???? NAFAQO: Mix mashed potato mix with salt. Pour in water and continue mixing. Cut a hard boiled egg in half and coat it with a clump of mashed potatoes. Mold into a circle, forming a ball and place in an orange coloring mix. Fry the balls and enjoy!

Take the dough and form balls then flatten. Rub oil on dough and stack. Press the dough to flatten. Cut the folio into four quadrants. | Beef (filling): Blend onions and mix with salt, ground cumin, ground coriander, crushed red pepper, and a dash of ground turmeric. In a big pot, add ground beef and brown it for 30 minutes. Drain the beef. In a big pot, sauté chopped white onions. Add the beef. Add the seasoning. Cook for a few more minutes. ASSEMBLE: take one quadrant and fold it into a cone shape. Stuff with beef and seal the edges.

BLACK THAI JUMPING FISH
1. MR. KINH’S FAMILY HOME
ADDRESS: Tu Le Ward, Van Chan District, Yen Bai Province
????STICKY RICE IN BAMBOO: Wash the rice and place it in the bamboo. Add water. Cover the upper part with phrynium leaves and grill over a fire. Use a machete to cut the bamboo bark. Serve with sour buffalo skin.
????SOUR BUFFALO SKIN: Grill the buffalo skin and remove the hair. Boil the skin for 45 to 60 minutes. Cut the skin into thin slices and season with galangal, chilis and salt. Place in a jar for 5 to 7 days to ferment the skin.
????SOUR DECOMPOSED FISH: Cut the fish in big chunks. Roast the rice then pound it into a powder. Season fish with galangal, lemongrass, chillies, rice powder and salt. Place it in a jar for 3 to 7 days.
????THAI TRADITIONAL GRILLED FISH: Cut the fish open and remove the gastric acid. Marinate in lemongrass, chillies, perilla leaves, Thai pepper, salt, and minced local stinky leaves. Place inside the fish then fold fish in half. Place fish on a bamboo skewer and grill for 30 minutes.
????FISH GASTRIC ACID DIPPING SAUCE: In a bowl, add the fish gut, local stinky leaves, salt and perilla. Pour the mixture into a bamboo trunk. Use phrynium leaves as a cork. Grill the bamboo trunk for 20 minutes. Pour it out and serve as a dipping sauce.
????GRILLED MOSS IN BAMBOO: Wash the moss and chop in small pieces. Season with garlic, chillies, lemongrass, shallot, and cilantro. Place phrynium leaves in the bamboo trunk, then add the moss in and grill on fire for 20 minutes. Remove from the bamboo and serve.
????JUMPING FISH SALAD: Cut the banana blossom into thin slices. Squeeze it in water with salt. Mince the fish mint and normal mint. Add a bit of salt to the veggie mix. Add sour juice made from bamboo shoot pickle juice.

Boundary Waters Canoe Area Wilderness (Minnesota) - June 2021

My fourth 'hike' of the 2021 season didn't involve much hiking, but it sure required a lot of paddling!
When I was growing up in Michigan my family took a number of multi-day canoe trips on the Au Sable River, and they were great times. Fast forward to my early days of backpacking when I would talk with Bob about all things 'backcountry' - I knew Bob was a veteran of multiple Boundary Waters canoe trips and I took every opportunity I could to pick his brain for tips and techniques. He also had a huge Boundary Waters map on his office wall and we would talk about his routes and various lakes that he had explored. Ever since then a trip to the Boundary Waters has always been high on my 'bucket list'.
The opportunity to go presented itself in 2020 when Rick, a co-worker of mine from the old Delphi days, asked me if I'd be interested in going with him on a Boundary Waters trip in the fall of 2020. I was interested, but unfortunately the torn meniscus in my knee from the 2020 Adirondack trip forced a delay in our plans. But as soon as the snow melted in early 2021 we got right back on the planning for a 2021 trip.
We settled on a 6-day, 5-night trip starting at the Seagull Outfitters on the Gunflint Trail, 55-miles inland from Grand Marais, Minnesota. Our plan was to start on Saganaga Lake, head down through Ottertrack and Knife Lakes to the South Arm of Knife Lake, and then head back northeast to the outfitter through Ogishkemuncie and Seagull Lakes (as well as a ton of smaller lakes, all involving portages). In all we paddled for approximately 60 miles, including our travel time as well as many side trips and fishing excursions (according to the app on my Apple Watch).
Despite my canoe trips on the Au Sable river long ago (45+ years ago!) I started the trip as a complete canoeing 'newb' and, frankly, I was more than a bit intimidated by what I had gotten myself in to. I likened it to taking a person who had never backpacked before on a 6-day trip in the Rocky Mountains - probably not a great plan! But I was game to give it a shot, hoping that my comfort level would increase quickly, and, fortunately, it did. By the end of the trip I was quite comfortable during our long days in the canoe, and my paddling muscles had come into their own.
It was certainly a different sort of experience from a backpacking trip, but I (eventually!) loved it. The Boundary Waters Canoe Area Wilderness is incredibly beautiful, and the fishing is fantastic. We caught multiple Walleye, Bass, and Northern Pike, and they were all big (tasty too!). For anyone planning to take a trip to the Boundary Waters I think this video will give you a great start, and a good idea of what to expect.
For those who have watched my other videos this one is done in the same style - a little over an hour in length, intended to bring the audience along for the 'ride', and with a still picture slide show with music at the end. If you just have a few minutes skip to the end and enjoy the pictures.

Per usual, we only had one day to explore, but we didn’t let that stop us from seeing many of the major stops in this beautiful park! From sunrise with the Bull Elk at Mammoth Hot Springs to catching an impressive lunchtime showing of Old Faithful to sunset with a herd of grazing Bison, and SO many more amazing moments, our time in Yellowstone won’t soon be forgotten.
