LOS ANGELES, CALIFORNIA - Welcome to LA and more specifically San Gabriel Valley where we’re going to take you on an amazing spicy Chinese food tour today! I’m hanging out with my friend Jing who has a very cool story, which we’ll hear, and then we’ll be eating a Sichuan feast, Chongqing noodles, and finishing with an insanely spicy Chinese hot pot!

Chengdu Impression ( Total price - $262.71 - Jing first took us to eat at her favorite Sichuan food restaurant in LA, called Chengdu Impression in Arcadia. We ordered a huge spread of dishes including pickled mustard greens fish, frog in a chili stew, one of the best mapo tofu I’ve ever had, and dino beef ribs with a mala Sichuan rub. It was one of the best Sichuan meals I’ve had, outstanding food and quality.

Chong Qing Special Noodles ( - Price - $8.99 per bowl - Next up with headed to Chong Qing Special Noodles, a legendary noodle restaurant that serves spicy and tingly Chong Qing noodles. This is the real deal, so addictively tasty that you can’t stop.

Chong Qing YaoMei Hotpot ( - Total price - $117.18 - Finally to complete this Chinese Sichuan food tour in greater Los Angeles, we drove out to Pasadena to eat at Chong Qing YaoMei Hotpot, again another Ching Qing specialty restaurant. This was one of the best hot pots I’ve had and you can order the extra spicy - which I did - and it really was properly spicy and bursting with flavor. The meat and vegetables selection was great, was the dipping sauce.

It was an amazing day eating Sichuan and Chong Qing food within the greater LA area, and again thank you to Jing for showing us around!

RAMEN SCHOOL #3 | How to Make Ramen Eggs | 味付け卵 Ajitsuke Tamago | Ajitama

The key to ramen eggs (known in Japanese as ajitsuke tamago 味付け卵) is that they aren't just flavoured by their marinade. The salty and sweet marinade actually acts as a cure to firm the whites and yolks, and give the yolks a savoury and jammy taste and consistency, which is a much better texture for ramen. Two days curing is about right for curing ramen eggs, but you can go more or less depending on the levels of salt and sugar in the liquid.

Even if you're not making ramen eggs, this video has some tips for how to get your regular boiled eggs perfect every time.

Hokkien Fried Rice is a Taiwanese dish with origins in the Hokkien people who first came from Fujian Province in China. It’s different to other fried rice dishes in that a simple egg fried rice is topped with lightly braised ingredients. In true Hokkien style, the dish often contains a mixture of dried seafood, as well as ingredients from the land and mountains, but you can use any ingredients you like, really.

RAMEN SCHOOL #6 | Rich Double Soup Base for Ramen | ラーメン

In the first Ramen School video we went through the process of making a very basic ramen soup base using the double soup method. This time we're going to use the same method, but ramping things up a bit for a more complex soup base. Using different ingredients requires a slightly different process, and of course a different length of time to get the best out of them.

This soup base is deeper in colour, richer in texture and will be stronger tasting than our first soup base. This would be more suited to a more strongly flavoured ramen, and next week I'll show you how to turn this base into Garlic Shoyu ramen.

How much Thai food can you eat for $150?

“How much Thai food can you eat for $150? And you can’t eat the same food twice?” This is a wee side project we did when travelling through Thailand this year to give an idea of the real cost of eating in Thailand.

It starts in the northern borders (Chiang Rai) and ends at the most southern (Ko Lipe) and shares most regional foods/staples with longer stints in Chiang Mai (Lanna), Nang Rong, Buriram (Isaan), Bangkok, and some island hopping in the south.

In total we managed to cover around 88 proper food/drink items which average at around 59 baht or $1.70 per meal (so it’s 177 baht or $5.10 for a 3 meal day). Although I’d probably eat 4 ($6.80) and on 4 meals it’s roughly $200 per month etc. etc.

Some #thaifood items are obviously more/less than others, but we did not go out of our way to be cheap, and we always ate what we wanted to eat. We also included 6 Michelin Bib Gourmand restaurants, many recognizable destinations, and lots of contrasting scenery along the way.

Lower Sodium Instant Ramen Noodle Soup

Episode 96 - Lower Sodium Instant Ramen Noodle Soup

Top Ramen Noodle Soup
Kikkoman Tofu Miso Soup
Tajin Low Sodium Clasico Seasoning
Dried Chives

Two cups of water in sauce pan
Add noodles only (do not add the Seasoning Packet that came with the Noodle Soup)
Add Kikkoman Tofu Miso Soup
Bring to a boil, about 5-6 minutes

In Soup Bowl scramble one egg, add the soup from the sauce pan
Add Dried Chives, 1 teaspoon
Add Tajin Low Sodium Clasico Seasoning, 1/4 teaspoon
let sit for 3-5 minutes to cool, stir the noodles & egg & seasoning
