This recent entrant to Bengaluru’s vegetarian dining landscape located in the suburb of Basaveshwaranagar serves up Iyengar homestyle fare. Food Lovers’ Editor, Kripal Amanna visits this eatery for a late breakfast where he tastes an array of dishes, some hitherto unseen in restaurants, such as the Nuchinna Unde, Halubai, Hayagreeva (originally prepared as a temple offering), Ottu Shavige and more. He also meets the three generations of the TKS Iyengar family that is seeking to share its interesting culinary traditions with the people of Bengaluru though this endearing enterprise. Enjoy!

Bale Elle Idli
The Bale Elle Idli carries with it the subtle aroma of the banana leaf in which it is steamed. The leaf also imbues the idli with a light colouring. TKS Iyengar’s, a passion enterprise spanning three generations of a family came as a breath of fresh air to Bengaluru's tiffin culture with time honoured recipes that were hitherto confined to homes. Not surprisingly, this charming refreshment house became an instant hit when they opened doors a year ago. However, the current covid situation has brought all that to nought, and left the family with no staff and barely any business to make ends meet. However, rather than buckle down, the ladies of the house aided by their menfolk are doing all that it takes to keep their traditions alive, from manning the stoves to serving customers to keeping house. I savour a delicious homestyle Iyengar meal on a recent visit, and while doing so said a silent prayer, hoping that eateries like TKS Iyengar’s survive these turbulent times. For if not, we would be much poorer in losing the rich, ancient culinary traditions of our land. Take care and stay safe.

Delicious in its flavour and rich in lentil protein, the Nucchina Unde or Nuchinunde makes for a nourishing light meal if you are craving something steamed and delicious. In this recipe episode, Sreedevi makes light work of this traditional Karnataka dish and serves it alongside a comforting majjige huli, a simple yet punchy asofeotida oil, and a snacky upma version as well. These are perfect to rustle up in your kitchen, either for a satisfying lunch or an evening bite. Stay safe and happy cooking.

Ingredients to make Nucchina Unde
Makes 20 to 25 dumplings

1 cup toor dal
1 cup Bengal gram
1 cup split green gram
1 tsp cumin seeds
1 tsp peppercorns
1 tsp turmeric powder
½ tsp asafoetida
1 cup grated fresh coconut
7 to 8 green chillies
25 to 30 curry leaves
A bunch of coriander leaves
Water, as required
Salt, to taste

A café set in a home, Eat Repeat is IT professionals turned entrepreneurs, Kannan and Sangeetha’s ode to their Iyengar heritage. Made to authentic traditions, the vegetarian dishes here are devoid of onion and garlic, but pack loads of flavour, as I discovered in the Puliyogare, Chakkara Pongal and some of the other tiffin items that I tasted. The fare is simple yet wholesome, made and served with the sort of love, conversation and attention that one would expect as a guest in someone’s home. The Hayagreeva Maddi is said to have been first made in the temple town of Udupi in South Canara as an offering to Lord Hayagreeva, the horse-faced avatar of Lord Vishnu. Since then, this wholesome Madhwa Brahmin dessert, made of Bengal Gram, jaggery and nuts mostly, continues to be offered as prasadam and is relished especially during festivals. Hope you enjoy my recipe adaptation of the Udupi Hayagreeva; I find in this a divinely delicious, nutritious and guilt-free fix to a sudden dessert craving, given that it can be whipped up quite easily at very short notice. Enjoy!

Ingredients to make Hayagreeva Maddi
Serves 4 to 6

1 cup chana dal (split Bengal gram)
2 cups water
1 cup + 1 tbsp grated jaggery.
½ cup grated dried coconut
1 tsp green cardamom powder (about 4 to 5 cardamoms seeds)
3 to 4 cloves
11 halved cashew nuts + 4 for garnish
12 broken almonds + 4 for garnish
2 tbsp raisins + ½ tbsp for garnish
1 tbsp poppy seeds
4 tbsp ghee ghee
Pinch of salt

Iyer Idly, a tiny shop opened 19 years ago, selling idli batter to a community of busy scientists and engineers in the East Bengaluru neighbourhood of Vignan Nagar. In time, the shop added hot idlis in response to customer requests, and has since served only the idli and nothing else! The founder, Mr. M K Mahadevan passed on a few years ago, but his legacy continues with his wife, Mrs. Uma Devan and son, Krishnan Mahadevan, who till date make idlis the old-fashioned way, each batch of rice and urad dal batter fermented overnight, before being steamed and served with a spicy chutney that has won numerous fans for Iyer Idly not just in its neighbourhood but across the city. Idli Chutney
The idlis are made the traditional way from idli rice and urad dal that is ground to a batter and fermented overnight. The result is an idli that is soft and grainy, slightly pasty and aromatic, with a touch of tartness. It is served with a spicy chutney that some say is more popular than the idli here. This combination though is definitely the sort that makes Iyer Idly a sought after destination for what is perhaps one of Bengaluru’s favourite breakfast dishes.

The Iyengar Bakery is an integral part of Bengaluru’s culinary landscape. Located in almost every neighbourhood of the city, these traditional bakeries date back to the turn of the last century when two Iyengar brothers from the Ashtagrama (a cluster of eight villages) area in Hassan made their way to Bengaluru in search of livelihoods, and built on the legacy of British bakeries with their own customs and flavours. Over the years, more from the community followed in their footsteps, a trend exacerbated by the famine of the 50s which rendered agriculture in the villages unviable, leading to the rapid growth of Iyengar bakeries in Bengaluru, Mysuru and elsewhere in the South. In this episode, I visit Sri Jayalakshmi Bakery, a 60-year old bakery that though rooted in its traditions has made space to evolve with the times. Needless to say, I also taste many of the calorie-laden but deliciously addictive goodies that have built for these time-honoured establishments a loyal fan following over the years. Gayathri Tiffin Room, widely known as GTR in the city of Mysuru, is a destination loved for its tiffin items, especially a variety of dosas! This over half a century old establishment serves up tongue-tickling dosa, the favourite being the Gayatri Masala Dosa here, not the typical Mysore Masala with red chutney, but a thick roast with a soft underbelly.

Customers who patronise this restaurant have grown in number over the years and often frequent the place for breakfast or tea-time tiffin.

In this episode of Gourmet On The Road, Food Lovers’ Editor, Kripal Amanna visits the eatery for tiffin in the evening and savours three dosas, the GTR Masala Dose of course, along with an unusual Green Dosa and an Open Butter Masala Dose. a delightful crunchy dosa with a soft interior. has a nice buttery flavour. the potatoes are soft, creamy and have a generous amount of onion and fresh coriander for that sprightly freshness. the dosa itself is quite thick. served with a fresh spicy chutney.

the idli has a grainy texture and a mildly vegetal flavour that suggests it may have been steamed in a leaf. the spicy chutney has the fresh flavour of coconut and body from the ground lentils. the sambar has a gentle sweetness typical of a south canara sambar.
