Ecuador is affordable, and the lifestyle you can have on a typical Social Security check of $1,500 a month is very attractive. Budgets vary, and many live in Cuenca Ecuador on much less than $1,500 and others far exceed $1,500. We've met people living on under $1,000 while we've been here, so that is a possibility.

Ecuador Road Trip: CUENCA to GUALAQUIZA in the Amazon

I love our Ecuador road trips because they always surprise me and this one from Cuenca to the Amazon was everything and nothing like I expected.

I'm calling this southern Amazon road trip a light Amazon trip as we're not doing anything crazy. We're sticking to the towns to see what they are like. Gualaquiza is the largest town in the Morona Santiago province and is mostly generations down of Cuencanos who moved here 60 years ago. I think traveling in this part of the Amazon may surprise you.

CUENCA Ecuador Tour with a Local! | ECUADOR Travel Guide

Walking tour of Cuenca Ecuador considered the most beautiful city in Ecuador. I'm spending the day with my friend Andres, a tour guide who knows the best things to do in Cuenca.

Many people retire in Cuenca Ecuador, there are lots of Expats. But it isn't a gringo town, it's a colonial city with lots of Ecuadorian culture, history and heritage...and known to have the best food in Ecuador.

We stopped at the corte de justicia or the justice court then el Seminario San Luis which is at one point it was where you would study to become a priest and is now really a court of a bunch of different restaurants, most of them are international and so I wasn't really keen to have breakfast there.

Instead I tried Angelus which is a very local spot right on the main square. Normally when you kind of go to a restaurant on the main square, you think it's super touristy but really this is all like Ecuadorians coming here. I got mote pillo and I am first with, like, oh my gawd, there's some kind of crazy cheese in here, but no, not at all.

When you come to Ecuador and you have the eggs, you will notice that the yolks here are so orange and bright and that's because you're probably going to be having free range eggs. Mote pillo is a classic Ecuadorian breakfast with hominy, eggs and cheese.

We also visited both the New Cathedral in Ecuador which is home to stained glass by an Indigenous Artist and climbed to the top of the Cathedral for $1.

At El Monasterio del Carmen, or the Carmen Monastery 12 nuns live here cloistered. There are actually two cloistered monasteries in Cuenca, but only a handful left in all of Latin America. And nuns come in here. And they never leave. They dedicate their lives to being inside the monastery for their life. They are famous for agua de pitimas, and pitimas means more please. It's made with herbs and flower petals for 50 cents

This is supposed to cure a number of things from insomnia to stomach problems to if you have skin problems. I've had this before because I had dry skin coming to this like very arid Andes.

Homero Ortega is a luxury Panama Hat museum and shop. They had people who are very famous from Ben Affleck to Johnny Depp. Hats here can cost up to $2500 but are sold for three times that outside Ecuador.

Lunch outside Cuenca in the San Joaquin neighbourhood at Cristol del Consuelo. We got the Bandeja Cristo del Consuelo which has a number of different kinds of meat, some sides, some avocado.
The Turi bus takes you on a tour of Cuenca to the Mirador or lookoff. It is only $5. Once there they offer you a glass of canelazo. But we did not follow the group.

We came up to the very top to the bar cafeteria restaurante La Colina. Canelazo is an alcoholic drink made with aguardiente, very typical drink in the Andes with aguardiente, an unaged sugarcane alcohol and they mix it with naranjilla fruit cinnamon and sugar. Everyone, again has their own recipe.

HUECAS! Best Restaurants in CUENCA Ecuador on a Budget

Some of the best restaurants in Cuenca Ecuador are huecas. These little hole in the wall restaurants serve traditional Ecuadorian food, open after 5pm and have killer aji.

Here are 7 huecas in Cuenca that you'll want to try (addresses below!).

At the Los Sandwiches de Doña Piedad you can try a pernil sandwich. It's made similar to hornado where it's a slow roasted pork. It comes in a simple white bun and of course you have some aji and coco drink for $2.60.

One pernil sandwich isn't enough so go to El Vecino, which means neighbour. This family run spot has been around for generations. The aji they use is different. It's a cream base. This one is $1.50. It's really good. Worth trying both.

Huecas are all about eating traditional food in Cuenca. But did you know hot dogs are considered traditional and super popular in Cuenca. La Tropical been around for 53 years and I'm actually at the very first location, which is called Dispensa Tropical.

They're only a dollar and they do it a little bit differently. It's actually a chicken hot dog cooked on like a rotisserie served with mayonnaise and pickled onions.

One of the most popular street vendors in the city is now one of the best restaurants in Cuenca, Las Piezas del Maño. This guy is known all over the city, everyone knows him and that's because he first started as a food truck outside of the university. And he's famous for his hot dogs, for two reasons, one, because they always have a second meaning.
In fact, his name means Maño’s Wieners and how he names his hot dogs: big weiner, little weiner etc.

So the hot dogs are actually steamed alongside the onion and tomato and then topped with mayonnaise, mustard, ketchup. This and a coco drink is $1.50.

The last hot dog restaurant has an English name “My Favorite Dog”, but everyone here calls it La Ventanita. It's a steamed hot dog with shredded cured meat on top of it along with onion, mustard, mayonnaise. Ecuadorians don't like to stand in line, but they do here.

Soda Margarita is known for two things: Salchipapas and secos. Secos have quite an interesting story, and it comes from the fact that at lunch in Ecuador, you have almuerzo, it’s a set lunch. And there were two different courses, but in Guayaquil it was very hot. And so when the British came here, they didn't want to have a hot soup to start their lunch.

