Welcome to the stunning Khao Sok National Park in Surat Thani, Thailand! I had the chance to hang out with P’You from Rungfah Farm: His property backs up to the mountains and the lush green rainforest, it’s pristine. And the best thing about P’You is his love and respect for nature, and his organic farm.

To begin with we first went around his farm, some of which is grown, some of which grows wild, and harvested ingredients for lunch. From fruits to vegetables and herbs, Rungfah Farm is full of tropical things to eat - for me it’s a fresh food paradise - and around his farm you can find almost all the ingredients you need for a Thai food feast. On top of that, P’You has amazing knowledge of ingredients, and their uses for cooking and medicinal value. He’s so laid back and so friendly, and he’s part of the reason why visiting Rungfah Farmstay is so much fun.

After walking round the farm for a while, we got started cooking, and the cooked some common Thai dishes, as well as a few jungle survival style dishes - like rice cooked in bamboo over open fires.

Here are the other dishes that P’You and his wife made for us:

Chicken curry
Snake fruit chili dip
Banana blossom tempura
Fried bamboo shoots
Fried melinjo leaves

It was a delicious Thai meal, and for me the best thing about it was that it was cooked with love using natural, local, and ultimately freshly picked ingredients from Rungfah Organic Farm right in the jungle of Khao Sok, Thailand!

CHIANG MAI, THAILAND - Today we’re going to Sanpakai Hideaway, an organic food farm in Chiang Mai owned by an amazing family who are almost completely self-sufficient. From the vegetables to the fruits to the teas to the meats, everything we ate was from their land that they grow and raise.

This was meal was incredibly good, but what I really mean about “best food in the world,” is that no matter where you are in the world, if you’re able to grow your own food, everything fresh, nothing processed - this is the formula for the best food in the world - no matter what country you’re from.

First of all, we started with a tour of the garden and the farm. From rice paddy fields (which were dry at the moment during the winter season), to tamarind trees, bananas, and bael. We then took a look at the incredible fresh herb garden - a place to pick everyday greens, herbs, and tomatoes.

We made smoked catfish with sweet fish sauce, smoked chicken (which was incredibly tasty), an omelet made with chicken, duck, and turkey eggs, and finally a host of garden vegetables like rocket, mustard greens and coriander. Additionally, we picked some broken bones pods - also known as Indian trumpet tree. It’s been a favorite tree of mine for a while because it looks so cool and the pods are so unique. I’ve eaten it many times, but this was my first time harvesting them and seeing the entire process of how to cook and serve them. It was fascinating!

Again, when it comes to food, nothing can get better than local and fresh.

CHIANG RAI, THAILAND - Today we’re visiting Suan Ban Kan Kin Garden สวนปั๋นกั๋นกิ๋น, one of the ultimate backyard organic food farms in Chiang Rai. I could not believe the diversity of ingredients growing in the backyard in a relatively small area. We’re going to walk around and see the full farm, then we’ll cook some amazing dishes with ingredients we pick fresh.

Gurmar leaves - One of the key ingredients I love in northern Thailand is gurmar leaves, which are delicious and extremely healthy.

Chaya - Another vegetable that Aunty had growing abundantly in the back was chaya, also known as Mexican kale or tree spinach, and in Thai they sometimes call it MSG leaves because they are so tasty on their own and have umami.

Hairy-fruited eggplant - Finally to complete this Thai food farm to table experience, we made an extremely spicy chili dip with hairy fruited eggplant that has a taste somewhere between a tomato and gooseberry with a bit of bitterness. It goes so well together with chilies and garlic to create a powerful plant based chili dip for fresh vegetables.

UDON THANI, THAILAND - Samuay & Sons (ซาหมวย & ซันส์), is an innovative Isan Thai food restaurant in Udon Thani, where Chef Num serves unique dishes using wild and foraged ingredients. The unique flavors, balance of all taste buds, and his herb driven - often medicinal property cuisine - is what makes it so spectacular.

It was a huge honor to spend a day hanging out, eating with, and learning from Chef Num of Samuay & Sons (ซาหมวย & ซันส์ and MAK KHANG (หมากแข้ง - two of the most exciting restaurants in Thailand.

