How 70,000 Bowls Of Haleem Are Made Daily During Ramadan In India | Big Batches

During the month of Ramadan, the most popular restaurant in Hyderabad, India, is Pista House, which builds a massive makeshift kitchen that can cook 200,000 bowls of haleem every day.

In Hyderabad, haleem is the go-to meal for Suhoor, the morning meal before the day's fast, and Iftar, the evening meal that breaks the fast.

This thick and creamy stew arrived in Hyderabad from Arabia in the 17th century. In Arabic, it's referred to as harees, which means to squash and accurately describes this hearty dish that is pounded by wooden mallets until it achieves its rich and gooey consistency.

Since its introduction to Hyderabad in the 17th century, the dish has steadily evolved into something distinctly Hyderabadi. While it is still made with traditional ingredients like goat and wheat, and pounded with traditional wooden paddles, Hyderabadi haleem has a distinct flavor that combines ample amounts of ginger, garlic, masala, and ghee.

In 2010, Hyderabad haleem was added to India’s geographical indication status list, a list that both acknowledges and protects the provenance of haleem and prohibits the sale of products labeled Hyderabad haleem if they're not made in Hyderabad.

To find out how Pista House makes enough haleem to feed 70,000 people, we visited its central kitchen in Hyderabad, India.

WORLD FAMOUS Hyderabadi Haleem !! HALEEM Making & Tasting in Hyderabad

Hyderabad is a beautiful old city that's known for its rich cultural heritage, delicious local food and lively and friendly populace. We were lucky to have the opportunity to explore the culinary scene of this vibrant city during Ramzan when surprisingly the city’s signature dish Biryani makes way for Haleem, a delectable wheat, lentils, and meat dish that the Hyderabadis look forward to in this holy month of fasting. This high calorie dish is usually had during Iftar because it provides instant energy and nourishment. So in this episode of our gastronomic tour we have set on to celebrate this labour of love along with our graceful host Sankalp Vishnu, a renowned food critic and also with the enthusiastic locals.

We tried the dish at two popular outlets in the city-the Lucky Restaurant and Pista House. The fact that each place serving this meaty wonder has its own distinct approach towards its preparation was evident from the noticeable variation in the taste and texture that we registered while trying it at these two places. Primarily its the difference in the ratio of ingredients that results in such delicious variations. We must agree that both the options were distinctively tasty.

At Lucky restaurant, Sankalp informed us about the background and characteristics of a traditional haleem, over a warm plate of this gooey wonder. He also illustrated how the whole magic revolves around three basic thing; the meat is to wheat ratio, the spice mix and the pounding process.

The next day we went to the makeshift kitchen of Pista House, the stalwart in Haleem business, to discover how this majestic dish is made. Its a labour and time intensive process where a huge quantity of meat, soaked broken wheat, dals (urad, chana and toor), spices and plenty of ghee are cooked together for 12 hours in a huge cauldrons over firewood. The cooking process happens in three stages that includes boiling, steaming(Dum) and pounding. The last stage is both crucial and awe inspiring. Crucial because it’s this continuous long hours of pounding that results in the desired velvety and sticky texture of the Haleem. And awe inspiring because it involves an enormous amount of human strength and patience to handle those insanely large and heavy wooden mallets for pounding.

After overseeing the process of its making we also tried this celebrated dish which was the reason behind so many happy faces around us. No doubt the taste was superlative. Watching the whole dynamics of haleem’s journey from the kitchen to the counters was truly gratifying. We thank all our amazing host for their cooperation and hospitality.

SHAH GHOUSE HALEEM MAKING | Haleem Making Complete Process | Best Ramzan Food in Hyderabad

