In today’s episode, we went to Gaurav’s family home in Delhi to experience a true Indian family meal. We were greeted by Gaurav’s mother and wife who are the head chefs of the home. Before preparing the dinner, we sat down to enjoy homemade chai and gobi parathas (cauliflower) with pickles. We also dressed in traditional Indian clothing (Indian tunic and shawl for Sabrina, and a kurta for Luke) with a flower garland for the special occasion. After our snack, it was time to start cooking in the kitchen. With fresh ingredients from the local market, they made: rajma (red kidney beans with rice), dhal (made from lentils), bean sprout salad, chicken tikka (marinated chicken grilled on skewers), lump cabbage salad, chicken curry, green chutney, chapati (Indian flatbread), carrot halwa (sweet dessert) and they even hand painted this claypot for our visit! It was incredible to watch these women cook these Indian dishes and they even explained how every ingredient was used!

With all of Gaurav’s family, we sat down to eat. All of the food was cooked authentically and was incredibly DELICIOUS! We would like to give a big thank you to Gaurav and Gaurav’s family, for cooking these Indian specialties, welcoming us into their home and sharing a meal with us. Welcome back to our INDIA FOOD series! This time we are taking you to RURAL India, on a delicious food adventure. We start the day in Amritsar (Punjab), and on our way to Delhi, we stopped at 2 villages to experience how locals live in Indian villages and village cooking. The first village we visited (belonging to Gaurav’s family) was located approximately 40km outside of Ludhiana. The locals welcomed us into their home and began cooking us breakfast, radish paratha with chilli. Such a simple recipe made from scratch, yet so tasty. The locals showed us their community vegetable farm, where we picked fresh cauliflower, radish and more. Before leaving, we were given a homemade cup of chai! We were so grateful for the warm welcome by this family.

Not too far away from the village was a rural jaggery factory that used traditional methods and was completely outdoors. Sugarcane stalks were fed into the mechanical press and the sugar juice was boiled down several times until it became a concentrated liquid, which was then cooled and formed into massive chunks of fresh jaggery. It was extremely interesting to watch the entire process (however we cannot guarantee the hygiene of this factory). Even the honey bees were loving all of that sugar!

We continued toward Delhi, and visited another village for a full Indian village feast. The village was located approx. 90km from Ludhiana and 240 km from Delhi. We met with the kind ladies of North-Indian Cooking (go check them out: ) who helped arrange our visit and meal. The village ladies cooked chicken curry, saag (cooked spinach), roti, brinjal curry (eggplant), kadhi and it was all so SPICY! One of the SPICIEST meals we’ve ever had! We spent the afternoon exploring the village, speaking with locals and hanging out with the kids of the village. It was such a wonderful experience, filled with kindness and amazing Indian food. The street food culture in India is one of the most vibrant and unique scenes you can find in the world. But beyond street food, you can learn about the people and culture through other means, like we did in this video. Join us for a special episode where we introduce one of the most prominent Gurudwara’s in India, and learn about Sikhism and the importance of langar in Indian communities.

Gurudwara’s are places of worship for Sikhs, however anyone is welcome to the Gurudwara regardless of their religion, ethnicity, gender, etc… The Darbar Sahib (scriptures) is the centrepiece in every Gurudwara, and the scriptures are sung and explained inside the Gurudwara, so that everyone can learn. At Gurudwara Bangla Sahib, the main hall is beautifully decorated and the music is fantastic.

Another essential component of Gurudwaras, is the langar. Langar is a community kitchen and meal. The meal is always vegetarian and is always free. Members of the community from different backgrounds join together in the langar hall to eat the same meal together. The Gurudwara may see between 10,000 or 100,000 people in a day. In this video, we show you the hard work that is put in by the Sikh community every single day to feed those coming into the Gurudwara. This experience was humbling and wonderful, and we are so thankful for this opportunity. We would like to extend our thanks to the members of Gurudwara Bangla Sahib for welcoming us in and teaching about Sikhism, Gurudwara and langar. We would also like to give a huge thank you to Gaurav for making this happen and sharing this experience with us!

Heavenly Village Food & Nature Walk to Kanarkha, Padampuri I Ultimate Malpua + Chasiya + Mix Rajma

After an amazing day at the beautiful Jilling Estate, the following morning we left for Kanarkha village to savour a rustic meal with the Dani family. Before departing from Jilling Estate, our gracious hosts fed us some crunchy and irresistible jarga and bhangira leaves pakode with aalu gutke and a luscious bowl of chestnut kheer that was made with fruits procured from their estate.
Kanarkha is a small village approximately 3 km away from the estate and it sits at an altitude of 7000 ft. After a tiresome yet delightful trek through the woods, along with our young and nimble guide Hemu, we reached Daya Ji's home. It is a quaint homestay that sits adjacent to some lovely terrace farms. We met him and mother Deepa Ji who was about to show us the preparation of some basic traditional dishes. But first we paid a visit to their nearby farm where Daya Ji's father Durga Dutt Ji was busy overseeing the irrigation. We learnt about the produce that this farming family grows in their farms.