After meeting Chef Num, we immediately drove to Sakhon Nakhon, about a two and a half hour drive. We drove to a small village, at the base of a mountain known for its indiginous plant species. It’s one of the villages where Chef Num goes foraging and sources ingredients. We went to the home of Chef Num Noi, a former chef at Samuay & Sons (ซาหมวย & ซันส์) who returned to his home and started re-growing and farming some of the rare ingredients from Sakhon Nakhon.

Along with an amazing foraging trip on the moonscape mountain - tasting things along the way - the highlight of our trip to Sakhon Nakhon was lunch - well actually two lunches.

First lunch we had grilled free range chicken with a chili fermented fish chili dip that was out of this world. As well as a dish called “swa gai (ซั่วไก่),” a chicken boil loaded with herbs like rau ram and lemongrass. It was outstanding.

For the second lunch we came back from foraging and the main event of lunch was their special version of “mok nor mai,” a bamboo shoot packet, pounded up with loads of herbs, yangang leaves, and steamed. It was sensational, so many unbelievable layers of flavor.

Foraging and eating Thai Isan food in the village with Chef Num was an amazing experience, and it was amazing to see the knowledge, though process, and respect for traditional and local culture that Chef Num has and that translates back into his modern creative dishes at his restaurants.

We then drove straight back to Udon Thani, and straight to Samuay & Sons (ซาหมวย & ซันส์) for dinner.

CHIANG RAI, THAILAND - Welcome to Lanjia Lodge, in the mountains of Chiang Rai in Northern Thailand. My family and I stayed here for a few night and we enjoyed every minute of it. The scenery is beautiful, the lodge supports the local community, and the food is delicious. Today for lunch we went down to a local farm, picked fresh vegetables, and cooked a local fully plant based vegetarian Thai / Hmong food meal!

This meal was fully plant based (vegan) and everything was extremely fresh and vibrant. Also, I just have to emphasize the beauty of seeing your food, even picking it, before eating it.

CHIANG MAI, THAILAND - Chiang Mai is a true haven of farm to table fresh food Thai restaurants. Today we’re going to one of the best, Ginger Farm, where they grow and source delicious organic vegetables. Their menu is huge and full of many Thai foods, and they have a large section of both vegetarian and vegan dishes to choose from.

Before doing anything though, I started with a couple of juices, freshly squeezed. I tried their beetroot juice which came with broccoli on the bottom, a carrot and pineapple juice, and passion fruit smoothie. All were excellent with no additional sugar added.

One of the great things about Ginger Farm is that you can walk around and see the farm and ingredients growing during your meal. I walked around a bit and it’s a wonderful garden to get a sense of what you’ll be eating.

For food, I stuck with the plant based vegetarian / vegan Thai dishes available - and they have a huge selection. All the dishes were excellent, but I especially enjoyed the sliced okra salad, the peanut dressing salad, and the fried shiitake mushroom. Highly recommended for one of the best farm to table organic restaurants for vegetarian Thai food in Chiang Mai.

Welcome to the Bamboo Forest Market (ตลาดป่าไผ่สร้างสุข) in Phatthalung (พัทลุง), Southern Thailand. This could easily be one of the most beautiful markets in Thailand, and one of the most laid back and friendly markets as well.

The market was started by Khun Kwanjai Klapsuksai, who is an advocate for preserving nature and sustainability. She started growing bamboo, as it grows so fast, and has so many uses. And now with over 40 varieties of bamboo in a forest, they decided to start a food market in the bamboo forest. For sure it’s one of the most pleasant markets you’ll ever visit in Thailand.

The food is also delicious. You’ll find a mix of Southern Thai food, and snacks, and plenty of natural fruits and vegetables, green ingredients. I tried a number of foods, but my favorite was the lemongrass and green mango wrapped in betel leaves, and the herbal rice salad.

Price - 40 THB ($1.30) each dish

The Bamboo Market in Phatthalung (พัทลุง) is a gem of Thailand, highly recommended!

Nakhon Phanom, Thailand - Located in the Isan region of Northeastern Thailand, along the mighty Mekong River, Nakhon Phanom is one of the most laid back provinces in Thailand. Today we’re in Ban Na Thon Village (บ้านนาถ่อน) and the community has gather to cook local Thai Isan / Lao food, and we’re going to learn about their amazing culture.