Video Powered by BAJAJ ELECTRONICS

A special Thanks to Shah Ghouse

WHAT’S THE DIFFERENCE BETWEEN HAREES & HALEEM?
|||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||
During Ramadan there are a lot of places that have started serving Haleem and few outlets that serve Harees as well
Confused as to the difference between them? Read on….
Harees or Harissa: A meat and wheat porridge which is a popular Arab dish traditionally served during Ramadan season and during special occasions like weddings, birthday’s,anniversaries etc.
Process: The meat to wheat ratio is 1:1 and the wheat is boiled before adding, soaked over night or sometimes the wheat is beaten to a paste/pulp form during the making process. Spices used are Cinnamon, Cumin, Cardamom and few others
History of Harees coming to Hyderabad: The Arab soldiers (Mostly from Yemen) who migrated to India to serve in the Nizam’s Army stayed in the barracks area, the name got twisted into what we now know as Barkas. The warrior community called Chaush who were known for their fighting prowess and serving the Nizam as their personal bodyguards were instrumental in bringing this dish to Hyderabad. It used to be served as breakfast & lunch for the people who used to go to battle so that they have strength throughout the day, gradually it found its way to being served at Iftar’s and feasts
Variants: Hyderabad has two versions of Harees, the Khari and the Meethi available. Khari true to its name is bland by Hyderabadi standards and available at majority of the outlets and Meethi actually has sugar mixed with it which is available only in the barkas area. Kashmir and few other places also have rice used instead of wheat in making it.
How Harees became Haleem: The bland version of Harees had few additions made to it, Garam masala, Onions, Garlic, Ginger, Red chilli, Coriander, turmeric etc in the spices section , Gram lentils along with 1:3 ratio of wheat to meat i.e 1Kg wheat to 3Kg meat which gives the Haleem its thickness and uniqueness, hence the G.I status
Difference between Harees and Haleem in layman’s terms :
1) Ratio of wheat to meat : 1:1 vs 1:3
2) Taste : Bland vs Spicy
3) Consistency : Semi liquid vs Thick porridge
Common misconception is that if chicken is used for preparation of the dish then it is called Harees. Chicken was actually used in Harees because it was cheaper in price hence affordable by all & lamb became the rich man’s option. All three i.e Chicken, Mutton & Beef can be used in preparation of both Harees and Haleem.
You would find the spicier version of Harees in the market as well i.e all ingredients of Haleem are used in its preparation but with the meat to wheat ratio of Harees.
The word Haleem means Patient and Merciful and the process of making Haleem is lengthy and tiresome so you definitely need to have patience. Few articles online and in the print media state that the name should be Daleem derived from the word Daliya/Daalcha which means porridge instead of Haleem which is one of the names of Allah. Authenticity of such claims are yet to be proven hence individual discretion advised

||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||||
There’s been an explosion of haleem in the city this Ramzan. With an increasing demand for the succulent meat stew, more restaurants are beginning to serve it and stalls are coming up across the city, catering to long lines of haleem enthusiasts.

The demand is evident: for the first time, Pista House, the Hyderabad restaurant famous for its haleem, has set up a kitchen and delivery points in the city to serve the dish. Until last year, Pista House’s haleem would be delivered to the city and then served by restaurants here.

We got invited into the kitchen to see how the chefs prepare the haleem using their Pakistani recipes, it was absolutely amazing to watch it being prepared! There was so much chicken, masala, and pulses all being ground up to make the haleem! But this was just the beginning, after this we found the most INSANE Street Food in Pakistan!

After tasting the haleem at Karachi Haleem, it was evening time and needed some street food to try before going to our Pakistani seafood feast. We found ourselves in a local alley in Karachi and found the CRAZIEST BRAIN FRY (bheja fry) with tomato! It was full of masala, brain, and also tons of oil! To be honest, it was quite heavy for me, but maybe once in a whilie it's OK to eat!

After this, we're meeting with our buddy Ali and he is taking us to his friends Shehroze and Alizeh's seaside home for a HUGE Pakistani SEAFOOD feast right on the ARABIAN SEA! To me, this was some of the most unique food in Pakistan, especially being able to watch the cooking process of all the different seafoods! We had red snapper with a tamarind sauce, HUGE lobsters cooked in masala and ghee, crab claw LOLLIPOPS, calamari, shrimp curry, and more! It was SO TASTY!

After this, the next day, we made our way back into Karachi to visit the super famous Fish TAKATAK (katakat) at Mashalla Takatak! It uses sole fish and tons of masala, onions (piyaz), and coriander! It was amazing to watch the chopping and grilling of the fish in oil! Another famous seafood dish to try in Karachi! It was so UNIQUE!

And for our final meal, we went to taste a WHOLE LAMB leg roast over the fire!!! It was amazing to taste, and the cooking process took over 2 hours! As it was being prepared, we watched the master chefs sprinkle local masala over it and also sprinkle it with lime after it was done!

