Ricotta is a very versatile cheese that can be eaten in very different ways. And, technically speaking, it’s not even really a cheese, because it comes from the liquid whey when the milk is curdled. Bigger dairies that make cheese often consider liquid whey just a leftover product and use it to feed livestock or even discard it.

But for smaller, local dairies here in Italy, it is a great opportunity to optimize their resources and get something great out of them. We visited a dairy in the town of Locorotondo, Italy, where cheesemaker Giovanni Montanaro transformed liquid whey into ricotta.

Hey guys, Samuel and Audrey here, and today we’re taking you on a massive food tour of the beautiful seaside city of Halifax, Nova Scotia!

This summer, we had the chance to spend a week exploring Halifax in partnership with Tourism Nova Scotia and the cuisine was a real highlight.

Our quest for a taste of the Maritimes led us to all sorts of restaurants, breweries, distilleries, pubs and outdoor patios, and we’re going to be sharing them all in this video. We’ll dive into the seafood scene with dishes ranging from lobster roll to risotto with scallops, and seafood linguini to fusion maki rolls.

We’ll taste the beloved Halifax donair, which is the city’s must-try dish and a great street food snack. We’ll also visit a few different craft breweries, go on a sunset wine cruise, and do a spirit tasting inside the citadel.

1. The Mothers of All: Pasta & Pizza – but what and where to eat?

One should not miss out on feasting on pasta and pizza, the two iconic traditional Italian dishes during their vacation.

Pasta types vary significantly depending where you go in Italy. Be sure to try the regional specialties in the cities that you are visiting. If you are exploring beautiful Rome, order a serving of the pasta alla carbonara, prepared with ingredients such as eggs, Pecorino cheese, guanciale (a type of Italian cured meat made from pork cheeks) and black pepper.

2. Arancini

Crisp and golden brown, arancini refers to a dish of stuffed rice balls. The rice balls are fried after being coated in a dusting of crunchy breadcrumbs.

These rice balls are usually filled with ragù, tomato sauce, mozzarella and peas. Similar to pasta and pizza dishes in Italy, there are a diversity of regional variations of the arancini. The regional specialties are made with different fillings and shapes depending on the location that the dish is prepared in.

3. Lasagne
Believed to have originated from the city of Naples, this well-loved and yet another classic Italian dish is made by baking sheets of lasagne pasta layered with cheese, ground meat, vegetables and different varieties of sauces, such as the ragù, bechamel or tomato sauce. This dish should definitely not be missed out on if you want to have a taste of true Italian cuisine.

4. Osso buco alla Milanese

Meat lovers will rejoice at the thought of tucking into the osso buco alla Milanese!

Tender veal shanks, braised slowly in white wine, is served with an array of vegetables. A serving of aromatic gremolata, a condiment made with lemon zest, garlic and parsley, is added to complete the dish.

5. Prosciutto

An Italian favourite, prosciutto refers to dry-cured ham, served uncooked and cut in thin slices. The finest and priciest prosciutto originates from the central and northern regions of Italy.

Light, savoury and airy, the cured meat is usually served with pasta, or wrapped around slices of cheese or sweet melons.

6. Ribollita

Traditionally considered as cucina povera, or poor man’s food, the ribollita was created by servants who collected unfinished food, such as bread and vegetables, from their masters before boiling these items in water to make a meal. The origin of this dish gives rise to its name, which translates to mean ‘reboiled’ in English.

Rich and hearty, the ribollita is regarded as one of Tuscany’s most important dishes.

7. Saltimbocca

The dish contains thin slices of veal, topped with salty prosciutto and herb leaves. These ingredients, joined together with a toothpick, are sautéed in a pan until the meat is done. Different varieties of meat, such as chicken and mutton are also used for preparing the saltimbocca.

A well-made serving of saltimbocca promises to be a delectable dish melts away in the mouth. Highly popular among locals and travellers in Italy, this savoury delight is certainly not to be missed.

8. Gelato
A visit to Italy is not complete without having at least a serving of smooth, creamy gelato. Travelers who are on the hunt for the best versions of this delightful treat should check this article out for insights on where to find the best gelato in Italy.

9. Torrone

Creamy and sticky, the Torrone is made with ingredients such as honey, egg whites, toasted nuts and citrus zest. Thick slabs of this candy are commonly found in cafes and candy stores throughout Italy.

This municipality had many names before the present one. Initially it was called Casale San Giorgio (in honor of the patron saint), then Casale Rotondo, later Luogorotondo (rounded site) and only in 1834 was it called Locorotondo.

The toponym recalls the characteristic shape of the historic center, a set of small white houses arranged in concentric rings. Another hypothesis derives the name from the late Latin Locus Rotundus, round place.

