This past month I headed out to Majuro lagoon to go fishing along with my church, Majuro Independent Baptist (aka 'Rita Baptist'), to compete against Rairok Baptist to see who can bring in the highest weight of fish. We had a good catch that day, so it's worth making a video over. ;)

The gang had the incredible privilege to visit a private island near Laura point of Majuro. It's called Ajokle. It sounds like a chocolate almost but not quite.

Let's Go To Arno! (v#5)

This is a short video showing my two trips to Arno Atoll from Christmas 2016 and spring break 2019. Special thanks to my good friend, Pin, for allowing me to come and visit her beautiful island. If you ever get a chance to come to the Marshall Islands, be sure to hop on a boat and take a trip out to Arno Atoll. The island is absolutely beautiful, and the people are so friendly.

The music in the video is titled: Komol Iroij Kon Aelon in Ao. It is my first Marshallese song. I wrote the English version, and my good friends Elvi, Xyrus and Lyle translated it, and Lyle sang it.

Beran Island

Beran Island is located in the Marshall Islands and is run by Martin Daly (Indies Trader). This video is a quick summary of an amazing week spent on the island in February 2019.

Superyacht Dragonfly and Palawan Dive Marshall Islands

Amazing dive site and fun time seeing the Dragonfly Superyacht anchored off of Bigej Island in Kwajalein Atoll. This dive site is usually hard to get to during the windy season here in Kwajalein. The Palawan is about 170' and from what I've been told was originally a Filipino ship that was taken by the Japanese and then later sank here in Kwaj. It is a deep dive bordering the recreational dive depth limit of 130', but well worth it. The ship's wheel is one of the main highlights. Nitrox with a mixture of 28% O2 was used instead of regular air to maximize the No Stop Limit and avoid going into Deco. Overall, solid dive and fun times!

Apologies for the audio. Need a better mic for my gopro and shipping to this island isn't exactly Prime.

poooooowhats up guys, just a trip we took to a small island called Arno. We didn't really get to explore the island at all due to the heavy rain but on the bight side there WILL be a next time so y'all hang tight. If you haven't checked out Arno what you waiting for?

Gardens Of Majuro

Our time in Majuro is ending. This month, we visited the Wellness centre garden in town, and made some fruit beer, courtesy of SY She-san.

Next stop, Chichijima!

ALCOHOL FROM JUICE
Ingredients (makes 4L):
- 500g sugar
- 500ml fruit juice (non-sweetened is preferable)
- 1 tsp yeast
- 4L clean water

Material:
- 1 5L bottle (i said gallons in the video, sorry about that)
- Measuring cup (for liquids)
- Scale (for solids)
- Empty carbonation bottles
- Airlock (or party balloons)

In your 5L bottle (make sure it's clean), mix the fruit juice, water, sugar and yeast. Shake bottle to mix contents. Apply a balloon on the opening of the bottle and poke some holes in it to let the gas escape. Let it stand for 9 days or so, when it's ready the balloons will droop. Then, transfer the mix to smaller bottles (especially made for carbonated drinks, if you don't use this your bottle will burst). Add 1tsp of sugar (to boost carbonation) and cap the bottle. Let it stand outside of a fridge for a few hours, then transfer to fridge to stop fermentation. Enjoy!

The Kwaj Current Episode 99

Surfway Gourmet recipe from video:
General Tso Chicken, Kwaj Chinese Takeout (Kosher)

Ingredients:

Sauce:
1 - Tbsp Minced or Ground Ginger
1.5 - 2 - Tbsp minced or ground garlic (3-5 cloves)
1 - Bottom 1/3rds of a bunch of green onions, thinly sliced (keep the top 2/3rds for garnish, thinly sliced)
1 - Tsp Sesame Oil
1/2 - 1 - Tsp of Red Chili Flakes (depending on your heat tolerance)
4 - Tbsp Soy Sauce
6 - 8 - Tbsp White sugar (but a little brown sugar sure doesn't hurt ;))
1 - Tsp of granulated Salt or 2/3 tsp of Kosher Salt.
1 - Tbsp Vegetable Oil
6 - Tbsp of water mixed with 1 Tbsp of Cornstarch

