Tiny Potatoes and Roasted Red Peppers with Avocado-Jalapeño Cream Sauce
10-12 tiny potatoes, boiled in salted water for approximately 10 minutes
1 fire-roasted red bell pepper*, sliced
For sauce, throw the following in a blender or food processor and puree to desired consistency:
1 medium avocado, diced
1 fire-roasted jalapeño*
2 T cilantro, chopped
2 cloves garlic, chopped
1 knob fresh turmeric, chopped, or 2 teaspoons turmeric powder
1/4 cup heavy cream
1 t cumin powder
Juice of 1 lime
Creamy Guacamole
In a medium-sized non-reactive bowl, mash together the following:
1 medium avocado
1/4 medium red onion, chopped
2 cloves garlic, minced
1 fire-roasted jalapeño*, diced
1 T cilantro, chopped
2 T heavy cream
Juice of 1 lime
salt & pepper to taste
Cucumber Salad
Toss:
1 cucumber, sliced into half-rounds
1/4 medium red onion, diced
1 T cilantro, chopped
1 t ground cumin
Juice of 1/2 lime
salt & pepper to taste
*To roast peppers on a gas stovetop: rinse, pat dry, then lay directly on stovetop over flame, turning frequently until evenly-blackened. Remove and let cool for a couple of seconds, then place in plastic bag and close. The pepper will sweat, and after about 10 minutes, the skin will wipe off easily. Pull or cut off the stem top, and slice open to remove the seeds.

Durante nuestro trayecto visitamos un pequeño pueblo llamado Pan de Azúcar, además de conocer Zamora, el Parque Nacional Podocarpus, y subir de vuelta a la sierra para alcanzar a visitar Vilcabamba.

HIKING PODOCARPUS NATIONAL PARK - BOMBUSCARO SECTOR (ZAMORA CHINCHIPE PROVINCE)
There are several ways into Southern Ecuador’s Podocarpus National Park. One entrance is through Bombuscaro (10 minutes from Zamora city). Many agree this is the best area to visit in Podocarpus Park. The trek offers you bird watching, waterfalls, stunning lookouts, and pristine mountain streams.
