Japanese experience, we fly our designer in from Japan to create every one of our American outlets. We pay attention to every detail of the customer experience– from an open kitchen concept that evokes the atmosphere of a time-honored Japanese ramen shop, caring service reminiscent of Japanese hospitality, to even small details like mouthwash in the restrooms, we go the extra mile to ensure our customers are well taken care of in their dining experience from start to finish.

Expanding rapidly in the United States, Taiwan, and Australia, our goal is to spread the appreciation of Japanese ramen throughout the world. Join us in our mission and come slurp a bowl of our painstakingly made ramen.
