???????? FROG LEGS & DIPPING SAUCE: Remove the skin from the frog legs and clean them using water. In a large bowl, mix cornmeal, flour, onion powder, granulated garlic and Cajun seasoning. Place the frog legs in the mixture, completely covering them. In a frying pan, add a bit of olive oil. Place the frog legs into the oil and allow to cook for 5 minutes on each side. For the dipping sauce, mix mayonnaise, ketchup, onion powder, granulated garlic and worcestershire.

SCOTT, LOUISIANA: If there’s one food that represents Cajun food culture in Louisiana, it’s boudin - and the moment you taste it you’ll know why. It has to be one of the world’s most addictive sausages and a complete meal all within a sausage casing. Today we’re going to The Best Stop Supermarket to learn how they make their Cajun boudin sausage, and to eat some as well!

Before I traveled to Louisiana, I had never heard of boudin. And even in New Orleans, it’s rare to find. But head to Cajun country, like Lafayette, and specifically Soctt, which is just 10 minutes away, and you’ll be surrounded by one of the most beloved of all Cajun foods. Boudin is a sausage, made from meat (usually pork) scraps, mixed with rice, and Cajun pepper seasonings, and filled into a natural intestines casing. Traditionally, boudin is boiled or steamed, but now you’ll also find it commonly smoked. What I loved so much about boudin is that it’s a complete meal including rice, meat, and spices, all in a natural skin. And on top of that, it’s extremely tasty and addictive - the meat and rice combo, the Cajun spices and cayenne pepper.

We first took a tour of the state of the art sausage factory at The Best Stop Supermarket. My favorite part was the sausage filling room where you’ll never see unraveling intestines move faster in your life.

I tried a variety of boudin products, but for me the best are both the boiled and smoked boudin. What I learned is that boudin is not only a food enjoyed and loved, but it’s a Cajun way of life!

1. Spuddy’s Cajun Food Restaurant: Cajun-Style Andouille + Jambalaya

????????Cajun-Style Andouille: Cut the pork into small pieces. Using a meat grinder, use a chopper plate that will grind the meat into chunks and place in bowl. Add salt and cayenne pepper to the grounded pork and mix. Stuff the pork into the andouille casing. Place the raw andouille into a smoker and allow to cook for 2 to 24 hours.

????????Jambalaya: In a cast iron pot, add hog lard and bring to a simmer. Once simmering, add chopped onion and cook until caramelized. Mix in pieces of chopped pork and allow to cook until it’s tender. Add chopped andouille and cook until brown. Add hot sauce, celery, bell peppers, smoked sausage and water into the pot. Add salt, pepper, paprika, garlic and cayenne pepper. Add more water to the mixture (roughly 1.5 gallons). Finally, add 8lbs of extra long grain rice and continuously stir for 10 minutes or until the water is gone. Cover the pot for 45 minutes, then serve when ready.

????????Crawfish: Fill a large pot ⅓ to ½ with water. Bring water to a boil, then add salt, pepper, crab boil. Add the potatoes, onions, garlic, mushrooms, lemons, sausage, or anything else you like. When the potatoes are soft, shut the fire off and let it soak for half an hour to absorb the seasonings. Take everything out. Bring water to a boil then add crawfish to boiling water. Add frozen corn to the mixture and let sit for 20 minutes. When the crawfish sink, the meal is ready to serve.

????EGGPLANT NAPOLEON: Coat eggplant slices with italian bread crumbs and fry. Coat gulf shrimp with flour and fry. To make crawfish cream sauce, simmer garlic, add cream, creole seasoning, worcestershire, butter and green onion. Combine and serve.

????RED BEANS & RICE: Boil soaked beans in water or stock. Add onions, bell peppers, celery, and sausage. Add thyme and bay leaves. Bring to a simmer for about 2 hours until beans are soft. Continue to add liquid and stir until the mixture becomes creamy. Serve with Louisiana long grain or popcorn rice.

????CRAB & CORN BEIGNET BALLS: Mix together plain flour, cornmeal and baking powder. Add eggs and milk to form a batter. Add crab meat, kernels from the cooked corn on the cob and red peppers chopped finely. In a bowl, mix together herbs, lemon and cayenne and mayonnaise. Form little balls from the batter and deep fry until golden brown. Serve alongside the mayonnaise mixture.

FULL LECHON IN VINALES

1. BATEY LOS LORENZOS (Family house)
ADDRESS: Vinales, Cuba

????CUBA LECHON ASADO: Clean and cut the pig, then place it on a hammock. In each pocket of the pig, add seasoning (garlic, onion, cumin, calamondin and lime). Add salt in each pocket as well as on the skin. Place pig over an open fire and cover it with banana leaves for 3 hours. After 3 hours, flip the pig on the hammock and cook for one more hour.

????CONGRI (Cuban Black Beans and Rice): In a big pot, add the dried black beans, water and bring it to a boil. In a separate bowl, mash garlic, cachucha pepper, cilantro and onion together. Add the spices/seasoning to the boiling water with the beans, then add white rice. Add pork fat and grease to the pot, mix and then allow to cook until water is absorbed.

????????MALANGA (Fried Taro Chips): Peel the taro. Slice into circular shaped chips and fry in pork grease. Top with salt.

