????????SISIG: Wash and then chop the pork ears, cheeks, and head into big pieces. Boil for 1.5 hours in salt water. Chop meats into square pieces and then grill for 10-15 minutes. Add chopped onions, peppers, vinegar, salt, and chicken livers. Place on a hot pan with margarine.

????????CAMERU (STIR-FRIED CRICKETS): Place the chopped onions into cooking oil, then add chopped garlic, tomatoes, then crickets. Stir-fry. Season with salt, sugar, and fish sauce.

Stuff the rabbits with lemongrass, and green onions for a normal flavor, and add red chilies and star anises for a spicy flavor. Sew the bellies and brush the outside with soy sauce mixed with coconut milk. Place on the fire and grill, while brushing more sauce on.

The area around Quiapo Church, is home to a huge market, where you’ll find an abundance of especially clothing and street food - and ranging from fresh ingredients to cooked food ready to eat. If you love to eat, when you’re in Manila, Quiapo Market is one of the best places to start and get a feel for the city and eat some amazing Filipino street food.

We started right at Quiapo Church and it happened to be a Sunday afternoon - Anton mentioned that it’s usually the busiest on Sunday afternoon, catering to everyone that attends the hourly church service. We walked down one alley and ate two noodle dishes palabok (20 PHP, $0.40) and sotanghon (30 PHP, $0.60). Both dishes were good, and served fresh. I especially enjoyed the sotanghon, a cellophane noodles dish, that was cooked in flavorful oil and it was a perfect slurping dish.

Right in front of Quiapo Church in Manila, we at first though they were fish balls or squid balls, but they turned out to be chicken balls (2 PHP, $0.04 per ball). In order to eat Filipino chicken balls, you grab a stick, poke some on your stick, and dip in vinegar. They weren’t the best quality, but they weren’t expensive either. Next to the chicken balls, I saw the dried squid (10 PHP, $0.20 per stick) and had to try it as well. It was amazing, dried chewy squid, roasted over charcoal and dunked in chili vinegar.

We then walked across the main road at Quiapo and found a Filipino street food stall serving all types of kwek kwek (3 for 12 PHP, $0.24). Kwek kwek is a popular street food of quail eggs, coated in a thick batter and deep fried. We also tried 1 day old fried chickens (10 PHP, $0.20), which is another popular Filipino street food in that area of Manila. As with other Filipino snacks, you garnish with chilies, shallots, and lots of vinegar before eating.

Probably one of the most famous of all Philippines street food is balut (15 PHP, $.030), a duck egg embryo - like a half developed egg. You’ll find balut all over the Philippines and it’s especially popular to eat in the evening. The first thing you do is crack the top of the egg shell and drink the chicken soup. You then peel the rest of the egg, and eat both chick and the yolk on the inside. I also seasoned with a little salt and chili vinegar. I’ve eaten balut quite a few times during many trips to the Philippines, and I quite enjoy eating balut!

Quiapo Market is a wonderful place in Manila to explore all the street food snacks available, and it’s just an amazingly vibrant and colorful part of Manila, and it was great to hang out with Anton!

CEBU, PHILIPPINES - Welcome to Cebu, one of the greatest food cities in the Philippines! Today I’m hanging out with my friends Bhen and Yuri, and we’re going on an ultimate Filipino street food tour - which turned out to be more of an exotic food tour - eating some of the unique, wiggly, and incredibly delicious foods that you can find in Cebu!

Here’s everywhere we ate on this Cebu street food tour:

1. Jerbie's Kandingan ( - Naga, Cebu, Philippines - Early in the morning we started at Jerbie's Kandingan, known for their variety of stews, and especially Balbacua, a Filipino beef stew using all the hoofs and collage rich parts. The recipe is quite complicated with onions and ginger and pineapple juice and peanut butter. The result is this sticky and extremely tasty stew that’s a perfect easy start to your morning. We also had some Soup number 5, legendary power soup in the Philippines!

2. Ginabot sa Pardo ( - One of the greatest Philippines street foods in Cebu is ginabot, the raffled flower intestines deep fried. But the highlight is the dipping sauce that includes onions, chilies, calamansi, soy sauce, and vinegar. It’s a perfect crispy snack!

3. Delfa’s Tungolan ( - Next up on this action packed Philippines street food tour we went to the legendary Delfa’s Tungolan for her giant pig intestines stuffed with leek and green onions. They are deep fried and served again with the dipping sauce which makes it insanely tasty.

4. Brigols ( Mandaue City, Philippines - Another famous street food in Cebu is Tuslob buwa, pig brains melted with lard and scooped up with compressed rice. It’s fun to eat and it’s a delicious was to make full use of all the parts of the pig.

5. Matias BBQ ( - Finally to complete this ultimate Cebu street food tour we went to the iconic Matias BBQ, a household name in Cebu. We had some delicious organ skewers and tame chicken wings to end!

What a day of Filipino street food, eating some of the most extreme meats and foods Cebu has to offer!

BETIS CHURCH (GuaGua, Pampanga)

The Betis Church is one of the oldest parish church in Pampanga. Not only beautiful outside but also has an amazing interior inside . A painted ceiling art will greet when you look up just like the Sistine Chapel at the Vatican City. The construction of Betis Church is the first mission of the Augustinian priests and it has also produce many priests.

JB BETIS WOODCRAFT (GuaGua, Pampanga)

If you love shopping for unique pieces of furniture, JB Betis Woodcraft would be your go to place in Pampanga. We visited the place where they create elegant and artistic furnitures that you see in high-end places or hotels. Each piece is handcrafted from chair, tables, mirrors, beds to cases. They have also celebrity clients that requests their beautifully crafted furnitures that are sent overseas.