Really quickly - Nakhon Phanom is located along the Mekong River and is part of the Isan region of Thailand. But that being said, it’s across the river from Laos, and the people of Isan share the same culture and food from Lao.

Ban Na Thon Village (บ้านนาถ่อน) is a fantastic village, so laid back, friendly, and with a variety of homestays. We had the pleasure of spending a number of nights in this village where we did a lot of cooking and eating local food, and we also did a number of activities to learn about the local culture.

For breakfast we had a number of pounded salads with long-beans, amazing grilled chicken, and sticky rice. For lunch, which was one of the biggest meals of the day, they made a huge amount of dishes - the highlights being the “bon kob,” a pounded frog chili dip and a buffalo skin chili dip. There was also an Isan food of raw pig’s blood coagulated into a jelly. I had eaten a couple times in Laos before. It was an amazing meal and great to eat with the community.

For dinner and final meal they Aunty’s made a beautiful bowl of laap, and Isan style mixed meat salad and herbs, this time made with fish. Again, it was fantastic to learn about the culture of the amazing people and their Isan / Lao culture.

Khrua Luang Then (ร้าน ครัวหลวงเทน) - During my trip to Southern Thailand, and specifically the southern Thai province of Phang Nga, one of the restaurants I was most looking forward to eating was Khrua Luang Then (ร้าน ครัวหลวงเทน) - it was a place I could feel I was going to love before going - just from the look of powerful spices in the dishes, and the laid-back environment. Turned out to be one of the best Thai food meals I’ve had in a long time, one of my new favorite restaurants in all of Thailand.

We arrived in the morning just as they opened, and already Chef was extremely friendly and welcoming. We ordered a bunch of dishes - and they have some unique southern Thai food dishes that you won’t find elsewhere - so I was extremely excited.

Here are the main dishes we ordered:

Sour curry sea catfish แกงส้มปลาดุกทะเล
Beef dry curry คั่วกลิ้นเนื้อ
Fried fish turmeric ปลาทอดขมิ้น
Black stingray curry ผัดเผ็ดปลากระเบนดำ
Red ant omelet ไข่เจียวมดแดง
Octopus pineapple โวยวายสับปะรด
Sea shells หอยชักตีน
Stir fried morning glory ผัดผักบุ้ง

Total price - 1,800 THB ($55.46)

Before eating, I had a chance to watch Chef as he masterfully cooked all the dishes. His insane skills and use of huge amounts of spice blew my taste buds before even starting to eat. He makes all his own curry pastes, and sources all his ingredients locally.

The food was absolutely insane, bold, spicy, tingly, and a sensation for the tongue. Mind blowing flavor, and strong to the max curries. I loved every bite, and the entire experience.

Khrua Luang Then (ร้าน ครัวหลวงเทน) is located in Khao Lak (เขาหลัก), Phang Nga province (พังงา) in southern Thailand. Khrua Luang Then (ร้าน ครัวหลวงเทน) is also featured in the Thailand Michelin Guide. Must eat if you are a spicy Thai food lover!

Street Food Jungle!! AMAZING THAI FOOD + Grilled Chicken in Tropical Paradise!

Phatthalung (พัทลุง), Thailand - Welcome to Phatthalung (พัทลุง) one of the best and most relaxing and green tropical provinces in Thailand. The culture is so laid back and the food is spicy and some of my favorites in Thailand too.

Today we’re going on a jungle street food tour of Tainod Green Market (หลาดใต้โหนด which is this amazing local market where you’ll find everything from cooked southern Thai food to market fresh ingredients to southern Thai culture. You don’t want to miss the amazing food selection. Here’s what I ate:

Chicken - 15 Baht ($0.48) per piece - This was honestly some of the best grilled chicken I’ve had in a long time. It was so perfectly flavorful and rich, and smoky.

Rice and curry - 50 THB ($1.59) - Can’t ever beat a plate of rice and curry when you’re in Phatthalung (พัทลุง), just the best, it’s a meal I never get tired of.

Rice noodles - 15 THB ($0.48) - Next up for a plate of freshly made khanom jeen rice noodles. The southern Thai curries are pungent and spicy.

Arenga pinnata palm fruit (ลูกชก) - Another snack you’ll find is the jelly fruit from a palm tree called the Arenga pinnata. Unique and very good.

