Opened in 1981 by Erminio Alajmo and Rita Chimetto, Le Calandre restaurant became one of the best restaurants in Italy under the direction of Max and Raf. The restaurant has maintained three Michelin stars since 2003 and present in “The World’s 50 Best Restaurants” for over 10 consecutive years. The inspiration for Max’s distinctive dishes comes from looking at the world with a childlike curiosity and sense of discovery, as well as his continuous and in-depth research of ingredients.
