» THE EXOTIC FOODS

1. TALAD KAO MARKET: Mrs. Pan’s Bug Cart
ADDRESS: Soi Lat Krabang 5, Lat Krabang, Krung Thep Maha Nakhon 10520
OPEN: 2PM - 10PM

????The night before Mrs. Pan cooks the bugs she will later sell in the market, her son goes to Khlong Toei, Bangkok’s largest wet market, to purchase a variety of insects. She begins cooking each morning in order to make it to the market and set up her cart by 2pm. To cook the bugs, Mrs. Pan first adds oil and chopped pandan leaves to a frying pan. The pandan leaves add a nice fragrance to the bugs while cutting the bitter taste. She adds her first round of bugs and allows them to fry for roughly 30 minutes. She allows the crickets to cook for only 15 minutes. To enhance the flavors, she does not clean the pan between bugs. Then she’s off to the market, to fill hungry bellies with bugs!

????Toy Kuay Teow has been serving up boat noodles for 50 years and is on its third generation. To make one of Bangkok’s most beloved noodle soups, combine chilli dressing, pork, meatballs, vermicelli noodles, pork blood, pork soup, scallions and herbs, bok choy, fried pork skin and fried flat noodles (optional). Beef boat noodles include beef blood, rather than pork blood.

3. J'KHAI SEAFOOD: Horseshoe Crab Eggs
ADDRESS: 1300/3-4 Prachachuen Road, Bangsue Bangkok
OPEN: 3PM - 12AM

J’Khai Seafood started when the owner began selling food from a small cart 34 years ago. It is now a multi-story restaurant in Bangkok, and their signature “Thai curry steamed horseshoe crab eggs” recently won Wongnai Users’ Choice for best dish.

????To make this tasty meal, they first steam the horseshoe crab, cutting open the lower part of the crab to remove all of the eggs. Separately, create the seasoning, mixing Thai red curry paste, sugar, MSG, oyster sauce and carnation milk. Add the seasoning to an oiled, heated pan before adding chicken egg and finger root. Allow to stir-fry for a bit, then scoop everything back into the horseshoe crab shell. Take the horseshoe crab and grill it over hot charcoal until bubbling. Top it off with coconut milk, sliced lime leaves and carrots before diving in.

????GRILLED BIRD: Clean the bird and place on skewers. Marinate it with salt and grill it.

????????MUSTARD & BEAN SOUP: Boil the chicken bones with beans until the beans are tender. Then just before serving, add salt and freshly picked mustard leaves.

???? RAW RIVER PRAWN: Clean and cut open the shrimp’s body and plate it. Garnish with carrots and herbs. Serve with salt, pepper, lime juice and wasabi.

???? STIR-FRIED MANTIS SHRIMP WITH GARLIC: In a hot pan, add cooking oil, fresh garlic cloves, fried garlic cloves, fried pork fat, chilli sauce, fried mince garlic, fish sauce and pepper. Stir-fry for five minutes and then serve.

???? TORCHED CARABINEROS, HOKKAIDO SCALLOP FOAM, JAMON IBERICO: First, blend oyster, parsley, grape seed oil, lemon, salt and black pepper together to make the oyster emulsion. Make the scallop foam that includes scallops, butter, carrots, thyme, onion, white peppercorns, fish stock, white wine and cream. Pump oyster emulsion in the oyster shell, add the carabineros shrimp tail and the jamon Iberico. Finally top up with the scallop foam.

TÔM KHO TỘ (CARAMELIZED RIVER PRAWN IN CLAYPOT): Firs, making the caramel sauce by adding cooking oil, sugar, scallion, garlic, shallots, chilli, fish sauce, chilli sauce, dark soy sauce, dried shrimp, water and pepper in a saucepan for 10 minutes until it becomes condensed. Prepare a clay pot and place it on the stove. Add cooking oil, onion, leak, ginger, blanched river prawn, coconut juice and caramel sauce. Cook well and then serve.