They only wanted the second course. Not knowing Spanish they just kept saying second but Ecuadorians not knowing English thought...didn't know what they And thought they were saying seco. And so this dish is far from dry, which is what seco means.

Pinchos in northern Ecuador are called chuzos here. Chuzos Alexandrita is in southern Cuenca. The only restaurant that is not in Cuenca's historic district. I wanted to try molleja or chicken heart. You can also get chicken feet called pata, chicken neck, choclo con queso, paisa etc.

Snails, Beetles + the Best Hornado in OTAVALO Imbabura | Ecuador

The Otavalo market in Imbabura Ecuador is world famous, but don't leave without traditional Ecuadorian food like catzos, churos and the best hornado in Ecuador.

The Imbabura Province just outside Quito Ecuador is home to the most famous markets in Ecuador - Otavalo. Most people only come on Saturday, shop the artisanal market and leave.

But there's more than just the fabulous market. In fact I spent most of it in the food market! In the video we share with you

Catzos: white beetles
Churos: snails
Jugo de Sabila: Aloe juice
Chaulafán Otavaleño: epic Ecuadorian rice and noodle dish
Hornado with morcilla: epic roasted pork with sausage and llapingachos (potato cakes), mote (hominy) and encurtido .

Cuenca Day Trip to the Artisanal Villages of Gualaceo Chordeleg Sigsig | ECUADOR

Andres takes me on one of his most popular tours from Cuenca to the artisanal villages of Gualaceo, Sigsig, Chordeleg and San Bartholome.

In San Bartholome we stopped at one of the famous guitar makers. They make everything by hand and it was so impressive.

We moved onto Sigsig for breakfast, then went to buy Panama Hats from a collective. You can find Panama Hats everywhere but Sigsig is known to have some of the best weavers and also the best deals.

We moved onto Chobshi to walk to a waterfall.

Then onto Chordeleg, known for its artisanal jewelry makers with the filigree and also really interesting ceramics. I tried craft beer in the squre and sugarcane juice called guaro.

And we ended it with one of my favourite towns in Ecuador. Gualaceo should be a UNESCO World Heritage Site for food, they really maintain the traditional cuisine. We had lunch at the Mercado 25 de junio and then traditional tortillas of maiz, choclo and wheat.

And then onto one of the best hornados in Ecuador with pepa de sambo aji.

Finally Casa Museo de la Makana is one of the last textile makers using traditional Inca and Cañari techniques. The signature textile is the makana shawl. During the colonial period this was one of the most important pieces to wear for special occasions in the province. You can still see people wearing this traditional piece today.

And of course, they apply the use of the Makana. That texture is so important to the culture even today his son also creates streetwear using the Makana fabrics. So this is one of the designs. It takes 15 days to make, all by hand, including this part, which is all embroidered. And it's only $80. And look at all of the colors, the colors all made by hand as well.

The Jimenez family has been preserving this forgotten craft for generations. Everything is handmade from counting the thread, dying it with natural plants and weaving into fabric. This is a must visit in Gualaceo.

EATING CUY in Ecuador - What Does Guinea Pig Taste Like ???????? Ecuadorian Food

The best guinea pig in Ecuador. It's not in Quito Baños or Cuenca. The best cuy in Ecuador is Gualaceo, which is 30 minutes outside Cuenca.

At Mercado 25 de Junio at stall CA01 Mrs. Rosario sells a small one here for $10. She also sells roast chicken. Nothing else. She’s the only one here that still wears the Ecuadorian traditional dress. The pollera skirt. So you can pick her out immediately.

he doesn't do the sides. But fortunately, right next to her are Maria and Narcissa and they have all the sides like potatoes cooked in a pepa de sambo sauce which is a pumpkin seed aji, mote and chulpi, which is a type of corn with fava beans.

She cooks guinea pig to order. Tell her what size you want she gives you the price. It took about 25 minutes for us to get this cuy.

Cuy is one of the most traditional Ecuadorian foods. It was considered to be a gift from the gods by the Inca and Cañari people. And today Ecuadorians have still held that tradition.

It is revered as something that you have at a special occasion. It might be a baptism, it might be someone graduating from college. But also sometimes families will come here, and have cuy together.

Maybe eating guinea pig is difficult if you had one as a child. However, this is not the same kind of guinea pig and instead the size of a rabbit.

What does guinea pig taste like? Well it mostly tastes like chicken thighs with just a touch of rabbit. Yes guinea pig tastes like chicken.

I've eaten cuy in Ecuador before roasted over charcoal. I've also eaten cuy in Peru where it was deep fried guinea pig but I found it a bit greasy.

Mrs.Rosario's cuy recipe is easy. She marinates this only in garlic and salt and then bastes it with achiote oil.

It is so good I really do believe the best guinea pig in Ecuador is in Gualaceo.

We discovered there are lots of awesome things to do in Cuenca, Ecuador, and in this video we bring you around the city and show you our favourite things to do in Cuenca in one day! The city is really easy to navigate and is full of beautiful colours, cafes, and museums. There is no shortage of places to visit and things to see, so in this video we visit as many as we can in one day (plus a little extra, but we explain that in the video).

We start off by getting Mico a traditional limpia which he says hurt a little but also felt refreshing, and then we show you around la Catedral de la Inmaculada Concepcion (the Cathedral of Immaculate Conception), the flower market, Mercado 10 de Agosto, a Panama hat shop, and Pumapungo Museum to see the shrunken heads, all while eating delicious food along the way!
