Liebe Gäste!
Die Familie Baumgartner möchte sich hier gerne bei Ihnen vorstellen. Wie so oft gibt es auch bei uns zwei Generationen: die Seniors und die Juniors mit ihren zwei Buben.
Der Name Schimmelbauer ist unser sogenannter Vulgoname und kommt daher, dass es in Guntramsdorf früher mehrere Familien mit dem Namen Baumgartner gab, üblicher weise hatte jede Familie ihren eigenen Spitznamen. Unserer rührt daher, dass die Groß- und Urgroßeltern weiße Pferde, Schimmeln eben, hatten. Daher hören wir auch heute noch gerne auf den Namen Schimmelbauer.
Nun aber kurz unsere Namen, beginnend mit den Seniors: Hans, Fritzi, Johann, Kristina mit ihren beiden kleinen Schimmeln Alexander und Andre.
Wir bewirtschaften in unserem Betrieb ca. 6,50 ha Weingärten, die sich im Familienbesitz befinden und ausschließlich von der Familie bearbeitet werden. Davon liegen 4 ha im Weinbaugebiet Weinstraße Thermenregion überwiegend in der Gemeinde Guntramsdorf sowie in Gumpoldskirchen. 2,50 ha bewirtschaften wir im Weinbaugebiet Neusiedlersee Hügelland in St. Margarethen im Burgenland.
In der Thermenregion wachsen die Sorten Rotgipfler, Neuburger, Weißburgunder, Chardonay Rheinriesling, Sauvignon blanc und Blauer Portugieser. In St. Margarethen gedeihen der Grüne Veltliner, Welschriesling und die beiden Rotweinsorten Blaufränkisch und Zweigelt bestens.
Um den Geschmack unserer anspruchsvollen Gäste zu treffen , gibt es unsere Weine natürlich in den verschiedensten Ausbaustufen. Soweit der Weinbau.
Unsere Weine werden im Buschenschank und Gassenverkauf vermarktet, kleinere Mengen auch in der Gastronomie.
Nun zum Heurigen. In unserem wunderschönen, gemütlichen Lokal, das 1997 neu eröffnet wurde, bieten wir außer unseren ausgezeichneten Eigenbauweinen auch kulinarische Schmankerl aus der Region an, wobei uns die örtlichen Bauern und Gewerbebetriebe mit ihren ausgewählten und köstlichen Waren beliefern.
Das Speiseangebot richtet sich hauptsächlich nach der Saison, wobei wir natürlich auf die üblichen Köstlichkeiten nicht verzichten. Das kalte Buffet mit einem reichhaltigen Käseangebot, verschiedensten Salaten und selbstgemachten Aufstrichen fehlt ebenso nicht.
Den krönenden Abschluss des gemütlichen Heurigenbesuches können wir uns mit unseren hausgemachten Mehlspeisen gut vorstellen. Eventuell darf auch ein kleines Stamperl, ebenfalls aus den eigenen Reben hergestellt, nicht fehlen. Und für besondere Feinspitze gibt es seit 2006 handgeschöpfte Schimmelbauer-Schokolade in den Geschmacksrichtungen Neuburger und Zweigelt.