As the hunger pangs got intense we decided to head back to the kitchen and check out the meal preparation. With all the enthusiasm and expertise, Deepa Devi ji embarked on the cooking spree. In no time, with prompt support from her daughter in law and grandchildren, she whipped up some crunchy malpuas, chachiya and mixed rajma. The laborious woodfire cooking seemed to be an effortless affair which was interspersed with numerous anecdotes.

Finally when Durga Dutt Ji arrived home, we sat down to eat together with him and the kids. It was served in timilai leaves. Apart from the dishes mentioned above, there was kakdi and aalu ram karele ki sabzi. The use of only hand pounded masala and the fresh vegetables and legumes straight out of the farms lent a divine feel to every bite. What a lovely time we had with this gracious family high up in the mountains.

In this special episode Anubhav Sapra travels to the village of Parsauna from Muzaffarpur, along with his mother on the holy day of Vasant Panchami to explore the local flavours mostly the festive time delicacies. Since it was festive time, we are excited to try some traditional festive time delicacies. After a pleasant winter morning drive, we reached the house of our gracious host Pradeep ji at whose place all the culinary actions for the day were about to unfold. We met their family who were so welcoming and generous that the place felt like home.

Pradeep ji gave a brief tour of his home that was built with traditional architectural wisdom. We then went to the backyard of the house where a makeshift kitchen had been arranged amidst the open green setting. The ladies of the house had gathered there to start with the breakfast preparation. In villages people use cow dung cakes as a fuel for cooking and they come in different shapes and sizes. It is an inexpensive source of fuel. Moreover the food prepared on it has earthy and smoky notes. With all ingredients arranged in place, they quickly began with the process. Sarita ji, our enthusiastic hostess, started with the malpuas which were followed by the folding and frying of matar kachoris. She then wrapped up this leg of the cooking by frying the vadas for the dahi vadas and the puris.

Soon the dishes were laid on the table and without much ado we dived into then because we have been hungry since a while. The puris were accompanied by a delicious aloo matar sabzi that had been prepared earlier. Everything was simply amazing but the thin and crisp malpuas were the clear favourite.

Post breakfast as promised Pradeep ji accompanied us to show how the local palm tree wine taadi is extracted from the tall trees. He took us to Amar Ji who was a professional taadi tapper. Amar ji got his tools ready and led us to an open place full of palm trees. He climbed up on a few of those trees and collected the sap. It was a risky affair because he wasn't using any protective gears. We tried the freshly extracted sap called neera that hasn't been exposed to much sunlight. It was sweet and refreshing. On being stored or left exposed to sunlight, it transforms into taadi, the palm wine.

From there we went on to take a brief stroll down the village. Here we chatted with some of the residents about their lifestyle and so on, then witnessed the milking of a cow, interacted with curious kids there and headed back to Pradeep Ji's place to check out the elaborate lunch preparation. We were fascinated to witness Sarita ji and the team of ladies zealously whip up three dishes- dal, aloo bhujia and stuffed gatte ki sabzi- so quickly. Now it was the turn of the litti and chokha which is Bihar 's most iconic dish. We saw how it is made from scratch and realised how elaborate the process was. Both the littis and the chokha were baked on the dung fire. We also saw how they were cleaned off the ash using a simple inventive technique.

Finally we wrapped up the cooking session with the thekuas, a popular sweet snack that is usually made with atta and jaggery or sugar. The mouth watering festive time spread consisted of litti, chokha, ghugni, chutney, rice, dal, gatte ki sabzi, tilauri and dudh pua. Everything was so tasty and hearty that we had a surfeit of it. What we enjoyed the most was the conversations over the meals. They gave us a sneak peak into the culture and traditions of this place.

In the evening it was time for us to leave. We conveyed our gratitude, bid goodbye to our brilliant hosts and departed with the promise to be back soon.

My Sister's First Day in India ???????? #RockFamily

My New Zealand family's trip to India started when Manisha and I took my sister and her partner, Tom, around Delhi! We took them for a drive through Delhi to go shopping at the best market for foreigners in India - Dilli Haat near INA Metro Station. We introduced them to Momos and Chilli Chicken at the food court. Then we headed to Shahpur Jat Village so my sister could explore high-fashion while Tom and I enjoyed a Masala Chai and the girls shopped.