Fried cempedak - 20 THB ($0.64) - Next up for one of the greatest deep fried fruits in the world. It’s not a jackfruit, but a cempedak, which is common in southern Thailand and Malaysia. It’s so good, and almost has a natural honey juiciness to it. When you open a cempedak, if you do it correctly - I haven’t done it correctly many times, it opens so the skin peels and all the fruit remains on the core. Deep fried is heaven.

Snakefruit - 20 THB ($0.64) - Finally to complete this Thai jungle street food tour at Tainod Green Market (หลาดใต้โหนด) I had a bowl of peeled snake fruit. I loved the natural packaging.

It’s an amazing market, one of my favorite markets in all of Thailand. The atmosphere, the greenness, and the delicious Thai food is what makes it spectacular.

Sukhothai - Ban Na Ton Chan (บ้านนาต้นจั่น), Thailand - Welcome to the amazing Ban Na Ton Chan (บ้านนาต้นจั่น) in Sukhothai, Northern Thailand! Sukhothai is the ancient capital of Siam, and so there’s a lot of Thai culture and history here. Along with visiting the historical sites of Sukhothai ( I was very excited to learn more about the culture and especially eat authentic local Sukhothai Thai food.

After we arrived to Ban Na Ton Chan (บ้านนาต้นจั่น), we immediately went to check into our homestay where we were greeted by an amazing local early lunch. Among the spread of food, one of the highlights was barometer earthstar mushroom curry (แกงคั่วหมูเห็ดเผาะ), it was incredibly delicious. We ate, had some local durian, and then took a little rest before preparing the next meal!

Aunty was amazing, she went above and beyond to take care of us, and to cook us local food. In the afternoon we went to gather some fresh ingredients, including bamboo shoots, bitter melon leaves, and pea eggplant. Along with many other dishes, one of the main dishes Aunty cooked was a local style bamboo shoot curry (แกงหน่อไม้) ใบย่านาง), using mainly the fresh herbs and bamboo shoots that we harvested ourselves. She started with juice made from yanang ( leaves, which are common in certain regions of Thailand, often used for a curry broth. She then boiled the bamboo shoots, and added in an assortment of vegetables, mushrooms, herbs, spices, fermented fish sauce, and finally red ant eggs to finish it off. It was extraordinary!

For dinner we had an entire local Sukhothai Thai food feast - including the amazing bamboo shoot curry Aunty prepared, a chili dip made with egg, and an assortment of other delicious Thai food.

It was a learning experience, and so much fun to hang out with Aunty who was so kind and took such great care of us.

We stayed at an Organic Farm in Chiang Rai Thailand for the weekend and it exceeded our wildest expectations. It was more than just a place to sleep but a experience of living on an organic working farm.

In the previous video we did various activities on the farm but in this one we get a tour of the working farm, Rai Ruen Rom, by the owner herself. Not only did we get to walk around and learn about the different produce but we got to see how the workers go about their tasks and the effort that goes into producing every piece of food.

We got to feed the goats, infuse honey, see how they make the tea and taste it. We learned that there are actually a variety of honeys and tasted the very scarce sour honey.

Apple has an amazing vision for the farm and we could really feel the fruits of her project. We started appreciating our food again and the efforts that go into producing it.

Khao Sok Culinary Foraging | Khao Sok National Park

With the surrounding ambience of Khao Sok National Park, take a step back in time and discover how the local forest communities created culinary delights more than a century ago. Khao Sok Jungle Cooking Class Tour by Discovery Travel - Khao Lak

Become one of the family with our exclusive Khao Sok Jungle Cooking Class tour from Khao Lak.

We will pick you up from you Khao Lak hotel and stop at the beautiful Khao Sok viewpoint. Next we will take you to meet Mr. Yoo and his family. Once we get there Mr. Yoo will take you to harvest fresh, organic herbs, fruits and vegetables from his garden around his Khao Sok Jungle Camp.

After we have harvested enough, it is time to join the family in making a delicious Thai lunch using traditional methods. Then of course there is the best bit, eating it!

Once everyone has finished lunch it is time to say goodbye to Mr. Yoo and his family. Our next stop is the Khao Sok River. Now we cruise gently down stream on traditional bamboo rafts surrounded by jungles and mountains. At the end of the river there is a small bat cave and an ancient cave temple to explore before returning to your Khao Lak resort.
