Ciao a tutti e benvenuti nel mio video su Polignano a Mare, una bellissima città situata nella regione della Puglia, nel sud Italia.
Polignano a Mare è una città costiera che affaccia sul mare Adriatico e la sua posizione geografica è davvero incantevole. La città è conosciuta per la sua bellezza naturale, con acque cristalline, grotte marine, scogliere affacciate sul mare e una vista mozzafiato sulle montagne.
Il centro storico di Polignano a Mare è il cuore pulsante della città, con le sue pittoresche stradine e le case bianche dai balconi fioriti. La città è caratterizzata da una forte presenza del barocco leccese, che conferisce alle facciate delle case e degli edifici un'atmosfera unica e suggestiva.
Polignano a Mare è anche famosa per la sua cucina locale, che offre piatti tradizionali della Puglia come la burrata, i taralli, il pane e le orecchiette. Inoltre, la città è circondata da numerosi vigneti e oliveti, che producono alcuni dei migliori vini e olio d'oliva della regione.

Trattoria dall’Oste has four steak houses across Florence sourcing the best breeds of cattle from Italy and the world. Bistecca alla Fiorentina or The Florentine Steak is a thick t-bone beef cut weighing anywhere from 1kg-4kg (2lb-8lb) and typically from the Chianina breed of cattle. The steak is grilled over a wood fire until it develops a charred crust on the outside while remaining rare and juicy on the inside, then traditionally, seasoned only with salt.

According to who you talk to, there are a few rules to craft the perfect Bistecca alla Fiorentina:
● It must be eaten rare.
● The thickness is measured in fingers. To be Florentine, a steak has to be at least 3 fingers thick.
● It must be cooked using a certain wood and at a constant temperature.
● There is no sauce – the only thing added after cooking, is some salt.
● It's not supposed to be just part of a dish, this is the dish.

Le luminarie sono una tradizione molto importante nel Salento. Queste luminarie sono una vera e propria opera d'arte, realizzate da abili artigiani che utilizzano strisce di luci colorate, che vengono intrecciate e modellate a mano per creare dei veri e propri dipinti luminosi.

Le luminarie del Salento sono spesso realizzate in occasione di importanti festività religiose. Le strade dei paesi vengono trasformate in un vero e proprio spettacolo di luci e colori, dove le luminarie diventano il centro dell'attenzione.

Le forme e i soggetti delle luminarie sono molto vari, ma spesso rappresentano scene bibliche, paesaggi e personaggi della vita quotidiana. Le luminarie del Salento sono considerate tra le più belle d'Italia e attirano turisti da tutto il mondo, che vengono affascinati dalla bellezza e dalla maestria di queste opere d'arte luminose.

e ancora, Marianolight di Corigliano d’Otranto mette in scena visioni ritmiche multicolore che invitano gli spettatori a guardare attraverso una specie di Kaleidoscopio a 16 quinte speculari a scalare di circa 6/20 metri, un rosone centrale di diametro di 25 metri, 170 mila led e 66mila pixel totali;

infine, la ditta Nuova Elettro Luminarie da San Donaci, Brindisi realizza delle gigantesche cattedrali a navate.

Wine Tasting: Microcosmo (Cantine Barbera)

Microcosmo, Perricone and Nerello Mascalese.
Vineyards are complex ecosystems where plants, animals, insects and a great variety of micro-organisms live together in perfect harmony. It is a sensitive environment that any human intervention must respect, trying to adapt itself to the life of nature and striving to generate a dynamic microcosm rich of vital energy. In the vineyard of Microcosmo, Perricone lives together with Nerello Mascalese, creating a field blend of two different Sicilian varieties that are considered a single entity, where the main focus is not capturing the distinct characteristics of different grapes, but their harmony within the vineyard. In the vineyard of Microcosmo, the soil is deep and fertile and is made by clay banks that allow fresh mountain waters to flow South from the upper region of the Belice Valley. It is dark and very rich in minerals, and is able to provide the vines with all necessary nutrients that are enhanced with organic green manure once a year. Dominant breezes blow from the ocean during the day, and from the North during the night: this constant air flow cools down the temperatures during the summer and contributes to prevent humidity stagnation. The grapes are hand picked at the end of August and carefully selected after the harvest, then delivered to the winery where they are destemmed and crushed. Fermentation starts from a pied-de-cuve of indigenous yeast in huge wooden vats, where manual stirrings of the cap allows a slow natural extraction of colour and aromas with no use of oenological additives. After two weeks, the wine is pressed and completes its malolactic fermentation in wooden barrels, where it is refined for about one year with a minimum amount of sulfites. The wine is nor fined not filtered before the bottling. Like all natural wines, Microcosmo needs time to express its full aromatic potential, but is able to deliver an intense tasting experience to whom is capable to patiently wait until its complete development in the glass: a bright and intense ruby red color preludes to aromas of red ripe fruit that are typical expression of both grape varieties, and to an intense, minty fresh and saline touch that belongs to the essence of terroir. In the freshest vintages, aromatic scents of sweet bay-leaf and the finest spices enrich its complex bouquet. It is pleasant, tasty and round to the palate, and its fine though firm tannins together with a fresh acidity evolve into a long and intense aftertaste.