We’re back with another episode from our INDIA FOOD series. In this episode, we are taking you to do something you’ve never seen before. A late night food tour of India’s famous DHABA’s, which are roadside restaurants that serve delicious Indian cuisine (Punjabi and/or vegetarian), and are open 24HR!!! We were driving from Amritsar to Delhi late at night and were hungry, so these Dhaba’s were perfect to satisfy our late-night munchies.

Our first stop was closest to the town of Patiala, where we found an amazing looking non-veg mutton curry (230 INR / 3.22 USD). Served with warm and buttery roti, this filled us up for the long drive ahead. We loved watching these chefs cook at these outdoor STREET FOOD stalls. Next, we stopped at a more modern Dhaba, that served veg-only food. We were kindly invited into the kitchen to watch the cooking process! WOW, these chefs work FAST! We ordered a gobi paratha (cauliflower) and an aloo paratha (potato), which were 80 INR each (USD 1.12). We washed it down with a smooth cup of chai to boost our energy for the long drive ahead. Our last stop was the busiest dhaba of all (and closest to Delhi). We arrived around 1am and could barely find a seat!!! We ordered a plate of mix pakora (various snacks fried in chickpea batter - 99 INR / 1.39 USD), jalebi (deep fried dessert covered in sugar syrup - 75 INR / 1.05 USD) and of course more chai (26 INR / 0.36 USD).

If you ever find yourself on a road trip through India, or find yourself VERY HUNGRY in the middle of the night, these Dhaba’s will serve you some DELICIOUS Indian food at any time of the day, and you can find them EVERYWHERE on India’s main highways. In today's episode we will take you to a charming and serene getaway high up in the mountains. During our Kumaon Food Tour we got to experience the warm hospitality and wholesome pahadi food at Jilling Estate situated above the Matial village.

It is a densely wooded estate owned by the Lall family. Ex-fighter pilot Steve Lall, together with his wife Parvati, daughter Nandini and some of their family members, have been zealously nurturing the bountiful flora and fauna of this huge estate full of oak, chestnut and deodar trees. Scattered over the hillside are four wood and stone cottages that are super cosy and peaceful.

To reach the place one has to undertake a 40 mins walk uphill through a set trail. We reached the family home with Ramlalji, the slender, old, inspiring and genial porter whose agility and fitness was a matter of envy for us. While walking through the woods we realised that there are numerous natural trails that call for exploration. But we were here to learn about the food that is consumed here high up in the mountains.

The heartwarming smiles and the warm and gracious gestures of Steve and his family immediately made us feel at home. Since we were all famished from the arduous trek, we straight away joined Steve for a gratifying breakfast. There was kadhi, karela, lauki, salad, pickle, roti and rice. Relishing this breakfast spread in the resplendent and jovial company of Steve was indeed a memorable experience because he had so many fascinating stories about his life and the place up his sleeves.

After a brief break Nandini led us to the backyard where her mother, maternal aunts and Ramesh Ji were gearing up for the dinner preparation. We started with the ram karele ki sabzi and moved to rajma, aalu ka thechua, bhangire ki chutney, gaddu ki sabzi, kumaoni raita and chawal ka halwa. We also got to experience a beautiful sunset in the mountains. During the meal preparation we gathered so many stories from all of them, especially Nandini, our warm, gentle and gracious hostess. She too has a very fascinating upbringing up here in the wilderness.

Finally we joined the whole family for dinner and it was such a fun experience. The meal was delicious and enjoying it with the sprinkle of laughter and stories made it so special.

Parsi food is one of the hardest to find foods these days because the Parsi people are slowly shrinking in numbers. So Manisha and I went to explore Indian-Iranian fusion food in Delhi. You haven't seen Indian food like this before! We'll show you what to order and tell you where you can find the best Parsi food in India.

We ate Patra ne Machhi, Chicken Dhansak, Sali Boti, Berry Palau, Dhansak with Kebab, Falooda, Lagan nu Custard. One other great dish I wanted to show you was Bombay Duck, but it's not available in Delhi. It's a soft fried fish which you eat along with its bones.

The best Parsi food in India is available at Britannia & Co. in Mumbai, it's well worth the trip to Colaba! In Delhi, try SodaBottleOpenerWala - I like the Gurugram branch best.

So many people just pass through Jammu on the way to Srinagar and miss all the amazing street foods and Dogra cuisine that Jammu City has to offer! But not me! I ate it all including Jammu's most famous Kalari Kulche and Kachaloo Chaat.

Learning how to Cook INDIAN FOOD with a Local | Jodhpur, India

We learned how to cook Indian food with the hotel owner’s wife, Bhawana and it was Jen’s favorite experience in India! During our 3.5 months in Jodhpur during the pandemic, we have been eating well thanks to Manu’s wife Bhawana and his mother. We had the opportunity to learn directly from Bhawana how she makes some of our favorite dishes: creamy potatoes and lady fingers (okra).

We try our best to finish the whole thing, but it is just too big!
