BACOLOD, PHILIPPINES - Welcome to Bacolod, one of the food capitals of the Philippines! They are known for a few speciality foods, but probably the most famous, and a food you’ll find all over the Philippines is chicken inasal - a unique style of barbecue chicken! Today we’re going on an ultimate bbq tour in Bacolod, and we’re going to uncover the secret as to why it’s so good!

The Bacolod Food Hunters ( - Huge thank you to Martin and the team from The Bacolod Food Hunters for taking me around in Bacolod and for showing me some of the best places to eat bbq!

Here are the locations and the places we ate in this video:

Aida's Chicken ( - We’re starting at Manokan Country, probably the most famous place in Bacolod for chicken inasal, and it’s really so incredibly iconic. There are a few dozen places to choose from, but Martin recommended Aida’s as one of the local favorites. We were lucky to get into the kitchen to see the grilling action, and it’s some of the most exciting grill action you’ll see! One of the secrets of chicken inasal, along with all the marinade, is the continual basting of chicken oil and anatto as its being grilled. This keeps the chicken juicy and moist, and when you eat it, you eat more chicken oil in the rice.
Total price - 687 PHP ($12.53) for everything.

Chai Rose Barbecue ( - To continue this Filipino food tour we went to another legendary bbq spot on Bacolod known as Chai Rose Barbecue. They have insasal as well, but their speciality is pork bbq skewers. The taste is sweet and salty and it goes great along with chicken oil rice as well.

Silay City BBQ - We continued on to a small Filipino barbecue stall under a tree in Silay City. The family was so friendly and welcoming, and they have the full bbq spread of about 20 different skewers to choose from. The bbq was hot and delicious and especially good with Aunty’s homemade chili vinegar.
Total price - 170 PHP ($3.10)

Man Plaza - Finally to complete this Filipino street food tour of barbecue and inasal in Bacolod we went to one more legendary place - a place that’s frequented by local students in the area - Man Plaza. It’s an entire bbq plaza all under one roof with about a dozen stalls to choose from. We chose a place called Royam’s. Expect plenty of smoke and friendly people!

Hawaiian Smoke Meat Recipe Food Fiend Style | Smoke Meat Kim Chee Fried Rice

As requested, I did a cooking video. I am showing you how to do Hawaiian style smoke meat. The recipe is below. You can use a Weber grill or an electric smoker.

Marinade:

1 cup shoyu (Aloha Shoyu is preferred but any will do)
2 cups water
2 cups sugar
1-2 Hawaiian chili pepper (I used a small sliver of Ghost Pepper)
3 big slices of ginger bruised with a knife
10 cloves of garlic finely minced
3lbs pork butt

Put all ingredients in a sauce pan and simmer on medium heat until sugar melts. Then let it cool down to room temperature.

Slice pork butt length wise at 2 inch thickness. Lightly salt and pepper the slices. Once your marinade is at room temperature double bag gallon Ziploc bags to ensure it doesn't leak. Put sliced pork in bag and pour cooled down marinade in bag. Put in the refrigerator for 1 day minimum. 2 days is optimal. Flip bag every 12 hours.

Use kiawe and guava wood. Equal parts. If you don't have kiawe, use mesquite wood and a fruit wood such as apple, or cherry. If using mesquite, use less than the fruit wood as it is stronger than kiawe wood and may be overwhelming. If using an electric or propane smoker, cut guava and kiawe into small pieces and put equal amounts of each in smoker pan until full. I used an axe and electric saw for the kiawe. If using a Weber grill with coals, cut into 3-4 inch big chunks. If you can't find chunked wood, use wood chips. I do not soak my wood or wood chips. If using wood chips use a big handful for each wood for each hour (for Weber only).

For an electric/propane or Trager type grill smoke for about 3-4 hours at 225 degrees Fahrenheit. Add wood/pellets every hour.

For a Weber type grill, I do not measure temperature. Just be sure to place a charcoal halfway to dome of grill on one side and put the meat on the side of the grill that has no coals. Add wood chunks or chips every hour. Usually it is done in 2-3 hours. If using a meat thermometer it is usually a rule that at 170-180 it is well done. Open top and bottom vents.

Fried Rice:

Sautee half an onion and 2-3 cloves of garlic in olive oil until halfway cooked. Add about a cup of diced smoked meat. Push to other side of pan. Add 2 eggs and scrambled until done. Incorporate all ingredients together. Add 1/4 cup diced kim chee. Add 2 cups of cooked white rice. Mix together. Add salt and pepper to taste. MSG if you wish. You can add shoyu or oyster sauce but I find that salty in this particular fried rice as the smoked meat and kim chee are already salty. Garnish with green onions.

Year of Love: Cook Like a Chamorro - Beef Tinaktak

This is the first part of our Cook Like a Chamorro Series!

Of all the elements that make Guam a unique destination, the delicious local cuisine is one of the pillars. Chamorro cuisine is a melting pot of bold flavors that infuses native tradition with Pacific Island, Spanish, and Asian influences.

Food has always been at the heart of Chamorro culture and the people of Guam are known for their love of getting together and sharing good food. Red rice, chicken kelaguen and barbecue are some of the superstars of Chamorro cuisine, but there are many other dishes that locals grew up with and remind them of home.

One of those dishes is beef tinaktak (ground beef in coconut milk). It is a local comfort dish that is easy to prepare at home.