????PLANTAIN (Fried Plantain Chips): In a pan, add pork grease and bring to a boil. Slice the plantain and fry.

????????YUCCA (Boiled Yucca/Cassava): Peel the yucca potatoes. Chop into large pieces and boil in water (no seasoning). Wait 20 minutes or so until cooked.

☕CAFÉ CUBANO (Cuban Coffee): Pick the beans from the tree. Lay the beans out on a large tarp and allow them to sit in the sun and dry. Mash the beans in a wooden bowl to remove the shells. Roast and grind the beans. Pour the ground beans into hot water and bring it to a boil. Pour the coffee into the filter.

1. WARUNG LESEHAN MERTHA SARI: Grilled Pepes + Sate Lilit Tuna + Sate Tusuk Tuna

OPENING HOURS: MON - SUN 8:00AM - 6:00PM

GRILLED PEPES: In a bowl, mix chopped tuna, minced tuna, tamarind, ginger, bumbu genep (spice mix). Take a spoonful and place in the middle of banana leaves. Wrap and secure with a thin piece of bamboo stick. Place on the grill and cook.

SATE LILIT TUNA (TUNA SATAY) + SATE TUSUK TUNA: Wash the fish and grind thoroughly. Blend the smooth spices and stir-fry. Add additional spices. Mix seasoning with ground fish. Put mixture on skewer and grill. Serve with rice, tuna soup and sambal matah.

2. SAMSARA BALI – LIVING MUSEUM: Dragonfly Pepes + Landak

DRAGONFLY PEPES: Filling: Mix together chillies, shallots, garlic, turmeric, salt and telengis (residue of coconut oil). Add dragonflies and mix. For a sweeter filling, add honeycomb to the mixture. Pepes Wrapping: Cut the banana leaves. Take a handful of mixture and put in the leaf. Seal it shut with a bamboo stick. Put the pepes on open wood fire and let cook for about 30 minutes.

LANDAK (Porcupine): Pour hot water over porcupine. Remove all quills, then place back in water and clean. Skin, debone and remove the organs. Sate: Mix porcupine meat with bumbu and make sate. Lawar: Grill heart and lungs and chop up the skin. Raw Lawar: In a big bowl, Mix shaved coconut and raw porcupine blood. Then add in boiled porcupine skin, grilled heart and liver. Add fried bumbu on top and mix everything together. Add in lime. Pour in porcupine stock (broth) and fried onions. Boiled Porcupine: Mix raw porcupine meat with bumbu then pour into pot cooking vessel to cook to boil.

TEHRAN’S MOST IMPORTANT FOOD

1. SEYED MEHDI: Aash Reshteh + Halim

AASH RESHTEH: Boil lentils and add in mixed herbs (parsley, dill, leeks, tarragon, cilantro). Allow it to cook for 20 minutes. Add in chickpeas, kidney beans, pepper and salt. In a separate pan, add turmeric to oil and then add fried onion and allow it to brown before adding to the main pot. Add wheat noodles (reshteh) and allow it to cook for another 20 minutes. Serve with fried onion, fried mint and sour yogurt on top.

HALIM: Boil wheat for five hours. In a separate pot, boil lamb chunks as well. Mix both boiled ingredients together and build congealed texture. Eat for breakfast with salt, sugar, cinnamon, olive oil, coconut oil and drizzled butter

1. BIG BOB GIBSON BBQ: Beef Brisket + Alabama White Sauce + Spitfire Chicken + Mac & Cheese

???? BEEF BRISKET: Marinate brisket with salt and pepper and put brisket in smoker to cook overnight for 12-14 hours at 250 degrees. Slice into thin pieces and enjoy.

????ALABAMA WHITE SAUCE: Mix together apple cider vinegar, cayenne pepper, salt, mayonnaise and lemon in a large bowl.


????SPITFIRE CHICKEN: Season chicken pieces with salt and place them on the grill. Dip chicken pieces in chicken oil. Sprinkle ground pepper on the chicken and allow it to cook. Roast chicken 1 ½ hours on each side and then dip chicken in Alabama white BBQ sauce.

???? MAC & CHEESE: Cook noodles until al dente. Drain noodles and return to pot. Add butter and stir. Add Muenster, cheddar and velveeta cheeses until melted. Stir in half and half and salt. Top with soft layer of shredded cheese, salt and pepper and place in oven for 25-30 min.

???????? BAKED BEANS: Pour beans, pepper, bacon, ketchup, onions and other ingredients listed above in full size and pan. Then place in oven for 1 hour at 500 degrees

Place the biscuits in the oven to cook.

????????BANH MI BO KHO: Place lemongrass in a pot with oil. Grind garlic, ginger and purple onions and add to pot, then add Vietnamese curry leaves and five-spice powder. Brown the beef short ribs on all sides, then add in water, sugar and salt and cook for 2-3 hours. Continue adding the tendons in the broth and allow it to steam for another 2 hours. Add carrots and onions into the broth and let it steam for 30 minutes. After that, add beef stock in the broth pot. Season it with more lemongrass, corn powder, water, sugar, MSG and salt. To serve, place the meat and tendons in the bowl, then add the broth and carrots. Garnish with herbs. Enjoy with dipping peanut sauce or chili sauce.
