Asakusa is reminiscent of an older Tokyo, lined with traditional craft shops and street-food stalls along Nakamise Street, near the ancient Sensō-ji Temple. Mid-19th-Century Hanayashiki Amusement Park has thrill rides and cafes, while riverside Kuritsu Sumida Park hosts regular festivals and firework displays. Casual izakaya bars dot the neighborhood, as well as yakitori restaurants serving grilled meat skewers and beer.

» THE UZBEK MOUNTAIN FOOD

1. STREET-SIDE STALL: Dehydrated Yogurt Balls
ADDRESS: On the side of the road driving from Tashkent up Greater Chimgan Mountain
OPEN: 8AM - 9PM

⚪As we wind our way up Greater Chimgan Mountain, part of the Chatkal Mountain range, we decide to stop, stretch our legs and try some local handmade food. These yummy little dehydrated yogurt balls come in an assortment of flavors including basil and chili flavored. Most of the stalls are family run, passed down generation by generation.

2. SAZANCHIK: Mutton Meat
ADDRESS: Chimgan Mountain of Tashkent
OPEN: April - September | 8AM - 1AM

Sazanchik boasts traditional nomadic food, which guests eat in one of their yurts to get a glimpse of nomadic life in the mountains of Uzbekistan. This restaurant is known for their incredible mountain lamb, considered the wagyu of lamb in Uzbekistan. Due to adapting to the extreme weather and living conditions, the mountain lambs in Tashkent have less fat than typical lambs.

????UZBEK MOUNTAIN LAMB: Prepare the lamb using mountain herbs and lemon before wrapping it and allowing it to marinate overnight (12 hours). After fully marinating, place the lamb over a fire to roast for 6-7 hours, until the meat is fully cooked and the skin nice and crispy.

3. SAZANCHIK: Beshbarmak (Flat Noodles + Horse Sausage)
ADDRESS: Chimgan Mountain of Tashkent
OPEN: April - September | 8AM - 1AM

Beshbarmak means “five fingers,” and refers to the fact that this traditional nomadic dish is meant to be eaten using your hands. The woman preparing this dish for us for us has been making besh barmaq for 30 years. While the dish itself is tasty, it also serves a very practical purpose: the flat noodles fill you up and keep you full for long time while the horse meat keeps you warm in the cold mountain weather.

????BESHBARMAK: Mixing chicken eggs, salt and flour, create the dough for the noodles. Knead the dough and then roll it with the largest rolling pin you can find. Cut into square pieces. Boil the flat square noodles in horse stock and place them on a large round dish. The sauce contains horse fat extract, dried potatoes, onion and horse stock. Finally, pour the sauce over the noodles and then pile on horse meat, horse intestine and horse sausage.

????This family-owned restaurant gets their fresh prawn daily from a local supplier. They use fresh ingredients in each dish, and the mother of the family creates unique recipes only available at Siam 77. They sell up to 100kg of prawn every weekend!

????????Stir-fried freshwater catfish with curry paste: Add red curry paste and chicken stock to a hot, oiled pan. Place the catfish in, allowing it to cook for 5-7 minutes before adding coconut milk, fish sauce and sugar. Place on a plate and garnish with lime leaves and chili before diving in!

????Spicy stir-fried pork: Mix cubed pork, eggplant, sugar, chili, lime leaves, fish sauce, curry paste (which includes lemongrass, galangal, shrimp paste, garlic and chili) and oyster sauce in a frying pan. Cook until pork is finished and enjoy!

1. MIẾN LƯƠN BÀ PHẤN: Eel Glass Noodles
ADDRESS: 999 Trần Hưng Đạo, Thanh bình, Ninh Bình

Opened in 1973, Miến Lươn Bà Phấn is Ninh Binh’s most famous restaurant serving glass noodle eel soup. The owner, Mrs. Phấn, learned how to make the signature dish from her mother-in-law, who also taught three of her children to cook the dish before her passing. They now have three restaurants in Ninh Binh, selling their famous glass noodle eel soup, a dish adored by locals.

????INGREDIENTS: In a bowl, add glass noodles, eel, vegetables (laksa leaf, betel leaf, scallion, coriander) and fried shallot. Pour in eel broth and enjoy.

????PRICE: 1.71 USD/40,000 VND per bowl | 21.45 USD/500,000 VND per kg of eel

2. MRS. LÁT: Fried Crab + Rice
ADDRESS: Ninh Hải Primary School

Mrs. Lát has been a farmer in Ninh Binh for a very long time and is an expert at making this traditional dish. Fried crab with rice is very popular in the countryside of Vietnam. It originated from farmers working in the rice fields without much time to cook. As to not waste resources, they used every ingredient around them to create this simple dish, which has become very special in Vietnam today.

