Viennese goulash recipe - Vienna Foodtrip

Originally, goulash was the dish of Hungarian sheperds. At the beginning of the 19th century, however, the peppery meat dish found its way into the Viennese cuisine and developed many variations like the Esterházy goulash or the Fiaker goulash. The numerous varieties illustrate its popularity. In Vienna, the “Saftgulasch” (literally “stock goulash”) is especially favored. Its main ingredients are fatless meat and onions which are the secret of every good goulash. Rough rule of thumb: The amount of onions should be at least three quarters of the amount of meat!

Serves: 6-8
Ingredients:

1,5 kg (3 lb) beef shank
1,25 kg (2 st) onions
150 g (2/3 cup) dripping (or oil)
2 tbsps tomato paste
4 tbsps paprika powder (sweet)
2 cloves of garlic
a little lemon rind, grated
apple vinegar
2 juniper berries, pressed
pinch of marjoram
pinch of ground caraway seeds
pinch of sugar
ground pepper
salt
2 tbsps flour
approx. 2 l (2 qt) water

Preparation:

Slice onions. Cut the meat into cubes, approx. 50 g each. Heat the dripping in a large pot and fry the onions until golden brown. Add juniper berries, marjoram, caraway seeds, sugar, pepper and salt and briefly sauté. Stir in paprika powder, tomato paste, garlic and lemon rind and quickly add vinegar and 1 liter of water. Bring to boil then add the cubed meat and let stew for about 2 1/2 hours. Stir repeatedly and add water if necessary.

When the meat is almost done, stir well and add the rest of the water. Let cook for a while longer then add salt to taste. Mix the flour with a bit of water, stir and add to the goulash to bind.

Suggested side dishes: Fresh bread rolls or alt potatoes

Table - A spoonful of Hungary - Goulash with noodles

We continue our road trip cooking show around Hungary. This time we visited Visegrád and cooked a lovely venison goulash soup. ????????????

Ingredients:
• venison
• carrots
• potato
• onion
• goose fat
• cumin seeds
• sweet paprika powder
• water
• salt

For the noodles:
• flour
• egg
• water
• salt

First, we prepare the base of the goulash. Peel the onions and chop them up. Add some goose fat to the pot, and when it is hot enough, we add the nicely chopped onions. Season it with salt, paprika powder, and add a little water as well.

Peel the carrots and the potatoes, then cut them to the same size. Dice the meat up, and put it into the pot until it turns white. We season it with cumin seeds and add some salt to taste.

Now you can add the carrots and fill the pot up with water. Let it boil for at least an hour.

After 30 minutes, please give it a try. If it is salty enough, add the potatoes as well. It takes 15 minutes to cook them.

While it is simmering, we make the noodles.

Put the flour into a bowl, add an egg and some water and a pinch of salt. Mix it well until it gets sticky. Let it rest for 10 minutes.

It’s time to add the noodles to the soup in a traditional way. Use a chopping board and a knife to tear the dough into equal pieces and put them in the simmering soup.

When done with the noodles, stir the soup and cook for 2-3 minutes. We serve the goulash with spicy green pepper, sourdough bread and some parsley.

If you are looking for the best Hungarian food and quality service along with spectacular atmosphere, with traditional folk music playing in the background while you enjoy your food.. This is the place to be.. Sári Csárda! Satisfaction at its fullest. In this video I had arrived in a village at a beautiful wooden Hungarian restaurant with horses on the fields and so much open space and greenery. I wasin search for a traditional Hungarian experience and I believe I sure did find the right place. The exterior and interior was absolutely eye catching. I realised inside the restaurant had some Hungarian decorations. For starters I ordered a traditional Hungarian Goulash beef soup which was really creamy and rich, the beef was absolutely delicious. For my main course I had ordered duck which was actually the best duck I ever tried. The meat was so soft, juicy and tender served with kapusta (red cabbage) with mashed potatoes and creamy sauce, the presentation of the food was outstanding. I had a Hungarian beer called Dreher and shot of their traditional peach palinka (brandy). While I was enjoying my meal I was listening to traditional Hungarian music which they were playing on background and that also gave it a traditional Hungarian feeling.

Herdsmen are cooking gulyás soup at a name day celebration held at a Hortobágy farmstead.
Bread, sausage and unrendered lard are eaten, then the gulyás is cooked in a large cauldron, and finally ground paprika is sprinkled into the soup.
