FAMILY MEAL IN IRAN

1. DARVAZEH TEHROON: GEH MEH

????????DOLME: Mix rice, fried onions, beans, herbs, turmeric, garlic, yogurt. Stuff mixture inside a grape leaf and fill pot. Add butter and water. Cook on the stove on low heat for one hour.

????????SABZI: Start by sauteing onions. Add turmeric and chili powder. Add mutton and fry it up. Add Fried barbs, Beans, Dried lemon, Salt and Water. Boil 2 hours.

????????MIRZA QASEMI: Start with hot skillet and add oil. Add roasted Eggplant, tomato, garlic, turmeric. Add salt and crack in 3-4 eggs. Cook until eggs cook through.

Hello, my dear friends, today we came to food street in Tehran, Iran, on 30 Tir Street in Tehran, iran all kinds of delicious food is prepared.All kinds of fast food and pizza, homemade and local food such as pan grill, bite grill, samosa, falafel and homemade sandwiches are among the foods of this street.
Of course, apart from the delicious street food, there are about 15 museums around it. The National Museum of Iran, Qawam Al-Sultaneh House, Firoz Bahram Zoroastrian Fire Temple, Firoz Bahram School, Adrian Fire Temple, Church of Saint Peter and Saint Mary, Hayim Jewish Synagogue and Evangelical Church, Park . The city, Ebrat Museum, Communication Museum and the entrance to the National Garden are among the sights of Si Tir Street

Gheymeh Yazdi

One of the most home cooked dishes in Iran is this delightful stew with tomatoes, split peas, potatoes, meat, onion and dried lime


Ghormeh Sabzi

One of the most traditional Iranian dishes which is found in every Iranian household.It contains mostly green vegetables and some meat ????



Fesenjan

This walnut and pomegranate molasses stew with meat balls (chicken) is another stew made for special guests and occasions.



Shirin Polo (Sweet rice)

This glorious Persian sweet rice with candied citrus zest, sweet carrots, almonds, pistachios, and raisins. It’s mild sweetness and colourful looks makes it the perfect dish for special occasions.

Dizi

Last but not least is Dizi – one of the oldest Persian recipes to date. It’s available in most cities in central Iran and it definitely makes it to my top 5 Persian food recommendations when travelling in Iran.

With my amazing trip through Iran continuing, this time in the city of Yazd, I decided to take you with me to the biggest restaurant in the city! Come with me and let’s have some Iranian food in the biggest city in Yazd, Iran!

My friend Mr. Taster and I started at Talar Yazd Restaurant, which is also the best restaurant in town. It’s famous for its Gheymeh Yazdi, which is a stew that contains split chickpeas and lamb. I couldn’t wait to try it!

Inside, the restaurant is massive! There’s a huge dining hall and another huge banquet hall for weddings next to it. They also have a VIP area!

We started with some ash-e-jow, which is an Iranian barley soup with chicken, carrots, and onions. It’s very rich! It was the ultimate chicken soup and tasted really good with a squeeze of lemon! Eating it with bread was even better!

They also bring fresh orange juice and other items around on a cart. Then, we headed into the kitchen to watch them make chicken kebabs, kubideh, vegetables, and more. The men making the kubideh were just grinding lamb nonstop!

The hitchen was huge! Elsewhere, they were frying potato chips. We got to see the entire frying process. They were so fresh and homemade, and super crispy. Then, we watched them grill the kubideh. It was the freshest kubideh I’d had in Iran so far! I loved how juicy it was!

They were also boiling oranges, which they add to their sweet pulao along with sugar and pistachios. They also make lamb shoulder!

At our table, we had several dishes to try. I hadn’t seen a table this full in a long time! We had lamb shoulder, aubergine (eggplant), gheymeh yazdi, lamb kubideh, Shirin polow, and a local favorite called fesenjoun.

We started with the fresh potato chips with ketchup. The chips were great, and then they also brought us some tahdig! You put the gheymeh yazdi on top! The lamb and the crispy rice was outstanding!

The gheymeh yazdi with rice was wonderful. I loved the tender lamb. The butter in the rice was so good! Then, I also tried the fesenjoun, which is made with pomegranates and walnuts. It’s pasty, sweet, and a little sour, and it tastes so good!

Next was the Shirin polow, which is sweet and contains sugar, oranges, and pistachios. We added the lamb shoulder and dill polow to it! I loved the sweetness and the caramelized oranges. The lamb also melted in my mouth. I couldn’t get over the fragrance of the dill polow!