????INGREDIENTS: This special kind of crab can only be found in the months of September and October. Mix crab, lemongrass, fermented rice, pepper, salt, MSG, fish sauce, jungle honey and betel leaves. Serve with cooked rice.

3. MR. TOAN: Eel Salad

Mr. Toan is a retired chef, having worked in restaurants in Hanoi and Ninh Binh throughout his life. He kindly welcomed us into his home to cook us a classic Ninh Binh delicacy.

Nhệch is a paddy field eel, used to create this eel salad, a classic dish in the Northern coastal area of Vietnam. The dish requires a lot of skill and time for preparation. People from the region of Kim Son are known for making it best.

????PORK: pork fat, shallot, chili, pork, shrimp paste, MSG, sugar, shrimp chili paste and water | SALTWATER EEL: Take the meat off of bone, slice it up, mixing ginger water, ground ginger, minced shallots, seasoning, MSG, fried shallots, lemongrass, lime leaves and frying rice powder | DRESSING: Mix the cooked pork with fermented rice, cashew oil, sugar, MSG and boiled water

WHAT'S IN INDIA'S DESSERT HEAVEN - AMAZING INDIAN FOOD EPISODE #4

India is famous for spicy food, but unknown to many, India is also a great stop for a dessert crawl. In Jodhpur, desserts are not just simple cures to cravings, it’s a tradition. In this episode, Sonny from the Best Ever Food Review Show, who has a sweet spot for all things sugary, is teaming up with food blogger Archana to follow Jodhpur’s dessert trails, from the classic jalebi sold on the street to the silver-wrapped pista pan gilory, one of India's most unique treats. It’s going to be one intense ride from here to sugar heaven so buckle up!

????SPECIAL RABRI
To make this sweet snack, reduce milk by adding sugar until it becomes thick. Add a mixture of rosewater and cardamom powder, then serve.
PRICE: 5 USD/360 INR per kg

????SPECIAL PEDE
Reduce milk to milk solid (called mawa) by evaporating or drying the milk out. Add cardamom powder, sugar, saffron and kewra (an extract distilled from the flower of the pandanus plant) to the mawa and roast in a wok until it becomes a smooth paste. Allow to cool, roll into balls and enjoy.

OPEN: 6AM - 12PM for jalebi (otherwise open until 8PM)

????JALEBI
Motu Jalebi Wala has been serving one of Jodhpur’s most popular sweets, jalebi, for 105 years. The jalebi batter is made from refined flour, a little bit of gram flour and water. Finish the jalebi by dunking it into sugar syrup and eating!

3. JODHPUR SWEETS: Rabri Ladoo + Rose Badam Ladoo + Pista Pan Gilory
LOCATION: 9th C Rd, Sardarpura, Jodhpur, Rajasthan 342003
OPEN: 7AM - 10:30PM

????RABRI LADOO
Boil milk and reduce it to mawa (milk solid), mixing with gram flour to create batter. In separate wok, add sugar syrup, saffron and cardamom powder. Strain the batter into the ghee pan, forming small balls. After the balls are fried, dunk in the sugar-saffron syrup.
To make the ladoos (round balls), mix almonds, big cardamom seeds, cardamom powder, rose petals (fresh), the fried small balls that were previously dunked in sugar syrup and bind them together into ladoo.
PRICE: 5.2 USD/380 INR per kg

????ROSE BADAM LADOO
Create the dough by mixing soaked almonds and sugar. Then mix with chopped roasted almonds, pistachios and rose syrup. Roll into a balls (ladoos), then roll it again in rose syrup before coating them in dried rose petals.
PRICE: 16.4 USD/1,200 INR per kg

????PISTA PAN GILORY
Soak cashew nuts and pistachios for 3 hours before grinding them into a paste. In a wok, add water and sugar to create a syrup, then add ghee and the pistachio and cashew paste. With a thick wooden spatula, continue mixing the paste to make it finer. Allow to cool for 30 minutes. Flatten the paste and cut into equal squares. Take one piece and curl it into the shape of a cone.

To make the stuffing, mix gulkand (rose marmalade), pistachios, roasted almonds, mishri (sugar crystals), poppy seeds, pan chutney with silver leaf, sugar and saffron. Allow to sit for one hour, then add the stuffing to the cone. Wrap the cone in edible silver sheet. Finally, using saffron and rose water, create a paste and add a drop on the outside of this sweet treat.