???? JOSPER GRILLED RIVER PRAWN, BISQUE, HERB EMULSION, CAVIAR: Step 1: Make the bisque sauce by roasting the river prawn shells, combining it with fish, then boiling the combination for 45 minutes. Strain to remove the shells. Make herb emulsion with a combination of chervil, thyme, parsley, cider vinegar and grapeseed oil. Blend to combine all ingredients. Blanch the whole prawn in boiling water for 10 seconds then cool it with ice for 45 seconds. Remove the tail shell and finish cooking in the Josper oven. Complete with caviar and baby herbs.

» THE MOUNTAIN GOAT

For this fun food adventure, we were invited to enjoy a home cooked meal by a local Ninh Binh family. Ninh Binh mountain goat is a local specialty that you can find offered in many different restaurants. Each restaurant offer their own secret recipe, so no dish is quite the same. The goat meat in Ninh Binh is known for being firm and aromatic, without much fat. It is said that due to Ninh Binh’s rocky mountains, the goats are more active and eat more herbs than in many other areas, which is why the meat is less fatty.

????The goat is stuffed with spices including Vietnamese curry leaves, ginger, galangal and lemongrass. Goat intestine, blood and throat are added over grilled shallots. Fig fruit, star fruit, young banana and carrot are an optional part of this dish.

» THE NINH BINH DELICACIES

1. MIẾN LƯƠN BÀ PHẤN: Eel Glass Noodles
ADDRESS: 999 Trần Hưng Đạo, Thanh bình, Ninh Bình
OPEN: 4AM - 10:30AM

Opened in 1973, Miến Lươn Bà Phấn is Ninh Binh’s most famous restaurant serving glass noodle eel soup. The owner, Mrs. Phấn, learned how to make the signature dish from her mother-in-law, who also taught three of her children to cook the dish before her passing. They now have three restaurants in Ninh Binh, selling their famous glass noodle eel soup, a dish adored by locals.

????INGREDIENTS: In a bowl, add glass noodles, eel, vegetables (laksa leaf, betel leaf, scallion, coriander) and fried shallot. Pour in eel broth and enjoy.

????PRICE: 1.71 USD/40,000 VND per bowl | 21.45 USD/500,000 VND per kg of eel

2. MRS. LÁT: Fried Crab + Rice
ADDRESS: Ninh Hải Primary School

Mrs. Lát has been a farmer in Ninh Binh for a very long time and is an expert at making this traditional dish. Fried crab with rice is very popular in the countryside of Vietnam. It originated from farmers working in the rice fields without much time to cook. As to not waste resources, they used every ingredient around them to create this simple dish, which has become very special in Vietnam today.

????INGREDIENTS: This special kind of crab can only be found in the months of September and October. Mix crab, lemongrass, fermented rice, pepper, salt, MSG, fish sauce, jungle honey and betel leaves. Serve with cooked rice.

????PRICE: 2.57 USD/60,000 VND per kg

3. MR. TOAN: Eel Salad

Mr. Toan is a retired chef, having worked in restaurants in Hanoi and Ninh Binh throughout his life. He kindly welcomed us into his home to cook us a classic Ninh Binh delicacy.

Nhệch is a paddy field eel, used to create this eel salad, a classic dish in the Northern coastal area of Vietnam. The dish requires a lot of skill and time for preparation. People from the region of Kim Son are known for making it best.

????PORK: pork fat, shallot, chili, pork, shrimp paste, MSG, sugar, shrimp chili paste and water | SALTWATER EEL: Take the meat off of bone, slice it up, mixing ginger water, ground ginger, minced shallots, seasoning, MSG, fried shallots, lemongrass, lime leaves and frying rice powder | DRESSING: Mix the cooked pork with fermented rice, cashew oil, sugar, MSG and boiled water

????????GEODUCK SASHIMI: Blanch the geoduck in a bowl of hot water. Carefully take out the skin around the neck and use a knife to remove the shell. Get rid of the internal organs. Cut it into crispy thin slices, and place on ice. Serve with wasabi and soy sauce.

????????GEODUCK WITH X.O SAUCE: Cut the geoduck’s neck into thick chunks. Flour coat it and flash fry it in high heat. Blanch the mushroom and celery and then stir fry with bell pepper. Season with X.O sauce, salt, sugar and MSG. Add the geoduck then wok fry.