Then, we went for the loghmeh with the bread and tomatoes. The doughy bread absorbed the juices from the tomato. It was so tasty! The eggplant was covered in a thick tomato paste. It was so tender, it fell apart at the slightest touch!

After eating, we headed down to the basement to see their frozen meats in the freezer. It was breezing down there! We saw their lamb shoulder, kubideh, lamb shank, and more! We also saw chicken, fish, and prawns in another freezer, as well as corn, oranges, and cherries.

We tried some cold and dense curd balls, which were pretty bitter. Then, we also saw huge jars of pomegranate paste, a huge can of pickles, and more. Then, finally, we saw their wedding hall! What an incredible experience

My road trip south through the beautiful country of Iran continued in Kashan, a city known for its rose water! Come with me as we try some incredible Iranian rose cuisine in Kashan, Iran!

My friend Mr. Taster and I started at a large mud hotel with a restaurant. The restaurant is called Mirrors Hall. It has a mirrored ceiling and holds ceremonies and special rituals. It was built in the 18th century, but the tourism organization took it over in 2000.

We started with a garlic yogurt called mast-o musir with shaved mint and shaved rose petals on top. We also had two other dishes and a salad with cucumber, tomatoes, radishes, pomegranate dressing, and croutons.

We also had three different drinks, including a cucumber water and tokhm-e sharbatie, which contains rose water and chia seeds! The cucumber water was great, and the tokhm-e sharbatie was so cool and refreshing!

Rose season is late April and early May, so I suggest coming to Kashan then so you can try lots of fresh rose dishes and drinks. We also had some crispy bread, which you dip into the mast-o musir.

Mr. Taster fed me a bit of it. It was amazing! I loved how crunchy it was. The rose and mint worked so well together! We also had a crispy rice dish called tahdig, beans with lamb, and some meatballs with sumac. He poured the beans with lamb over the tahdig.

It looked unbelievable, and it was an incredible flavor sensation. The combination of lamb, beans, rice, and dill blew me away! The lamb was so tender, it melted in my mouth. I also loved the crispy layer of rice on the bottom of the tahdig. It was crispy on the top and the bottom!

Next was a yogurt dish with cucumber, mint, raisins, and shaved rose petals. It reminded me a bit of tzatziki. Mixing a bit with the rice was excellent. Next was the lamb meatballs on the tahdig.

I’d never had meatballs like these! The gravy contained mint, but also had some sourness from the sumac. It ws unbelievable!

After we finished eating, we visited a nearby antique shop called Ganjineh selling bowls, pottery, old telephones and televisions, as well as some cute little modern mirrors. They also had some beautiful antique ceramics.

Then, we drove about 30 minutes and left the city to get to the rose water factory. On the way, we passed a few vendors selling spices and dried lemons. Then, we reached the spot and found a spot covered in tons of rose petals! My friends even buried me in rose petals!

I even put on a crown of rose petals and tried a glass of fresh rose water. It was so refreshing. It really is the best water on Earth!

Next, we saw where they distill the rose water, and where the vapor goes through to create rose water. In the back of the village, we headed into a house that smelled like roses. Back there, they’d shaped rose petals in the shape of a heart!

Back outside, I tried a nutty, crumbly cake. Then, they showed me another cake called the 4 nut concoction that contains saffron, sesame, coconut, pistachios, almonds, rose, and more. It also has four layers and has all the nuts and rose petals arranged in concentric circles.

They had several different cakes. They were so dense and sweet. I loved the almonds, walnuts, sesame, dates, and pistachios on it. It was so decadent!

Next, we headed to a nearby waterfall. It was really beautiful and a breezy evening. But now it was time to get back to the factory to see them finish up the latest batch of rose water.

In this video, we will visit the cultural capital of Iran that is Isfahan is one of the most historical places of Iran. With history it is known for its historically developed cuisine .We will try iconic dish of Isfahan that is beryan which is completely different from Indian dish beryani. Its is made up of a lamb meat, fat and liver. Saffron is key to make delicious beryan. Then we will try abgoosht, which is made up of a lamb meat soup which usually served with Iranian bread Sangak. Tehn we will try Khoresht mast which is sweet dessert made up of a lamb meat and yoghurt. Must try.

We will also try fast food of Isfahan. You will be amazed to see tat all fast food chains like KFC ,MacDonalds, Burger king, Dominos are not present in Iran and all the fast food is made up in local Irani restaurant.