The birth of the municipality of Locorotondo dates back to around the year 1000; located in ancient times at the foot of the hill, later at the top, Locorotondo was enlarged after a miracle by St. George the Martyr, so the devotion of the people had a chapel built for the saint, who towards the beginning of the 17th century was proclaimed patron of the town.

After the Napoleonic period, the people needed a new larger church, so above the rubble of the chapel of San Giorgio the majestic *mother church* was built by the will of the lord benefactor Vitantonio Montanaro, also dedicated to the Patron Saint and to the Madonna della Greca.

Abandoned 1400s Franciscan Monastery / Urbex Lost Places Italy

Franciscan Monks first built this place in the 15th century, later in the 17th century the place was enlarged. The Church was remodeled in the 18th century. Not sure when it was abandoned but it has to be quite a while.

Genova / Genua ist eine italienische Hafenstadt und Hauptstadt der nordwestlichen Region Ligurien. Die Stadt ist für ihre jahrhundertelange zentrale Rolle im Seehandel bekannt. Enge Gassen führen zu Plätzen wie der Piazza de Ferrari mit einem berühmten Brunnen aus Bronze und der Oper Teatro Carlo Felice.

PREGGIO - Umbria - Italy

Preggio is one of the most scenic hilltop hamlets in Italy. This historic little settlement has protected remains of Etruscan walls dating to the 4th century BC.
Close to the cities of Umbertide and Perugia, where there's an international airport, it is incredibly well connected yet feels incredibly remote. At night, all you'll hear are the birds and the odd dog barking down in the valley. In cooler times you'll see smoke from chimneys and in summer, you have the most beautiful low lying clouds in the morning before the day warms up.

Cars are seldom seen let alone heard and life here is quiet, and traditional. There's just one small restaurant and shop, which also plays the role of the village bar. Olive trees and cacti are common, and the light here, as you can see in this short film, is nothing short of spectacular.

Nearby you also have the forth largest lake in Italy, Lake Trasimeno, with its picturesque lake side settlements, islands and of course plenty of excellent places to eat and drink.

Cima Caldoline Gruppo Maniva/Dosso Alto

Dal Giogo del Maniva tra la Valle del Caffaro, il Lago d'Idro si sviluppano una serie di montagne modeste (solo due cime superano i 2000m Corna Blacca e Dosso Alto salite più volte) composte da rocce dolomitiche e calcaree che ne è valso l'appellativo di Piccole Dolomiti Bresciane. Ci si arriva da Collio, Marmentino per la Val Trompia, da Anfo e Idro per la Val Sabbia e da Bagolino Valle del Caffaro. Da sempre il Giogo/Passo del Maniva è un'importante via di comunicazione tra Centro Europa e Italia. Da qui passarano Federico Barbarossa nel 1162, la Serenissima nel 1500 difendeva i confini dagli Asburgo, sul finire del 1800 i Garibaldini presero posizione contro le truppe austriache. Nel 1915 fu occupato dalle truppe italiane che vi sistemarono la linea difensiva, fu costruita la strada con li Passo di Marè impresa viabilistica notevole. Oggi è crocevia importante tra Anfo, Bagolino, San Colombano, Passo Crocedomini, detta STRADA delle 3 Valli. Panoramicissima da fare in moto o auto adatte.
Con mio papà saliamo dalla Val Trompia, arrivando al Passo del Maniva dove parcheggiamo. Prendiamo quindi il sentiero che ci porta al Passo Dosso Alto , mezz'ora circa. Dal Passo Dosso Alto 1727 raggiungiamo in 10 minuti il Passo delle Portole 1726. A sinistra è già visibile la Capanna Tita Secchi. Incastonata sotto una roccia particolare a forma di naso (naso di Caldoline) si trova la lapide che ricorda il partigiano Tita Secchi, catturato in zona e fucilato dai nazi-fascisti a Brescia. Il sentiero ci porta comodamente alla Capanna Tita Secchi punto di valico per la Val Sabbia tramite sentiero è possibile arrivare alla Regina delle Piccole Dolomiti Bresciane: la Corna Blacca. Ora per la Cima di Caldoline, senza un vero percorso segnato...si sale ove il pendio è più agevole, tra mughi e rododendri, si riesce con caparbietà ad arrivare alla cima più elevata, quella di destra, come in foto 1842m. Nello scendere, ritorniamo alla Capanna Tita Secchi, dove cerco di capire se il Sentiero Attrezzato dei Mughi, sia ancora percorribile, purtroppo no, è abbandonato da anni e privo di qualsiasi cavo di sicurezza,oltre che con rocce totalmente instabili. Bella la leggenda trovata su Cima Caldoline: tra la principessa Manuela ed un giovane montanaro...
