As a travel advisor with a passion for gluten-free baking, I'm thrilled to unite these two passions and bring you a mouthwatering cupcake recipe inspired by Perth, Australia and the delicious Australia/New Zealand dessert, pavlova - one of my favorites!
Named after the Russian ballerina Anna Pavlova, this delicate meringue-based dessert is claimed to have been created in honor of her visit to Australia and New Zealand in the 1920s. Its crisp exterior and soft, marshmallow-like interior make it a true culinary masterpiece.
Perth, the sun-soaked capital of Western Australia, is celebrated for its stunning beaches, outdoor adventures, and a thriving food scene - it just seemed a fitting inspiration for these refreshingly light cupcakes - with their bright notes of raspberry filling and whipped cream cheese frosting, they were made for enjoying on a sunny day.
???? Vanilla Cupcakes ????
1 cup 1:1 gluten free flour
2 Tbsp cornstarch
¼ tsp salt
1 tsp baking powder
6 T milk, any kind
½ tsp vinegar
½ cup granulated sugar
1 large egg
½ cup unsweetened applesauce
1 tsp vanilla extract
½ tsp almond extract
❤️ FRESH RASPBERRY FILLING ❤️
1 cup frozen raspberries
1.5 Tbsp cornstarch
1 Tbsp water
¼ cup granulated sugar
Top with your favorite cream cheese or whipped cream frosting!

- Measure Accurately: Use a kitchen scale for precise measurements.
- Room Temperature Ingredients: Ensure your ingredients are at room temperature for better texture.
- Xanthan Gum: Add xanthan gum to your flour mix for improved texture, if your mix doesen't already contain it - but beware that a little bit goes a LONG way.
- Rest the Batter: Let your batter rest for 30 minutes before baking for better rise and consistency.
- Oven Temperature: Preheat your oven properly and use an oven thermometer to ensure accuracy.
- Use Toothpick Test: Insert a toothpick into a cupcake; it should come out clean when done.
- Cool Completely: Allow your cupcakes to cool completely before frosting.

- Exploring the back streets of Bunbury and visiting Marlston Hill Lookout before heading southwest on the Bussell Highway (10), turning onto Stirling Rd to visit Peppermint Grove Beach then continuing through Tuart Forest National Park and stopping at Malbup Bird Hide, then on to Busselton, turning onto Caves Road into Leeuwin-Naturaliste National Park, visiting Cape Naturaliste Lighthouse then heading south on Caves Road, visiting Ngilgi Cave, then Canal Rocks & Smith's Beach at Yallingup before heading in to Margaret River, then returning to Caves Road and continuing south, stopping to visit Mammoth Cave, then continuing through the Boranup Karri Forests before arriving in Augusta, staying overnight at Augusta YHA - Cape Leeuwin
AUSTRALIA, 2015: My plan was very simple, to just drive and keep driving, see what I see and overnight wherever I found myself at the end of each day. Starting from home in Melbourne I would head up through the central deserts, turn left at the top and then follow the coast all the way around the west and back along the bottom. About fifteen thousand kilometres, I reckoned. So I took leave from my restaurant day job, got in my old '96 Hyundai Excel - with no air conditioning or working radio - and unwittingly drove straight into a three-week heat wave...

In the evening visit one of the many restaurants, cafes, bars or one of our three nightclubs to end what would have been a perfect day.
