Bengaluru loves its egg rice, a heavily indigenised variation of the fried rice fortified with an amalgam of punchy spices and fresh ingredients to cater to local palates. Whilst one will find a popular egg rice cart in almost every neighbourhood, there is perhaps none as popular as Snehajeevi Gowdara Adda Egg Rice, that thumps out enormous quantities to queues of patrons who wait patiently for the hot, spicy rice and other egg-y creations at this shop, ironically, located in the predominantly vegetarian neighbourhood of Malleshwaram. I dropped in one afternoon to take a closer look at this tasty creation and chat with the owner, Kumar Gowda, who began making egg rice in his pushcart 18 years ago when he was forced to give up the tender coconut trade. Orphaned at a young age and in search of a livelihood, Huchappa migrated from his village to Bengaluru in 1950. He found employment with UP Brahmins who were dispensing paani poori from streetside carts. Having learnt the trade, he struck out on his own with a pushcart in Nagarathpet in 1950, infusing North Indian style chaats with local flavours. His son, Kumar continues the tradition under the shade of a temple peepal tree, which also gives his very popular chaat shop its name, Arali Mara, peepal tree in Kannada. An engineer and mba by education respectively, Raksha Prasad and Suhas Karanth began making plans to open an eatery that would serve traditional vegetarian tiffin of their native South Canara, during their courting days. Shortly after getting married, they gave up their MNC jobs and their eatery, Jagli Tindi was born, in a tiny nook in Kengeri, on the outskirts of Bengaluru, with a menu comprising mostly dishes gleaned from their grandma’s recipes, with ingredients sourced from Kundapura to lend authenticity to the taste. Two years on, this passion enterprise has moved to a slightly larger space in Banashankari, South Bengaluru, but the couple still remain hands-on, Suhas, in the kitchen, and Raksha managing the front of the house. I visit them to learn of their inspiring story, catch some of the action in the kitchen, before sitting down to a slightly indulgent tiffin session. Hope you enjoy this episode. Made with a red puffed rice that’s tossed with their ‘secret’ podi mix and onions, topped with grated coconut and plenty of peanuts. This is the sort of fun snack that one should share with friends whilst you wait for some of the other substantial tiffin items.

The kotte kadubu here is made the traditional way, steamed in cups fashioned of jackfruit leaves that lends the kadubu a distinct aroma. There’s a hint of tartness from the fermentation, the red tomato chutney makes for a sprightly partner to the gentle flavoured kadubu, with its tangy, slightly spice, sour and nutty character. The vegetable sagu adds to the nutritional quotient of this tasty tiffin.

This creation of Suhas Karanth seems to be inspired by the 99-variety dosa ilk. The dosa is smeared with a paste of potatoes, spicy podi and ghee, as it is roasted to a crisp on the tava. Folded, flattened and cut into two, this dosa creation makes for an interesting snack if you are the sort who is acquiesce to pushing the envelope for what a masala dosa can be.

Steamed in a banana leaf, this steamed dumpling of urad dal batter, is stained lightly with the colour of the leaf. Slightly pasty and dense in its texture, and studded with whole peppercorns that lend their tingling touch. Whilst the red chutney adds zing, next time, I would also ask for some of the nutritious vegetable saagu to complement the austerity of this steamed dumpling.

When it comes to savouring soft idlis and crunchy vadas, all roads in South Bengaluru lead to Sri Lakshmi Venkateshwara Coffee Bar, or SLV as this string of eateries is popularly known. And it is no surprise given the fact that the brothers behind this tiffin house enterprise have over 125 years of combined experience in the making of the idli, vada and khara bath, beginning with extended stints at the iconic Brahmins’ Coffee Bar where they learnt the trade. I met the brothers behind SLV, Srinivas Bhat, Krishna Bhat and Anantha Bhat at their flagship eatery as it completed 35 years last month to find out what makes their offerings so special.

Idli
The idli is porous and the sort that dissolves in the mouth when steaming hot. The chutney makes for a flavourful accompaniment to permeate through the idli with its ‘flowing’ consistency and spicy fervour. One of the best idlis one can taste in Bengaluru. The butter, to be honest, is an unnecessary but decadently tasty indulgence!

The vade here is double fried ensuring a crisp crunchy bite from the first bite to the last, on the inside it is soft and porous, speckled with black pepper, green chillies and curry leaves.

After making a beginning in Chikkaballapur, the patriarch VA Venkatachalapathy Setty migrated to Bengaluru in 1952 to introduce the denizens of this city to his style of Mysore Pak, lush with ghee, and another equally popular invention, the Dumrote, a slow-baked crusty halwa made of ash gourd that takes the better part of a day to prepare. I catch up with the second, third and fourth generation of this iconic sweetmeat shop, and delve into the making of the Mysore Pak and Dumrote.