PALTRINIERI, Lambrusco, e le vigne

Cantina Paltrinieri is located in the heart of Sorbaro, Lambrusco territory, where the family's fourth generation of winemakers is producing one of the top Lambrusco di Sorbaro DOC wines. We are taken on a tour through the vineyards and winery.

Alberto starts with explaining that when you use mechanical equipment in the vineyard, you'll not only have to design your vineyard in such a way that it benefits from the equipment being used, but that you'll also have to maintain it appropriately for an optimal result. For example: machines cannot think so they will not recognize an unhealthy vine.

Harvesting by hand, depending on the vineyard, is not always in its favor. It is important for the grapes to be processed as quickly as possible after being harvested, because deterioration starts as soon as you separate the grapes from the vine. If your vineyard is too far away from your cantina, and/or the crates of grapes are too heavy, it will effect the quality of the grapes negatively by the time they start the vinification process. Alberto is very conscious about managing his loads wisely during harvest.

The soil at Paltrinieri is lime and sandy, very crumbly and fertile. It is well drained, forcing the roots to grow very deep to dig for water, which is good for the quality of the grapes.

The old part of the winery is build by Alberto's grandfather in the 20s. They got rid of his grandfather's oak barrels about 40 years ago, but they kept and still use the cement ones as they are in great form and complementary to the wine.

Maceration (skin contact) helps their wines not just by extracting color, but also evolving it by giving it body, complexity and by developing aromas and flavors.

Their Lambrusco di Sorbara, like any Lambrusco, is not a wine to be aged, it's ready to be drunk now, young and fresh.

The Paltrinieri Lambruscos undergo their second fermentation on the bottle, which explains its richness. Recently, this method of leaving the yeast in (touch with) the wine has become very fashionable again, it's also known as 'sur lie'.

The Paltrinieri Lambruscos ferment all their sugars, creating dry wines without any residual sugars. Historically, Lambrusco is used to be a bit more sweet, partially because the acidity was lower. Sorbara, instead, has a naturally high acidity, creating beautiful dry, acidic, high quality and sophisticated Lambruscos.

Infatti, come nei giorni che precedettero il diluvio mangiavano e bevevano, prendevano moglie e prendevano marito, fino al giorno in cui Noè entrò nell'arca, e non si accorsero di nulla finché venne il diluvio e travolse tutti: così sarà anche la venuta del Figlio dell'uomo. Allora due uomini saranno nel campo: uno verrà portato via e l'altro lasciato. Due donne macineranno alla mola: una verrà portata via e l'altra lasciata.
Vegliate dunque, perché non sapete in quale giorno il Signore vostro verrà. Cercate di capire questo: se il padrone di casa sapesse a quale ora della notte viene il ladro, veglierebbe e non si lascerebbe scassinare la casa. Perciò anche voi tenetevi pronti perché, nell'ora che non immaginate, viene il Figlio dell'uomo».

Giuseppe Soini presenta le iniziative di Vinitaly 2012

Cormòns: insieme ad oltre duecento viticoltori Vi diamo il benvenuto nel cuore d'Europa, all'estremo lembo nord orientale d'Italia, in quel Friuli - Venezia Giulia dalle zone vitivinicole più pregiate del mondo.

Vi invitiamo a conoscere la Cantina Produttori Cormòns, nata alla fine degli anni Sessanta per la lungimiranza di alcuni viticoltori cormonesi, che hanno voluto fare tesoro di tradizioni secolari. Ezio Dalla Pozza, Aldo Moretti, Adriano Drius: Presidenti appassionati che, insieme al Maestro di Cantina Luigi Soini, sostennero da principio che il futuro della vite e del vino non era legato ad effimere mode, ma alla tenace valorizzazione del proprio territorio.