SAN GUILLERMO CHURCH (GuaGua, Pampanga)

We briefly checked out San Guillermo Church and at first glance you’ll notice that the church is relatively small compared to the other precious church. But there is a story why it’s relatively small and that is because half of it is buried in lahar when the Pinatubo volcano erupted. People in Pampanga are resilient and still continuing with their livelihood despite what happened to the town of Bacolor when the volcano erupted many years ago.

ALING LARING TAMALES - CABALANTIAN (GuaGua, Pampanga)

Our fourth stop is Aling Laring’s Special Kakanin where their specialty is the Tamales. She started selling Tamales in 1972 and became the Tamales Queen. Our version of Tamales is made up of ground rice, coconut milk and various toppings like chicken, ham and egg. They also makes Suman Bulagta, Bico, Capit, Kalame Duman/Ube etc.

25 SEEDS RESTAURANT (GuaGua, Pampanga)

The 25 Seeds Restaurant was formerly an old mansion then later turned by Chef Sau to a restaurant that serves Kapampangan dishes and Other FIlipino food. We were treated to these delicious dishes: Pako Salad, Okoy, Tinape Babi, Camaro (an insect dish), Bulanglang na Babi, Kare-Kare, Chicken Galantina and Tibok-tibok. Chef Sau also demonstrated his own version of Tamales.

SUSIE’S CUISINE

A popular stop to get pasalubong and delicious kakanin, Susie’s Cuisine is a must visit when you’re in Angeles, Pampanga. It started as a small canteen and later grown to what it is now and also expanded to different branches. You should try their Pancit Luglug and their kakanin (rice cakes).

PAMINTUAN MANSION

The Pamintuan Mansion is more than a century old house and is known as the place where they had the first and only public Independence Day celebration under Emilio Aguinaldo on June 12, 1899. Today, it is now the Museum of Philippine Social History where they showcase vintage antiques, elegant period furnishing, native textiles and fashion and architectural designs.

CENTER FOR KAPAMPANGAN STUDIES

Located inside the Holy Angel University, the Center for Kapampangan Studies houses the legacy of Kapampangan heritage and roots. There are historical pieces that is essential to the Kapampangans like death masks of famous personalities, golden wreaths of famous playwrights and many more.

ALING LUCING’S SISIG

I have been to Aling Lucing’s Sisig many times and noticed they expanded and have taken the spot next to them. Aling Lucing Sisig houses the original sisig which has no egg, no mayo which we are accustomed to in Manila. Aside from its famous sisig, they also have bulalo, chicharon bulaklak, ensalada and other Filipino dishes. This was the last meal on our culinary trip to Pampanga and we devoured all the food that were served. All were delicious and we enjoyed every last bite of the meal. Even when we got to the bus, we still smell like sisig!

KABIGTING’s HALO-HALO

On our way back to Manila, the staff of Philtranco team got us some Kabigting’s Halo-Halo. It is different from the usual halo-halo which is colorful and lots of ingredients. It has only few ingredients like sugared white kidney beans, corn kernels and pastillas. It has an interesting smooth texture but a sweet treat nonetheless.

I have enjoyed the Pampanga Heritage and Food Tour by Philtranco and it made realize that Pampanga has an abundance of culture, history and delicacies that made them a rich and amazing province. Thankfully we got to enjoy and experience Pampanga even though we’re in Manila or in far away provinces because there are busses like Philtranco that get us there safely and comfortably.

I had another travel commitment during that time, so I won’t be able to attend, but I know the food will be awesome.

The World Street Food Congress and KF Seetoh from Singapore, invited me to attend a 15 hour Filipino food frenzy safari, and was excited to be a part of it! We started in Manila, then went to Pampanga for the main part of the tour, and then returned to Manila to eat more, and end with a grand finale lechon!

1. Bulaluhan sa España - We started off this Filipino food tour at about 7 am in Manila at a restaurant called Bulaluhan sa España, known for serving bulalo, a beef bone marrow soup. It was pretty tasty, a great way to get started, and my kind of a local restaurant.

2. Atching Lillian - Pampanga is known for being the food culinary capital of the Philippines, and we first went to Atching Lillian, who is legendary for preserving local cuisine. We had some interesting home-cooked Kampangan dishes, and some Filipino tamales.

3. Taldawa - This was probably my favorite stop on this Filipino food tour of Pampanga, a restaurant that specializes in goat and duck. The duck adobo and goat kaldereta were amazing.

4. 25 Seeds - On the food tour we had Chef Sau Del Rosario, a renowned Filipino chef from Pampanga, and just an awesome guy. We next went to his restaurant called 25 Seeds where we were treated to sisig paella, a creation by KF Seetoh and Chef Sau Del Rosario. It was an incredible combination.

5. Susie’s Cuisine - This place is well known throughout Pampanga for their Filipino desserts. I’m not big on desserts, but I tried a few bites, and that was about enough for me.

6. Makansutra Hawkers - Since this food tour event was also a press conference for the actual street food event, we then went to Makansutra Hawkers for a quick conference and more Malaysian / Singaporean food, which was excellent.
7. Zubuchon Lechon - I know there are infinite debates about Filipino lechon, or roast pig, but we went to a place that’s originally from Cebu, but they opened a branch in Manila, known as Zubuchon Lechon. It was pretty awesomely good, so extremely crunchy on the outside and creamy soft on the inside.
