1. TALAD KAO MARKET: Mrs. Pan’s Bug Cart

OPEN: 2PM - 10PM

????The night before Mrs. Pan cooks the bugs she will later sell in the market, her son goes to Khlong Toei, Bangkok’s largest wet market, to purchase a variety of insects. She begins cooking each morning in order to make it to the market and set up her cart by 2pm. To cook the bugs, Mrs. Pan first adds oil and chopped pandan leaves to a frying pan. The pandan leaves add a nice fragrance to the bugs while cutting the bitter taste. She adds her first round of bugs and allows them to fry for roughly 30 minutes. She allows the crickets to cook for only 15 minutes. To enhance the flavors, she does not clean the pan between bugs. Then she’s off to the market, to fill hungry bellies with bugs!

2. TOY KUAY TEOW: Boat Noodles (Blood Noodle Soup)

????Toy Kuay Teow has been serving up boat noodles for 50 years and is on its third generation. To make one of Bangkok’s most beloved noodle soups, combine chilli dressing, pork, meatballs, vermicelli noodles, pork blood, pork soup, scallions and herbs, bok choy, fried pork skin and fried flat noodles (optional). Beef boat noodles include beef blood, rather than pork blood.

3. J'KHAI SEAFOOD: Horseshoe Crab Eggs
ADDRESS: 1300/3-4 Prachachuen Road, Bangsue Bangkok
OPEN: 3PM - 12AM

J’Khai Seafood started when the owner began selling food from a small cart 34 years ago. It is now a multi-story restaurant in Bangkok, and their signature “Thai curry steamed horseshoe crab eggs” recently won Wongnai Users’ Choice for best dish.

????To make this tasty meal, they first steam the horseshoe crab, cutting open the lower part of the crab to remove all of the eggs. Separately, create the seasoning, mixing Thai red curry paste, sugar, MSG, oyster sauce and carnation milk. Add the seasoning to an oiled, heated pan before adding chicken egg and finger root. Allow to stir-fry for a bit, then scoop everything back into the horseshoe crab shell. Take the horseshoe crab and grill it over hot charcoal until bubbling. Top it off with coconut milk, sliced lime leaves and carrots before diving in.

????????CHINESE HAIRY CRAB CURRY W/ BREAD: Clean and steam the crabs. Remove shells and cut them into halves. Coat crabs with flour and deep-fry. Make curry sauce with chilies, lemongrass, curry powder, water, condensed milk, coconut milk, seasonings and annatto oil. Place the fried crabs into the sauce and cook for 3-5 minutes.

????????CHAWANMUSHI CRAB WITH ASSORTED SEAFOOD: Remove crab meat from the bodies. Break an egg and mix it with dashi broth. Strain that mixture into a small bowl. Add shrimp, scallops, and steam for 10 minutes. Take it out and garnish it with crab soup, salmon roe, scallion, sea urchin, caviar, special oil, prepared sea tangle (shio kombu), and some flowers.

????????ROKA FELLA CRAB & WAGYU DON: Saute foie gras in teriyaki sauce. Dip wagyu beef into hot Sukiyaki sauce. Place a layer of sushi rice into a box. Sprinkle sesame and add soy sauce. Place wagyu beef, and crab meat into the box. Garnish with prepared sea tangle (shio kombu), scallion, caviar, sea urchin, foei gras, poached egg, truffle, and special oil.

Serve the People: A Stir-Fried Journey Through China | Jen Lin-Liu | Talks at Google

Jen Lin-Liu visits Google's Mountain View, CA headquarters to discuss her book Serve the People: A Stir-Fried Journey Through China. This event took place on November 5, 2008, as part of the Authors@Google series.

Lin-Liu's Serve the People records her years living and working in Shanghai and Beijing, when she attended a vocational cooking school and discovered a passion for Chinese cooking and culture. Growing up in the U.S. to Taiwan-born parents, the author admits feeling alienated from her heritage when she first moved to China in 2000. She begins her account with her frustrating yet ultimately rewarding study at the Hualian Cooking School in Beijing, where she apprenticed to one of the school's instructors, Chairman Wang, an old-style cook raised during the Cultural Revolution, who taught the author the rudiments of chopping, shopping and how to pass the cooking exam. Incorporating stories of many of the Chinese she worked alongside (and their recipes), as well as trips to the MSG factory in Henan or to the rice-growing Guangxi province, Lin-Liu offers a thoroughgoing, spirited celebration of overcoming cultural barriers.

Jen Lin-Liu is a Chinese-American writer and the founder of the cooking school Black Sesame Kitchen. A restaurant editor for Zagat Survey and the coauthor of Frommer's Beijing, she has also written for Newsweek, the New York Times, the Wall Street Journal, Saveur, Food & Wine, and Time Out Beijing.
