Delicious VILLAGE Tradition, CHIBLU IDLIS Steamed In Bamboo Over Wood Fire | BABU HOTEL Halaguru

The chiblu idli dates back to an era when modern kitchen conveniences of utensils weren’t easily available in villages, and so people would fashion cooking vessels out of resources handy. In the absence of present day idli steamers, village folk would steam idlis in baskets, known as ‘chiblus’ in kannada, made of bamboo, over a wood fire. And thus, these soft, aromatic chiblu idlis came into being. The painstaking effort required to steam idlis using this old-fashioned approach has caused this ancient practice to all but disappear. We travel 80 kilometres to Halaguru to savour this delicious tradition at Babu Hotel, a tiny village eatery that has been serving up the chiblu idli for over half a century now. Chiblu Idli
The chiblu idli is aromatic and steaming hot, served with a dollop of butter and alongside palya and red chilli chutney. The idli is soft, porous and carries a tart edge from the fermentation, that the butter helps balance against. The kempu chutney has a good balance of spice, and the crunch of the coconut complements the grainy bite of the hurigadale (roasted gram). The palya is savoury with the flavour of the onions.

The dose is crisp to the touch and fried to an appealing golden brown. Makes for a simple but satisfying tiffin with the palya and chutney. The masala dose is similar but stuffed with palya and larger in size, with twice the amount of butter.

After completing the 10th grade, a young lad decided to help his father in their village idli shop in Kanakapura, 60 kilometres from Bengaluru. Half a century on, Mr. Ramchandra has remained steadfast to his father’s culinary tradition, steaming fragrant idlis over a wood fire. A one-man army, he procures the ingredients, prepares the wood to fuel the decades-old stove, soaks the rice and lentils, grinds and carefully ferments the batter, before rising at 4am each morning to make a spicy chutney, and steam over 3000 idlis, 500 in a batch, that run out before noon! Working with the energy and enthusiasm that is hard to imagine in a modern-day sextagenarian, Ramchandra swears by the philosophy of “cheap and best”, in his words, selling four piping-hot idlis for only Rs. 10, or Rs. 2.50 a piece! The quality and appeal of the soft, fluffy idlis are such that patrons don't mind a two-hour drive just to breakfast at this old-fashioned Kote Idli Mane. The idlis are soft and porous, yielding with a slightly pasty texture in its weight. The size of the idlis are such that you can happily savour about four to six without feeling its burden. The spicy, roasted gram and red chilli chutney makes for a delicious accompaniment to the fragrant idlis.

This Man’s Village Butter Idli & Chutney Put PANDAVAPURA On The Map! SHIVAPPA IDLI Home, Darsaguppe

Pandavapura, located on the state highway between Srirangapatna and Melukote in Mandya district of Karnataka, would perhaps not have registered as a breakfast stop on the traveller’s map, but for an idli shop that goes back over three decades. Actually, it isn’t even a shop, but a window in 60-something-year-old Shivappa’s home from where he dispenses freshly steamed idlis (only) with home churned butter for a few hours each morning. Travellers on the route, and even those who journey from afar just to eat here, line up outside the window, even before it is flung open at 7am.

Shivappa’s enterprise bears no signboard and he employs no one, preferring to do everything himself, from preparing the chutney and the butter to the soaking and grinding of the grain, the fermentation and steaming of the idlis, helped only by his wife. When you are here, you need to abide by his “seemingly authoritarian” rules - register your order, collect a token in exchange for your payment, and wait patiently for Shivappa to steam the idlis fresh and call your token number! This may seem like a bit of a drill, until you take a bite of the spicy chutney soaked idlis, and then it all seems to make sense. Like we discovered when we drove 130 kilometres from Bengaluru for breakfast recently. Hope you enjoy this episode; take care, stay safe and happy eating.

Tasty VILLAGE MEALS Cooked Over A Wood Fire At This FARMER’S AKKI ROTI HOTEL | Needs No Sign Board!