I hope you're enjoying this big Pakistani street food video series! Thanks so much for watching, I would love to hear from you down below!

There is much more street food in our Pakistani food videos series, get ready for the playlist of a lifetime!!

Today, I’m (Trevor James, The Food Ranger) bringing you with us as we venture into the DEEP street foods of Old Dhaka to taste some of the best restaurants in Dhaka. Bangladeshi Street Food HEAVEN!!! Make sure to watch all the way until the end of this street food video because there is a lot of delicious cuisine you are going to love!! I’m a food lover and food vlogger who has been traveling full time around the world to bring you the best street food around the world! In today’s food and travel video, we’re in Old Dhaka trying some AMAZING Bangladeshi street food that is MIND BLOWING and tasty!!!

When we first flew in to Dhaka, Bangladesh, we had no idea how AMAZING Bengali cuisine is. After trying the street food in Old Dhaka, I’m convinced that it’s some of the best street food around the world, and that Street food in Bangladesh is worth spending a lifetime exploring!

First up, we’re going to the Dhaka University area to try a famous street food in Dhaka, the Kola Bhorta, an ULTRA complex and delicious street food made in a mortar and pestle. It had hog plum, mustard, olive, tamarind, sugar, chili, coriander, and chili, and was made by the most friendly vendor! It was spicy, sour, bitter, sweet, pungent, and very intense!

Next, we’re bringing you to the New Market area of Dhaka, right outside Old Dhaka, an area bustling with food stalls and super fast paced bustle. The street food vendors here work with ULTRA FAST speed and you can tell that everyone is in a hurry because there is so much food and street stalls packed in here. I ordered a Bhel Puri, a kind of crispy puff filled with chickpea and lentil mash and chili with tamarind chutney and topped with a cold cucumber, tomato, and onion salad. It was an amazing street food to try!

Next up, we’re bringing you to a FAMOUS Restaurant in Dhaka, the MAMA Haleem! Here, an ULTRA THICK beef stew is prepared with lentils, wheat, mustard, and Bengali spices in a HUGE POT! It tastes so delicious and spicy and is one of the most filling street foods you’ll ever eat in the whole world!

After that amazing street food in Bangladesh, we’re bringing you to eat a famous breakfast in Bangladesh at star hotel. Here, one of the most delicious mutton food stews AKA pays is served bright an early every day at 6am. We got up early and were surprised to see the place was PACKED with locals slurping away at this delicious Bengali food! We also ordered a beef heart curry, dal, local tea, and naan. It was an incredibly filling and flavour packed breakfast!

And before visiting the BRAIN FRY KING of Bangladesh, we’re going for a FAMOUS biryani dish in Old Dhaka, the Kachi biryani. It was prepared in these huge pots with big goat leg pieces and was one of the most aromatic biryani’s I’ve ever tried! It had a caraway flavour and was a little mustardy as well! Mustard is such an important part of Bengali cuisine, and we fell in love with the food during our trip mainly because of this mustard flavour in everything, it’s so delicious and fluffy!!

After the AMAZING Biryani, we’re bringing you to our final stop, the BRAIN FRY KING of Bangladesh! Here, you can taste amazing Brain fry and beef chap marinated in a ton of spices and put into a deep and dark oil that is intensely flavourful. When it comes out, you grab a luchi and wrap it up and pop it in your mouth, and it’s quite delicious! Watching the BRAIN FRY KING of Bangladesh work with superhuman speed as he fries up the brain and the beef chap was very fun!

We started our Indian street food tour in Kolkata by warming up with a nice Indian breakfast, right on the street corner. You can order samosas, potato curry chickpea sabzi, jalebi, and hot tea as well. All of these go so well in the morning and wake you up and get you ready to start your day.

After that amazing Indian street breakfast, we went to try perhaps the most beautiful and photogenic Indian street food lunch stall I've ever seen. It really was like walking up to CURRY HEAVEN! There were so many delicious curries to choose from, and there was a huge pot of CHICKEN biryani right on the street. The Chicken looked so tender and you could see the steam and all the juices were infused into the basmati rice. You could also smell the cardamom in the biryani!

After that life changing Indian curry meal, we made our way to try a bunch more delicious street foods. There were so many to choose from!