Chicken/Batter:
3 - Tbsp Corn Starch
5 - Tbsp Flour (preferably bread flour because of the gluten content, but it's not a big deal if its just all-purpose)
1 - Tsp of granulated Salt or 1/2 tsp of Kosher Salt.
1 - cup of water, (add water slowly and mix until it's a thin pea soup like consistency, if you need more water, add more water, if you think it's thin enough, STOP!)
1 - egg for each lb. of chicken, in this case just use one large egg.
1 - Tbsp vegetable oil
1 - Tsp White Vinegar
1 - lb dark chicken meat, cut into 1 bite sized pieces

How to make General Tso

Step 1: Prepare ingredients
1) De-bone chicken and cut up meat until you have around a lb of 1 - 1.5 chicken bite size pieces. It is highly recommended that you use dark meat for this, white meat doesn't do well when frying and it will affect the quality of your product. If you want to make your General Tso's a little, extra extra if you know what I mean, save the chicken skins while deboning the meat and render it down while you work. Rendered Chicken Fat will make your sauce that much more special.

2) Make batter. Take a 1/2 gallon bowl, add your Corn Starch, Flour, and Salt, and do a pre-mix of those ingredients. Then add your Vegetable Oil, White Vinegar and Egg. Don't dump all the water in at once, add it slowly and mix while doing it. You are trying to achieve a consistency similar to a thin pea-soup or Ranch Dressing. This takes some time, but mix until everything is fully incorporated into the batter. Then add your chicken, briefly mix it all together and let it sit for 30-minutes.

3) Deep frying the chicken. While you were preparing everything, you should have a pot or deep fryer if you got one, of around 1/2 to 1 gallon of vegetable oil heating up to around 375 - 400 degree F. Hint: if it starts smoking lightly, it's plenty hot (too hot) so be careful. Take our pieces of chicken and carefully place them into the hot oil, one by one. Make sure while doing this you DON'T cause any to splash up and hit your hand, it will burn you, or make sure you don't add too much too quickly, or it can boil over and start a fire. Let chicken fry for 5 minutes until golden brown. Then remove and let it sit on a plate with some paper towel. Frying 1lb of chicken worth of chicken should take 2-3 batches, so take your time and don't over crowd your fryer. (Fire safely tip, keep some baking soda or baking powder around and sprinkling that on a fire, it will put it out quickly. You don't ever want to put a grease fire out with water, it will make it worse.)

Caution: Deep frying food can be a bit dangerous, so you want to be very careful while doing this, you can easily burn yourself or even start a fire, so take your time, make sure to do this over multiple batches you know your pot can handle, take your time, and slowly add chicken piece by piece to prevent and boil over disaster)

Step 4) Making sauce. In a Wok (or whatever you've got) place a tablespoon of vegetable oil on a medium heat. Once hot, add garlic, bottom 1/3rd of green onion, and ginger. Let simmer for about 3-5 minutes. If you notice any browning at all, it is time to move on to the next step. Add your Red Chili Flake in the simmering oil for about 30 second to a minute. Then add your soy sauce, sugar, sesame oil, salt and mix. Then add your cornstarch water mix to the sauce and mix until thick. Finally, add your white vinegar to the sauce at the very end and turn off heat.

Step 5) Finally Step. Take the fried chicken and dump it into the sauce. Then mix it until everything is coated nicely with sauce. Move to a new serving dish and add top 2/3rd of the green onions as a garnish (sesame seeds also are nice to add as a garnish). Serve with fresh white rice and steamed broccoli, and you've got yourself a meal for 2 - 4 people (depending on how hungry they are).

Extra things to mention, sprinkle sesame seeds to finish produce when done, to make it extra extra.

If you want to go even more extra (keep chicken skins and render them down first before making sauce, use this instead of vegetable oil when making the sauce. It will add more umami. MSG is a good source of this but they don't sell it here :( )