????????DOUBLE-BOILED SOUP WITH SLICED GEODUCK: Make the broth with pork, chicken, Jinhua ham, dried scallops, pepper and dried mandarine peel. Steam for 8 hours. Use a colander to remove all ingredients. Place geoduck thin slices over bean sprouts, fried rice sheet/cracker, julienne ginger and scallion. Boil the broth, and pour over all ingredients in a serving bowl.

2. NGOC SUONG SEAFOOD AND BAR
ADDRESS: 6a Thai Van Lung, Ben Nghe Ward, District 1, HCMC

????????RED POMELO AND COCONUT HEART SALAD: Mix red pomelo, shredded green mango, coconut heart, onion, chocolate mint, Thai mint, geoduck, noodles and peanut. Squeeze lemon on top, and season with homemade diluted fish sauce. Place the mixture in a coconut. Add crunchy potato slices, top the dish with watermelon foam.

????????NGOC SUONG “SPHERE” FISH SALAD SAUCE AND MARINATED GEODUCK SASHIMI: Spherify the peanut sauce. Place it on a shell and add marinated geoduck. Top it with a gold flake. Add the fume then close the lid.

????????HANOIAN PUREE CONGEE WITH GEODUCK, SLOW COOKED SOFT BONE: Add minced pork, slow cooked soft bone and geoduck slices. Pour in the pureed congee. Add truffle flakes and garnish with ground pepper.

????????GEODUCK COTTON CANDY: Marinate geoduck with a shot of coffee. Season the foie gras with salt and sear it on the grill. Add sugar in the cotton candy machine. Put a piece of foie gras and geoduck. Spin the stick around until the cotton candy fully coats the foie gras and geoduck.

MAROU CHOCOLATE

1. CACAO FARM
ADDRESS: Tien Giang Province

????CACAO WINE: Crack the cacao pods and remove the seeds. Separate the seeds and the pulp. Extract the juices from the pulp. Pour the juice into a pot and add sugar and natural yeast. Place over heat and stir. Pour into a plastic jug and allow it to sit and ferment. After 90 days of fermentation, cacao wine is ready.

2. MAROU CHOCOLATE FACTORY

????CHOCOLATE: The beans are dumped into the roasting machine and roasted for 25-40 minutes. The machine then separates the cacao shells from the beans. The nibs are grinded for up to 24 hours until they liquify. The liquified chocolate is poured into a machine that heats it to 50 degrees celsius and then cools it to 30 degrees celsius. The tempered chocolate is poured into the chocolate molds before going through the conveyor belt. The machine then molds it into the shape of the chocolate bar. The bars are then inspected and packaged.

????CHOCOLATE BARS: Mr. Lau’s Tiến Giang Dark Chocolate, Lam Dong Chocolate & Coconut Milk Vietnamese Chocolate

????MAROU TIRAMISU: Place Coffee biscuit on the plate and add 1 layer of coffee chocolate chantilly, 1 layer of mascarpone cream and chocolate cacao nibs. Add a second coffee biscuit, 1 small dome of coffee chocolate chantilly, 1 layer of mascarpone cream and cacao powder decoration.

????MUG MOUSSE: The outer mug is made from chocolate biscuit. Inside, there is shortbread, chocolate mousse, caramelized cashews, cacao nibs, cashew powder, chantilly, icing sugar. The mug is secured with chocolate ganache.

????MAROU CLASSIC OPERA: Use biscuit joconde for the base then add the first layer of coffee cream and a second biscuit joconde. Add the first layer of coffee ganache, then biscuit joconde, coffee ganache, biscuit joconde, coffee cream and then chocolate glacage. Finally, add chocolate triangle decorations, mini coffee macaron on the top secured with chocolate ganache and coffee ice cream with a macaron shell in the front.

????CHOCOLATE TART: The outside is made with a shortbread tart shell. On the inside, there are chocolate biscuits, chocolate ganache, chocolate chantilly, caramelized cashews, mini brownies with icing sugar and chocolate decorations.

Giant catfish Mekong River ThaiLand - FISH MONSTER HUNTING

The largest known catfish in North America was a 143-pound (65-kilogram). But that’s dwarfed by the grizzly-bear sized Mekong giant catfish caught in Thailand in 2005, which weighed 646 pounds (293 kilograms) and was nearly nine feet long (2.7 meters).