Sixteen years ago, Balwant and his wife, Girija decided to open a tea shop on the fringe of their small farm abutting the highway at the foothills of the Western ghats just outside Sakleshpur, to augment their income. The tea shop soon began offering Malenadu style akki rotti to hungry travellers. And then meals followed, fuelled by Girija’s recipes and a wood fire, a simple affair, rice, rotti or raagi mudde, served with homely preparations of sambar, rasam, vegetable, pickle, papad, buttermilk and curd. Their following may have grown over the years, but the eatery remains as basic as it was when they first opened; I asked Balwant why he didn’t have a name board, and he modestly replied, “I thought I would put up a board when I improved the hotel,” meaning the interiors.

His son, Prashant interrupts to say “we are on google maps and customers find us so we don’t need a signpost anymore.” And that’s true, it’s the simple yet tasty village style food served in a rustic setting here that’s a big draw for locals and travellers alike and earned for the establishment the moniker, Akki Roti Hotel Anemahal.

The Malenadu style akki rotties are served hot and puffy with homemade butter that makes for a simple yet delicious accompaniment to the toasty crackle of the rotti. A tasty vegetable saagu, curry made of raw banana and bengal gram, helps one make a sumptuous meal of these rotties. There’s a spicy green chilli chutney completes the plate.

She Serves 1500 Idlis Everyday! Must-Try MAMU IDLI HOTEL Hassan | Soft Idlis & Most Spicy Chutney!

Mrs Prema continues in the legacy of her father, Mr Venkateshwara, who began a tiny idli hut in a bylane of Hassan adjoining the main market area. Over time the eatery moved to a tiny shop down the road, but its main offering, the idli continues to be a crowd pleaser, even 36 years on! Over 1500 of these are steamed each morning, to a unique batter that incorporates kusubalakki, urad dal and sabakki, sago pearls, in equal proportion; the Idlis are soft and sponge-like in texture to drink up the ghee that is drizzled over. It is served with a unique onion palya that is only tempered with salt and turmeric, and a fiery red chilli chutney made of peanuts, red chillies, cumin and garlic. The decor here is nothing to speak of, just some benches strewn around a tiny shed, but it doesn't seem to deter its patrons from lining up in queues to savour piping hot idlis for only the four or five hours they are open for business every morning.

About 60 years old hotel following village tradition to make idly using bowls made of bamboo is popularly known as Chiblu idli. The owner Babu is following the family tradition and style of making idlies over woodfire oven. Idli and chutney is the most famous dish here which is served for just Rs 10. people from different parts of Karnataka visit this hotel to taste the idly.

The chiblu idli dates back to an era when modern kitchen conveniences of utensils weren’t easily available in villages, and so people would fashion cooking vessels out of resources handy. Thats when people back then were using chiblu to make idlies. Same custom is been follwed till now where in the hotel makes idlies using bowls made of bamboo sticks.

Babu Hotel is well known to people from Karnataka specially Bengalurians go out for a breakfast ride / drive to have chill time.
This hotel, located at Halaguru, close to malavalli is well known to food lovers who explore places. It has close to 50-60 years of history with Mr.Babu starting the hotel and now It has been passed to grand children's.

Process of aking chiblu idly is quite time consuming since it takes lot of toll on needs plenty of hands to cater idli's to people come in search.
Owner says that it is hard to manage since only family members are running the show. They have picked up the business now but facing hard time to manage.

This is a old style / traditional way of cooking idli's when there were no steel vessels and Babu hotel has this legacy of continuing the same.
Though it looks like normal Idli, they were so soft and adding butter to it gave completely different flavor.

Babu Idli Hotel is a popular breakfast joint located in the Malavalli taluk of Mandya district in Karnataka, around 100 Kms from Bangalore. The hot n soft fluffy idlis prepared in the bamboo baskets known as chiblu, is served with chutney and onion & potato palya (dry curry). A dollop of enhances Nandini butter only enhances adds to the enhanced the flavour of the aromatic idlis steamed on woodfired stove. Enjoy your breakfast with generous servings of Chiblu idlis as well as dose and vade. Chitranna (Lemon rice), is another breakfast option.

Be sure to be at the hotel before 10 am since the breakfast is available only till 10.30 am.
