Originally from Nashville, Tennessee, we got married June 2013 and quickly caught the #travel bug! We started “travel hacking” & finally decided we wanted to go travel for one year. After 2 years of saving $ and over 2 million miles and points, we sold our cars and apartment and left home January 10, 2016. We started this #travelvlog to share our experiences with friends and family, then decided we really liked vlogging and traveling, and we didn’t want to stop after just one year! After achieving our new goal of 100 countries and then all 7 continents (check out our documentary here: we had no plans to slow down, until 2020 decided to force us to ;) which is when we bought a converted Sprinter van to start exploring our own country for the first time. #Vanlife was a major adjustment and so different than flying every week like we were used to, but we are incredibly thankful to be able to continue doing something we love every day. ????????????

Crawfish Farming in Louisiana: The Complete Process from Farm to Table
And now for something completely different! This week we take you along on a visit to a South Louisiana crawfish farm to see, first-hand, how crawfish are caught, sorted and prepared for a Cajun crawfish boil.
In this behind the scenes tour, we'll take you to places most people will never see... we'll go out on the boat with the crawfish fisherman as he catches the crawfish, in to the warehouse where the crawfish are sorted by size, and then to the crawfish boil.
Thanks for joining us for this insider look at how crawfish make it from the farm to the table in Louisiana. This type of agribusiness is big business in this region of the USA.
An interesting fun fact that we didn't mention in the video: rice farming and crawfish farming work together. The fields are alternated between rice and crawfish, with the remainders of the harvested rice crops acting as food for the crawfish.

???? BOILED CRAB CLAW: Break the shell out of the claw. Serve it on a plate with lemon, spicy radish and ponzu sauce (made from soybean, cooking sake and mirin).
???? CRAB MEAT SUSHI: Use the crab leg meat. Place a sheet of seaweed flat down a table. Add rice, wasabi, crab meat, salmon roe and homemade sweet soy sauce. Fold and serve.
???? GRILLED CRAB MEAT ON CHARCOAL WITH HOKKAIDO RICE: Wrap the half the body of the crab in foil and grill on charcoal. Remove the meat out of the shell and mix them with Hokkaido rice and scallion.
???? GRILLED CRAB BRAIN AND MEAT: Filter the crab brain out. Take the crab meat out of the remaining claws. Wash the shell. Put the crab meat in the shell. Add the crab brain and mix. Grill the whole thing on a charcoal stove for 6 minutes. Garnish with scallions and julienned dried red chillies.

New Orleans is my favorite city in the USA. Colorful historic homes. Live music around every corner. Friendly people who will drop everything to have a conversation with you. And of course, the food. New Orleans cuisine is like nowhere else in the country. Watch all the way to the end of the video to see what happens when local Louisiana ingredients meet European, African, Caribbean, and Native American culinary traditions.
Here's a list of where we went and what we ate:
1. Clesi's Seafood Restaurant: A seafood joint specializing in spicy crawfish boils! We try the crawfish boil, of course, and massive Gulf oysters — the biggest I've ever eaten!
2. Parkway Bakery & Tavern: A neighborhood favorite for po'boys that has been around since 1911! We try the classic fried shrimp po'boy and the surf & turf po'boy with fried shrimp and gravy-smothered roast beef.
3. Mandina's Restaurant: An old-school New Orleans that is the go-to for generations of locals. On the menu: New Orleans classics like fried seafood and gumbo and Southern-Italian fusion. We try the catfish almandine with fries and grilled shrimp over pasta bordelaise.

I returned to a slice of cajun food heaven. It's a place my sweet bride Pam and I discovered over 20 years ago when visiting friends in Monroe, Louisiana. When in Monroe you have to stop by Cromier's for fresh crawfish served out of an old gas station turned restaurant. After being in business over 30 years the place still is turning out some of the best cajun food I've had anywhere.
